What is in your "massive salad" ?

I'm looking for inspiration for my lunch salads as I've gotten into a bit of a rut.

I'll go first, today I had: chicken breast, salad leaves, grated carrot, tomato, radish, spring onion, beetroot and grated cheese

Falafel, red pepper hummus, cous cous carrots, red pepper, little gem, cucumber, radish and celery. Lasts me 3 days. Some great ideas here

Pyri I'm sorry, but you have two cherry tomatoes EVERY DAY? Why not just lick sugar off a teaspoon? No wonder there's an obesity epidemic.

Little gem, cucumber, mozzarella, salami, chickpeas, walnuts, tomatoes, basil leaves and red wine vinegar and Dijon mustard dressing. And some leftover crushed new potatoes and peas today. Fucking yum.

when I used to have massive salads it used to be the main salad bits (lettuce, tomatoes etc) but with a big dollop of cottage cheese, plus either a handful of cooked pasta or rice. add interest with stuffed olives and or sundried tomatoes in oil.

I'd also sometimes have a slim a soup.

I have spinach, tomatoes, bell pepper, red onion and avocado and a little goats cheese, with balsamic. Not very exciting!

Oh god, do you think it’s too much? I’m always so full that maybe I am being a bit greedy, could cut down to 1 and still be full for the rest of the day probably!

@CorneliusVetch - same as you - serving bowl. I forgot about ham/chicken, pulses etc but as moreorless veggie now I add the Quorn etc options of those.

Eating mine now! Avocado, red onion, cherry toms, cucumber, black beans, sweet corn, rocket. With lots of dressing. My absolute favourite

@Crumbleburntbits - I used to have soup every day with bread with no spread/butter on it and fruit. My cheat days included a meat pie with mash and gravy when EAT used to be around! Or sausage in batter with chips.

Either tuna, hard boiled egg, green beans, black olives, lettuce, cue, tom, New potatoes, dressing
Or Prawns, Seafood sauce, corn, cue, tom, lettuce, pasta, grated carrot
Just normal size not massive/man versus food size

My thought process goes something like this:

One of: potato, pasta, rice, couscous, barley, lentils, other grains

One of: meat/poultry (chicken, ham, beef, pork, turkey - often left over from previous night's dinner)); fish (tuna/mackerel/sardines) Alternatively cheese/cottage cheese or egg (boiled/frittata)
A mix of veg, usually 3-4 of the following: greens(lettuce, spinach or rocket); tomato; cucumber; radish; peppers; spring onions; celery; sweetcorn; cooked asparagus; cooked green beans; grated raw carrot or chopped cooked; beetroot; olives

Something 'wet' - mayo or dressing packed separately; humus; coleslaw; potato or Russian salad

I can heartily recommend a Glasgow salad if you need filled up. You most likely won’t even need a massive one.

I don't bother with lettuce leaves any more as I find them a waste of time nutritionally. I prefer crunchy celery and cucumber sticks or the same chopped up small with some cooked, cooled asparagus - so 3 x portions of greens, then I usually add some protein elements, so I have the sticks on the side of something like Rye bread with hot smoked salmon and egg mayonnaise, or have some chopped up crab sticks and mayonnaise on top of the chopped up greens in a bowl.

To build a filling salad I choose 3/4 portions of veg and two elements of protein. I don't eat meat so mine tend to be oily fish/prawns/cheese/avocado/beans/pulses.

Red onion
Cucumber
Avocado
Chickpeas

NO dressing because she’s a monster Grin

I skipped the avocado, and had a glug of olive oil and lemon juice.

Spinach, red onion, cucumber, tomatoes, celery, peppers, grated carrot, then I squeeze half a lemon, 1/2tablespoon of olive oil grate some cheese, salt and pepper, put the lid on my salad bowl and shake it all so its evenly coated in olive oil and lemon juice.

I usually serve this with chicken, fish or steak

I’ve just got back from the USA. I found the food there pretty boring, but to be fair the salads were great. I’ve been trying to recreate them. Base of:

Shredded iceberg or romaine
Beansprouts
Shredded red cabbage
Grated carrots
Red or spring onion thinly sliced
Cucumber
Radish
Thinly sliced mangetout

I just cut up whatever I have of that lot. Then I add some of the following:
Breaded chicken breast
Poached chicken breast
Nuts / seeds
Cheese
Avocado
Prawns
Steak strips
Deep fried rice noodles
Halloumi

Then a banging dressing. Latest favourite is an Asian style one made of:
Soy sauce
Sesame oil
Hoisin sauce
Rice wine vinegar

V nice.
