What is in your "massive salad" ?

I'm looking for inspiration for my lunch salads as I've gotten into a bit of a rut.

I'll go first, today I had: chicken breast, salad leaves, grated carrot, tomato, radish, spring onion, beetroot and grated cheese

I always go a bit Harvester restaurant with my salads and add things like pineapple, bacon bits, raisins and I've even been known to add strawberries.

Boiled egg, red onion, lettuce leaves, tomatoes, cucumber, grated cheese, olives, grated carrot, sweetcorn, beetroot and ripped up ham. Olive oil and vinegary dressing.

My favourite salad is lettuce, cucumber, celery, feta, sun dried tomatoes, hummus and pumpkin seeds.
I also like roasted Mediterranean vegetables with giant couscous.
Before I was vegetarian I used to love a basic lettuce, tomato, cucumber, ham and egg salad.

Loving the suggestions. How big are your salads and how long do they fill you up for? I'm always hungry even after eating porridge. I must have worms 😅

Julienne potatoes toasted in vegetable oil with a dressing of sea salt and a spiced tomato sauce.

Leaves, cucumber, cherry tomatoes, tuna, any colour pepper except green, beetroot, spring onion, honey mustard dressing and lots of seeds. Plus maybe a bit of blue cheese crumbled on top.

Mine is usually avocado, some kind of leaves, grated carrots, red onion, sweetcorn, and basil tossed in olive and avocado oil and salt. With protein on the side, today it's going to be left over roast duck. Never with celery or cucumber as they are revolting.

Similar salad to yours OP, but I made some garlic dressing yesterday by roasting a whole garlic, squeezing out the white pulp and stirring it in some almond yoghurt. Tastes amazing with chicken + sweetcorn, cucumber, tomato, avo, radish and leaves - different from mayo.

Saving this thread as I often get bored of salads and lose inspiration. I do like some fruit in my salad, apple slaw is good. Grated carrot is a must too, no to celery 🤢 and no to Avocado.

Absolute game changer for salads is roasting broccoli with garlic and chilli, then adding that to pretty much any salad.

I’m just roasting sweet potato (on its own) and chickpeas in harissa paste for a salad tomorrow. Will add leaves, toms etc, then feta and pickled red onion. It’s delicious! And def the fanciest salad I make - am usually leaves/Tom/cucumber kind of girl!
This sounds absolutely gorgeous.

Salad leaves, home made potato salad, pine nuts, cauliflower florets, home made coleslaw, chilli beetroot, diagonally cut spring onions then sprinkled with a strong cheddar cheese. I then pour on balsamic glaze and Olive oil before I eat it. So tasty and filling.

My favourite salad is
Spinach
Celery
Cucumber
Radish
Cherry tomatoes
Spring onions
Pickled red onions
home made chicken tikka
Cumin roasted sweet potato
Few blobs of red lentil daal
Mango chutney
Mint yoghurt
And papadums sprinkled on top

My friends come over for lunch once a month and ask for this every time!!

Pickled egg, cheddar, cucumber, tomatoes, carrots in sesame oil with sultanas, bread and butter. Sometimes tuna instead of the egg. Or pickled watermelon rinds are nice and crispy. I like a spam salad too.

I’m another one who loves a massive salad!

Lettuce, tomatoes, cucumber, celery, abit of red onion, red pepper, grated red cabbage, some feta crumbled in, abit of pasta, some pine nuts, a little bit of olive oil/lemon/mustard for the dressing ( mixed with the pasta) but the finishing touch is those crispy fried onion bits (they sell tubs of them in b&ms) they just bring everything together. If I’m feeling extra, I add sun dried tomatoes and a rasher of crispy fried bacon.

Any raw or cooked veg/salad that's going - nice oil eg walnut oil - cider vinegar or lemon - boiled egg or leftover meat or avocado - freshly toasted seeds pumpkin, sunflower or sesame) or ditto walnuts. These really improve the experience. I like the crumbled tortilla chips idea too.
Tomato salad is great with fresh garlic/herb croutons too, to mop up juices. Interested in wholegrain rice option.
