What's everyone having for dinner in this heatwave?

If you're experiencing the heatwave like we are in Berkshire, UK- then what have you all got planned for dinner?!

I need some inspiration as currently I have no desire to stand over a hot oven, yet feel like I am slowly marinating myself😂

I made curry this morning, so it’s reheated curry and naan! Nothing like a bit of spice to sweat out the hot weather

2 x chicken breasts
Pack of Hot Ham pieces
Mixed rocket salad
GF fusili
Cucumber
Sprouting brocoli
Spring onions
Mayonaise
Honey
Mustard

Ham salad. No need to go anywhere near the cooker.

Me too. I remember this being a staple of my parents in the 80s and don’t do it often but everyone loved it. Had egg mayo with it too (always have hard boiled eggs in the fridge so no cooking).

Fridge is full of quiches, scotch eggs, pork pie, chorizo, cold meats, cheeses, potato salad, coleslaw, beetroot salad, lettuce, watercress, tomatoes, radishes, cucumber, celery, salmon canapés and more.

Everyone helps themselves!

Blimey, sounds lovely. Is that all homemade or shop-bought?

Had a fair bit of potato salad this week, with tinned fish or smoked. Tonight am having roast cauliflower (cooled!) with lots of nuts, fresh herbs, and some feta.

We had a yellow sticker BBQ with salad and roast veggies also cooked on the BBQ
Steak, sea bass, chicken thighs and fancy sausages

We had savoury rice mixed with diced tofu, peppers, onions, tomatoes, and mixed beans. Light but filling.

I baked some potatoes late last night so we could simply wang them in the microwave to reheat and add some cheese and a salad. Plan is to cook tacos before bed so we can simply reheat and go tomorrow

Tonight was ‘eat whatever you can find in the fridge and cupboards night’ I had a plate of raw veg scavenged from the fridge with red pepper hummus, DD has had a bowl of shreddies and an ice lolly and DH had a plate of random picnic stuff leftover from the weekend

Posh sausages in M& s Japanese milk buns ( my fave) with chilli jam and German mustard- salad of pink cabbage coleslaw, cucumber, toms and rocket

So many good ideas to mix basic salads up!

Ours tonight was tasty:
Chicken breasts with curry spices rubbed in and air fried for 20 mins then thickly sliced.
Potatoes chopped (not peeled) air fried for 15 mins.
Brioche buns.
Dressing made of oatly creme fraiche, mango chutney and lime juice.
Lots of usual salad malarky.

That's what we had - ham, egg mayo, tomatoes, cucumber and lettuce, coleslaw and some bread & butter.🙂

I had gazpacho with chopped cucumber and some Serrano ham but only had myself to worry about, kids are out with their father. Dd1 would definitely have wanted some carbohydrate with that.
