What's everyone having for dinner in this heatwave?

If you're experiencing the heatwave like we are in Berkshire, UK- then what have you all got planned for dinner?!

I need some inspiration as currently I have no desire to stand over a hot oven, yet feel like I am slowly marinating myself😂

Left over stir fry pasta with leeks and tuna. Just ate it cold. It was actually tastier than pasta salad - leeks are my favourite vegetable, so I may just do that again. Dh is asleep and he is having something else later. Dd is out with friends.

We are also in Berkshire and we're living on fridge and cupboard food because our kitchen is hotter than Hades. There is no chance I'm turning the oven on or cooking anything on the hob.

Last night was quiche and salad.

Tonight was those packets of ready cooked quinoa with falafel, hummus, carrot, feta etc.

Tomorrow I fear we'll have given up and be living on cheese, crackers and ice lollies! 🤣

Some lovely meal ideas here, thanks everyone.

I had mozzarella, avocado and cherry tomatoes all chopped up and tossed in seasoned olive oil and lots of fresh basil, smoked salmon, potato salad and a couple of slices of whole meal bread to mop up the lovely juices.

Tomorrow I will swop out the salmon and mozzarella to quiche and feta cheese. Rinse and repeat for a few days until I’ve used all the salmon and quiche.

Pudding is Lidl’s Gelato pistachio ‘Magnum’ type lolly, or their Italiano pistachio ice cream sandwich .

Yay a fellow 'Shire! We are melting here. Living on cheese sounds like a plan though 😋

I made my little boy some mini chicken fillets with panko breadcrumbs and grated parmesan for tea, done a couple extra in for myself. Put them in a toasted brioche bun with lettuce and mayo. Air fryers are a life saver in this heat, couldn't handle the oven being on.

We had a quiche, boiled new potatoes with butter on them, salad and coleslaw. Tomorrow we are having fish fingers, chips and peas, Thursday is some leftover homemade curry from the freezer with microwave rice and nan bread. So the oven will be on a bit but won't be very labour intensive. I hate cooking at the best of times.

We've just had roast chicken, homemade chips, salad and coleslaw. Delicious!

Tomorrow it's sausage, mash and veg and Thursday is chicken curry.

Tomato, mixed green leaves and beetroot salad with crumbled feta cheese and basil, salami selection, hummus, guacamole and focaccia. Followed by Ice lollies.
Just the thought of turning on an oven would have me running for the hills in this heat.

Today: Jacket potatoes, salad, cheese, coleslaw. Half day school for Dd so in garden and hot tub in afternoon so we snacked on strawberries, melon, satsuma, popcorn, pastries & ice cream. She had a sarnie before bed.
Yesterday: mini sausage rolls, salad, cheese, roll & butter
Tomorrow: Might do pasta or burgers & chips

DD and I had a roast. Chicken, spuds, veg, lashings of gravy. It was gorgeous.
I put it all in the oven then sat in the garden with a glass of wine while it cooked.

We had cheese burgers in buns. Cooked on the George Foreman around half 8 so it wasn't quite as hot. We had french doors wide open but could also cook them outside if needed as we have an outdoor socket. Melting in a new build so not using the oven or hob for a few days!
