No eggs on pancake day!!

Just been to Tesco before work and there are literally NO eggs..... not even the really expensive ones they do.......

I am now going to make DH go to every single shop until he finds some, as the day cannot end until we've had pancakes!

My DS is allergic to eggs and dairy so I make vegan pancakes which are very simple and really nice. In fact the non allergic members of the family prefer them to the "normal" recipe.
I see tge OP os sorted but just in case anyone else is having egg problems here's the recipe...(it's American sorry, so in cups and I do have a set of measuring cups so I haven't converted the measurements)
1 cup of SR flour
2 tablespoons of sugar
1/2 teaspoon baking powder
Pinch of salt
About 2 cups of soya milk (I use alpro no sugars)
Mix the dry ingredients well first then gradually whisk in the milk til its a runny batter and slightly frothy.
That makes about 10 pancakes.
I have never tried it with other kinds of milk but it would probably work. Soya milk has a bit of a natural raising property though so it makes them quite light and fluffy.
Vegan/allergy baking is a bit of a dark art and I've had varied degrees of success over the years but this is a really simple recipe with no strange ingredients that has never let me down. I've served them without telling people they are vegan and nobody has ever commented.

Chickpea water aka aquafaba = egg substitute.

We use the BBC good food vegan waffle recipe for pancakes. We make them with oat milk (I'm dairy & egg free). The kids & DP said they tasted the exact same so worth checking out 😁

Asda have said they’re limiting certain vegetables because of supply problems.

Until we stop importing our foods, we’re going to have these temporary shortages all the time.

Were an island with lots of farms. Crazy how we import so much, when it’s grown on our doorstep.

Funny because we didn't have these temporary shortages before we cut off imports from our nearest and biggest trading partner. Besides which a shortage of tomatoes in February is not going to be solved by relying on UK growers is it.

You do realise that it's actually Shrove Tuesday, the start of Lent? So it's a religious thing. But no, forget that. Just buy loads of chocolate Easter Eggs too for when it ends, because that's a 'fun tradition' too.

If you crack your eggs into an ice cube tray you can freeze them for 6 months and just pop out however many you need and leave to defrost at room temperature.
