No eggs on pancake day!!

Just been to Tesco before work and there are literally NO eggs..... not even the really expensive ones they do.......

I am now going to make DH go to every single shop until he finds some, as the day cannot end until we've had pancakes!

When I was growing up and when dc was small Pancake Tuesday was a BIG deal and something we looked forward to.
In the grand scheme of things it's not wild to expect that you could go to a supermarket and buy eggs..

Gently, eggs have been in short supply for months now and pancake day is a very predictable point of high demand for them, so waiting until the day to get eggs in was a recipe for exactly this situation.

We’ve inadvertently got about 25 in our fridge. I order them every week but they’ve backed up without me realising. It’s kind of risky leaving it until the actual day. Like trying to find an advent calendar on 1 December 🤔

I imagine because most people will be eating pancakes because of tradition rather than following the religious meaning.

I am sure I was the only one on the Hot Cross Bun thread that only eats them on Good Friday.

We recently had a food tech egg panic. Managed to find them in a "corner shop" type place after multiple super markets were all out. Hope you find some!

@hidingbehindascreen I haven’t tried the following but hope there is an egg substitute that you can do.

Egg substitutes for pancakes:

Flax “egg”: mix 3 tablespoons warm water with 1 tablespoon ground flax. Wait 10 minutes until a gel-like mixture forms and use that in the recipe.

Mashed banana: ¼ cup mashed banana for one (1) egg.

Pumpkin Puree: you can use ¼ cup canned pumpkin puree for one (1) egg.

Chia egg: mix 3 tablespoons hot water with 1 tablespoon chia seeds. Wait 10 minutes until a gel-like mixture forms and use that in the recipe.

Commercial Egg Replacers: there are a variety of egg replacers in the market typically made from a starch and leavening agent. The directions are in the box (can vary by type).
My top egg replacers are Neat Plant-Based Replacer, Ener-G Egg Replacer, and Bob’s Red Mill Egg Replacer for achieving consistent results.

Arrowroot Powder: mix 3 tablespoons warm water with 2 tablespoons arrowroot powder. Wait 10 minutes and use the mixture in the recipe. This is my least favorite.

You can make them without eggs.

	220g of plain flour
	680ml of almond milk, maybe more to loosen
	1/2 tsp <a class="break-all" href="https://www.greatbritishchefs.com/collections/salt-recipes" rel="nofollow" target="_blank">salt</a>
	5 tbsp of vegetable oil, (or other neutral-flavoured oil) 

Obviously use normal milk if you aren't vegan.

As others have said, just make eggless pancakes, or have them another day when you can get some eggs.

I bought some in M&S on Sunday - their 15 mixed eggs for £2.50 are probably some of the cheapest supermarket free range eggs available.

Op knew they weren’t getting paid until now and there’s been an egg shortage on and off for months.
It’s pretty disingenuous of the Op to complain about the lack of eggs and then drip feed the money element when she wasn’t getting sympathetic responses

It shouldn’t change the fact it was entirely predictable there may be no eggs for pancake day which was what @MooBaby was pointing out.

Eesh

It started as a lighthearted post about eggs, wasn't meant to cause so much vitriol.

there’s a great list a few post above, so just to add… apple purée is a good one too ( add a little baking powder or use sr flour ) to compensate the egg loss.

This. You don’t need eggs for pancakes. Look online for some great vegan recipes. Alternatively use an egg substitute. I use one called Cracked which you can buy in Tesco for £3. Happy experimenting.

Just an aside here I have frozen eggs when I have had too many in the past (I bake a lot) I mix the white and yolk together and freeze them, in quanties that I would use. Once defrosted they can be scrambled, used in baking etc
