Please can you hold my hand for a bit. I’ve just had to make an incredibly sad decision.

I’ve just had to make the hardest and saddest choice of my life. I’m feeling sad and I have absolutely no one to talk to, and could really do with some chit chat to take my mind off things. Does anyone want a chat about anything other than my hard decision?

I'm sorry you are feeling so sad but happy to chat about anything you want. DH is currently watching the finale of the Walking Dead which I gave up on about 3 series ago so I'm MNing to entertain myself!

My chit chat of the evening revolves around cake. specifically lemon cake and how I feel it should only be eaten in spring (preferably) and summer. I have no idea why I feel this way but lemon cake in autumn/ winter just feels odd.

what’s your favourite cake @Saddecision? Or anyone else for that matter!

Sometimes a pudding is more comforting, I used to like those ones you get in a tin to have with custard when times felt hard. X

Just came to the end of Green Wing, truly daft comedy series. Equally daft, I find myself tearful about the ending and all the ridiculous characters!

Very inappropriate. As was Green Wing!

Not cake but MIL dropped off some homemade apple pie and custard earlier. Obviously we had to eat it tonight and I'm so stuffed I don't think I can get off the sofa.

I watched an old Miss Marple, it’s like a hug in TV form. Even though I know the plot, it’s nice to dip in and out. I also by mistake ate a whole tub of ice cream by accident.

Believe it or not, absolutely nothing! By the time I’ve wrestled DD into bed I don’t have the attention span for series really! I am watching the odd episode of Taskmaster when I remember. What I actually love rhymes with Blue Fools Rag Face which I’m well aware is MN blacklisted!

Interesting take. I agree with you if it’s an iced lemon cake or a lemon sponge sandwich, but I think a crunchy/syrup topped lemon cake is respectable teatime fare even in the winter. Beetroot and chocolate cake is a cold weather only option for me, whilst Victoria sandwich feels like a summer cake.

Sad decisions are always difficult.

I had to take a difficult decision 4 years ago to out my daughter in chemo (she doesn't have cancer but it us used to treat other disorders). The treatment could kill her liver or worse her. It the benefits if it worked had the potential to be completely ife changing.

As hard as the choice was to make I would make it again in a heartbeat. It has changed our lives.

Whatever the decision is, you have made it for the right reasons.

In the meantime to cheer you up...I am renowned for being a klutz. Day 1 of a new job I tripped over my boss's chair and face planted the floor in front of about 90% of the senior management team. This week I have slammed the boot lid on my wrist and given myself a massive bruise...

Honestly I should cone with a health warning xx

Kay’s Carrot Cake

For the cake…
2 cups / 9 oz self raising flour
2 cups / 14 oz sugar
1 teaspoon salt
1 ½ teaspoons baking soda
2 teaspoons cinnamon

Mix all of the above together in large bowl.

Add 1 cup vegetable oil and
4 beaten eggs

Mix thoroughly.

Add 1 small tin crushed pineapple (125mls) with juice (it’s difficult to find crushed pineapple in the UK so I usually buy a little tin of pineapple rings & chop it up – don’t forget to include the juice)

Half cup chopped walnuts (optional) – you might want some extra ones to put on top of the icing.
2 cups grated carrot (approx 4 carrots)

Mix thoroughly and pour into a large greased or lined cake tin.

Bake at 180C / 350F / Gas mark 4 until a toothpick comes out clean – approx 35 - 40 mins, but sometimes takes a little longer…leave it in the oven till it passes the toothpick test.

For the icing…
4 oz softened cream cheese – full fat (or it’ll taste funny)
2 oz softened butter
1 teaspoon vanilla essence
6 - 8 oz icing sugar
Combine all ingredients and beat icing sugar in until it forms a fairly stiff consistency.

Spread over cake when cold.

A colleague at work gave me this, her aunt's recipe, years ago and it's never failed me.

Keeps well too (given the chance!)
