Chippy staple in Wales where I grew up, I was looked at like I had two heads when I asked for one in England!

Veggie oils that are either from soya or peanut seem quite popular - do you use these and are they good food wise, or good price wise? (Allergic to both and always wondered if it was a taste thing or a cost thing!)

Just ordered fish and chips after reading this thread! Drooling. Do you do offer any meal deals etc? Our local does a pie box, a sausage box etc. Great value - you can have things like a fish cake, jumbo sausage and chips with gravy for £4.95, and I can never finish it!

As a kid we used to be able to buy a “beanie” for our local chippy . Bakes beans then sausage meat then batter . Any chance of a revival ?

Ooh, interesting. What GP do you work to, and which items on your menu have the highest & lowest GP? I would guess fish is lowest & peas / gravy / curry sauce are highest.

My favourite thing in the chippy is roe but I meet very few other people who like it or have even tried it. How many portions do you sell in a day, or a week if it's less than once a day?

@EldenRing3 it's not a recipe as such but here goes:

You need dry mashed potato that's been allowed to go cold. None of your creamy mash nonsense, just well mashed plain spuds.

Get a tin of corned beef, mash that up too and mix it into the potato.

Get a big white onion and grate it (keep all the juice). Dump that in the potato mix.

Then you need ground white pepper (lots of it, and never black pepper) and some salt.

When fully mixed get some beaten eggs and packet breadcrumbs ready.

Roll the mixture into balls about the size of a tennis ball. Roll in the egg and then roll in the breadcrumbs.

Deep fry until golden and crispy.

Absolutely love cod roe and chips. Battered of course! Don't seem to sell it anymore though - have never seen it here.

when I was in Essex everyone had either cod or rock - now in Kent it's huss- what's that all about. Oh and it's Wally not gherkin thank you very much 🤣

What a great thread, I was going to have fish and chips for my tea tonight but it is too hot where I am. Definitely going to get some once the weather is back to its usual grim ways

  1. why does the salt and vinegar not taste the same if you add extra at home?

  2. do you make good gravy? I tend to prefer Chinese chippys for this reason, English gravy is often watery

  3. why do some places think soggy pale chips are acceptable? Do you have a chip crispness standard?

  4. how much money do you make from a sack of potatoes approximately?

Also just to say on behalf of all of us here thank you for running such an establishment especially if it’s a good chippy too…

Wherw are you based (North or south, no need for specifics!) And do you sell scraps? I love them, but they seem to be a northern thing only. If you are southern, have you trialled them?

I'd say they are from the North West as they have said barm cakes.

I don't know about the OP but I live in the Midlands and some of the chippy's around here do a battered mushy pea fritter. Have to say it was delicious!! I'd love somewhere to do onion rings!

No questions. I just want to tell you I absolutely love pickled eggs and am gutted my lil cal chippy has stopped selling them! I once ate 5 pickled eggs in a row and had to go and have a lie down from the buzz!

This is so interesting.

I used to be friends with a fish n chip shop owner. She always had a smell of chips, even though they changed their clothes when they finished work and showered and washed their work clothes.

She did tell me that scraps can spontaneously combust, although rare it is possible. They had a fire in their shop when the bin caught alight.

Is it a profitable business? I've always thought chippy owners must rake it in but my local chippy shut down so now I'm not sure.

I love the idea of owning a popular chippy. I can imagine my daughter working in it once she hits her teens for extra money! 😆
