Name changed but I’ve seen 2 threads about fish and chips tonight - I have a chippy (away hence not working) AMA

Wherw are you based (North or south, no need for specifics!) And do you sell scraps? I love them, but they seem to be a northern thing only. If you are southern, have you trialled them?

Do you have a machine for chipping the potatoes or do you buy them in ready chipped?

We rumble and chip them

One of the school mums used to own a chippy in the local estate, it used to open at 10am and she said loads of the locals would put in an order at that time every day and get a delivery, even though they only lived meters away. Do you have clientele like that? I love a chippy but the thought of it every day for breakfast 🤮

We give scraps free 😍

Not sure if you're down south or not, but if you are would you consider adding deep fried pizza or pizza crunch to your menu. It's always a pain visiting England and no option of a half pizza supper (I'm vegetarian and that's my go to veggie option here in Scotland)
And before the judgy perfect MNers jump on me, I'm really healthy and careful in my diet in every other way! This is just my go to treat when we have a chippy lol.

Why do so many chippies have soggy, anaemic looking chips? I've been told it's poor quality potatoes by a chippy owner, I told him to stop buying them then! Some people say the oil isn't hot enough and some say they just don't cook them long enough. What's the secret to a good, crispy chippy chip?

Yes I've always thought the same. If a chip shop ever did thin cut french fries instead of thick, soggy 'traditional' chipshop chips I'd be there in a flash

No but on a Sunday we get a lot of lunchtime deliveroo orders for hangovers

Have you reduced portion size or increased price this year (or both?)

Isn't the point of chip shop chips that should be somewhat soggy (and showered in vinegar)?

They always used to be crispy. I didn't realise people liked them soggy. Maybe it's because I'm not a fan of vinegar. Interesting. I just thought the standards started to drop in the past 15 or so years but maybe they are doing that because people like them that way!

We blanch them and then fry them really hot to order

How much do you make per annum from running a chippy? always wondered how much the high street shops bring in.

I'm interested in the answer to this because I imagine you work really hard for your income.

  1. Why do chippies south of the Midlands rarely, if ever, offer chips and gravy.
  2. If I visit your chippy please can I have a pickled egg 😃
  1. I’ve no idea - very odd
  2. see my first reply

Is there such a thing as a mushy pea fritter? Often thought it would be a good vegan option. With battered onion rings and mushrooms. Chip shop tempura…

Whattodo112222 · 11/08/2023 19:21

How long has your most loyal customer been coming to your establishment?

itsfridayitschippyteanight · 11/08/2023 19:21

BreadInCaptivity · 11/08/2023 19:10

How do you source your fish?

We only go with suppliers who have a sustainability accreditation. It’s mainly caught in Iceland and frozen at sea
