Name changed but I’ve seen 2 threads about fish and chips tonight - I have a chippy (away hence not working) AMA

Does anyone ever bring you chocolate bars and ask you to batter and fry them?

Yes but it wrecks the oil so we don’t

How much do you make per annum from running a chippy? always wondered how much the high street shops bring in.

noblegiraffe · 11/08/2023 18:55

What would your order be?

8oz cod loin, handful of chips, mushy peas and homemade tartare

sooverthisshit · 11/08/2023 19:04

Do you do cash sales/close for weeks at a time to avoid hitting the VAT threshold?

Sunshineclouds11 · 11/08/2023 18:56

Working in a Chippy, what is something you'd avoid eating?

Nothing really but the fish is the best

Do you cook the books as well as the fish & chips? They used to be notorious for that.

No chance - we were once investigated by HMRC and it was awful, and they didn’t find anything ‘fishy’

Are cheese and onion fryits still being manufactured? No chippy I've been to has had them for the last several years.

Never heard of them but they sound nice

Do you sell more curry or gravy?

Very even

  1. Why do chippies south of the Midlands rarely, if ever, offer chips and gravy.
  2. If I visit your chippy please can I have a pickled egg 😃

Does the smell of oil and vinegar ever leave your hair?

What is the magic technique for wrapping a portion of chips in paper- they always do it so quick I can never figure it out!

I don’t smell it anymore so I’m not sure. I’m not actually very good at wrapping, the ladies who have been with is forever are outstanding

Do you consider your saveloys to be actual edible food?
Would you ever eat a doner kebab?

No and no

Do you offer gluten free ( separate fryers etc ) .

We did but we only ever used to sell about 3 and it wasn’t worth the hassle

This question!

Also, just how hairy can it get at the end of the night to serve really drunk people?

We close at 9 to avoid this

Do you worry about the environmental impact of the fishing industry or not really at all?

Sunsnet · 11/08/2023 19:10

Why do so many chippies have soggy, anaemic looking chips? I've been told it's poor quality potatoes by a chippy owner, I told him to stop buying them then! Some people say the oil isn't hot enough and some say they just don't cook them long enough. What's the secret to a good, crispy chippy chip?

BreadInCaptivity · 11/08/2023 19:10

How do you source your fish?

itsfridayitschippyteanight · 11/08/2023 19:11

HelpMeUnpickThis · 11/08/2023 18:59

How often do you have to change the oil and how do you dispose of the old oil?

Also do you ever eat fish and chips at home?

You have made me hungy; I am re thinking my dinner plans!

It gets filtered every day and then changed on a rota as it gets dirtier but we have extremely clean oil. It costs a fortune. Companies buy it off us and we save it kn barrels

Isn't the point of chip shop chips that should be somewhat soggy (and showered in vinegar)?

Jitterybugs · 11/08/2023 19:12

Do you have a machine for chipping the potatoes or do you buy them in ready chipped?

Floralnomad · 11/08/2023 19:12

I’m amazed , hardly any one offers it near us and the few that do are really popular - we drive about 20 miles to our closest one

MaCrepeSuzette · 11/08/2023 18:59

Do you sell vegetarian or vegan options?

The chips are vegan and we do cheese and onion pies

What’s the fish batter made of? Is there such a thing as a ready bought mix, or is it your own recipie?

Ready bought but with our own added extras

How are you surviving? The cost of fish & chips must be limiting the number of customers you have.

We're a family of 6 plus girl/boyfriends which makes it too expensive for us to buy fish and chips more than a couple of times a year.

We’re being very innovative with our menu - the costs are astronomical at the moment
