New Year Low Carb Bootcamp

Hope you all had a lovely Christmas, and that Santa brought you everything that you deserved! Xmas Grin

By now, I'm guessing that many of us will be rather tired of chocolates and stodgy food. Mince pie anyone? Xmas Wink

So. The next low carb Bootcamp will be starting on 7 January. It will run for 10 weeks, which will take us to mid-March. The idea of Bootcamp is that we have an initial strict fortnight, which will see a significant amount of weight loss, followed by a more relaxed 8 weeks.

Overall, if you follow the rules, you can expect to lose anything up to 20lbs in this time period.

So who is in?

mumat39 - I can second the recommendation for the Idiot Proof Diet Cookbook - some really good recipes in there, and they are very easy. A lot of them use cheese/cream, though, so obviously you'd have to avoid those!

And the recipe thread here has some lovely and easy recipes in it

Thanks so much for your replies. I am going to have to go back to having very little dairy I think. Honestly I felt so awful this morning and I think it is a big red light to dairy. Cheese does the same but was hoping Philly might be ok.

The meats all sound good. I hadn't thought of the continental meats. Olives I love and I think they like me so that's a good one. BIWI, I did see that on your what you can eat post up thread but for some reason it didn't really register. Confused

MrsHercule, phew re the pâté. I think that might be the 'convenience' breakfast that I'm going to go for until. Get back into the swing of things with cooking.

Can I ask about the roast chicken? How do you do that.? I'm a bit scared of chicken in that I worry about not cooking it right. Is that an easy thing to do?

I wonder if there is a fly lady equivalent for people who need to start to cook again. Years ago I used to love food and cooking but I fear it so much now. It's so sad. Sad

Roasting a chicken is easy peasy! Just drizzle it with olive oil, or slather it with butter, season and shove it into the oven. Usually on the packaging it will give you not only the temperature you need to set the oven to, but also how long you need to cook it for. Follow those instructions, and then at the end of the time, take it out of the oven and pierce the fattest part of the drumstick with the end of a knife. If the juices run clear then it's cooked. If the juices are still pink, put it back in for another 5-10 minutes.

Once you've taken it out of the oven, cover loosely with foil and leave it to rest for about 15-20 minutes. This will ensure it's really tender when you serve it.

Hi BIWI and old timers and newcomers. I'm in! Just love this woe and could never have got down to a weight that I'm happy at without the support on these brilliant threads. Just back from holidays and was pretty good although definitely ate things which shall not be mentioned in front of BIWI! Someone was asking up thread about reintroducing carbs when you're at target and what I've found as The Human Catapult has said more eloquently previously is that when you've been off carbs for a while when you do indulge you can end up feeling truly shocking - for me the carb hangover fear is as much of a deterrent as the weight gain.

Wine how are you feeling? Sorry to read you've been poorly.

Jan hugs to you. I think that age is so full on and exhausting - you deserve Thanks and Wine but don't tell BIWI about the latter!

Ewan Did DS carry on sleeping through after that night of wonder before Christmas?

Hi Muddled. I do have a slow cooker, hiding in the cupboard Last time I used it was to cook chicken stock in, for the food I make for my dc. It had been on overnight and the next day I gave my dc the chicken to eat from it. DS just refused it. dD ate it but was then very violently sick in the night and I ended up taking her to a&e as I was worried I'd poisoned her. Sad

I had sort of forgotten about it so maybe will get it out and have another go. I wonder if there are any good slow cooker low carb recipes. I'm going to google that now. Thanks so much. :)

organic or non-organic ?

Just that really. When starting do I need to try and get organic versions of food, or is the normal own brand stuff okay? I'm thinking of for meats and veg?

BIWI I'm a bit confused about this oil thing. I know you've posted about it in the past but can you jog my memory? You've mentioned not cooking in olive oil - can you remind me why? I've used rapeseed oil in the past, is that acceptable on bootcamp? Thanks!

It's something to do with a high heat changing the nature of the oil, Jessica. Coconut oil is apparently much better, but it is much more expensive.

TBH, I still use olive oil to cook with, as well as grapeseed or sunflower or rapeseed. Will see if I can find something more helpful!

mumat39 - if you can afford organic, it's always better. With meat, organic chicken and grass-fed meats are better choices, but they are horrifically expensive! But it's not a part of Bootcamp.

I have to say I do still use olive oil for roasted veg and some other stuff - I like the flavour! I must find some reasonably priced coconut oil though and test it out

Signing up too if no one minds!! I need to lose 1.5 stone I'm currently 10.5 :( I've also been advised to avoid gluten, so the carbs I do eat will be a bit trickier! Any tips / advice greatly appreciated. :)

I started today.

B - two buttery scrambled eggs
L - celery and cucumber sticks dipped in salted chili oil and a bit of cheddar.
D - big heap of asparagus and broccoli, and chicken breast wrapped in a couple of bits of bacon.

I don't feel hungry at all, but I've got a delightful carb-withdrawal headache already.

I struggle with drinking enough water (don't dislike it, just find it boring and forget) and usually rely on gallons of delicious Irish Breakfast tea to up my fluid intake - can't do that though, as I have never been able to drink black tea without sugar in it.

So have got a load of fruit tea bags (Raspberry zinger flavour) and a couple of green tea bags for luck and this morning brewed a big 2 litre jug of tea and stuck it in the fridge - its lovely and like drinking chilled raspberry juice or something. Have got blueberry tea bags for tomorrow, so won't get bored. So am pleased to have solved that drinking thing. Can't stop bloody weeing though, I am nipping off so often poor DH thought I had cystitis or something and was getting concerned Grin

People who know these things, can you advise me if this is a good reference page or not: Low Carb Stuff
