Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

Can any of you help me? I'm low-carbing, but only as far as cutting out the main ones (bread, potatoes, pasta, etc.) I'm losing weight steadily, 1 - 3lbs a week, don't want to go any faster because I'm old and my skin is not as elastic as it used to be.

Anyway, I've got several dinners to either host or attend in the next few weeks and I'm struggling with puddings. Going to make a raspberry pavlova for tomorrow, but have you got any other ideas?

If you make something that is based on eggs and cream, like ice cream, custards, mousses, syllabubs etc, you can hoik out a bit of the mixture for yourself and use splenda to sweeten rather than sugar, then just do everyone else's with sugar.

TBH it's easiest to just get yourself a bowl of berries and cream, or just eat from the cheeseboard and make everyone else a normal pud.

Salad with rocket, coleslaw, cheddar and ham
early tea: leftover IPD ham, leek & celeriac bake

Think I will cut out the hot water with lemon.

Having a very lazy day - have slept all afternoon and read some Marion Keyes. Should probably do some exercise.

I have just eaten 2/3rds of a bar of that salt lindt choc - deee-licious but now I feel sick...not used to the sweetness I suppose Confused

Thank you for the welcomes:) Found, you could make a trifle with sugar free jelly. Bit old school, but carb-free! Individual pots of chocolate mousse served with whipped cream and berries would be lovely too.

oh gosh, I'm so late to this thread, but checking in!

I'm still finding it ridiculously easy to stick to the diet apart from the wine but no more weight loss this week. I suppose it's the famous week 5 plateau?

DP just came home with some rather gorgeous looking fish and chips but I resisted and just had a bit of batterless fish.

I've got some of that pornographic salty chocolate in the cupboard, but I'm saving it for an absolute emergency.

Can you see my halo shining? Grin

So, why is it that you don't see lo-carb being recommended by docs etc?

Custy - regarding exercise, it is easy to measure calories expended during exercise (as a calorie is a unit of energy), but I don't think you could compare it to grams of carbs.

Carbs are metabolised differently by everyone, depending on what they are, and depending your own personal physiology, whereas a calorie is a calorie.

But exercise boosts your metabolism and hence speeds up fat-burning, so clearly "a good thing" - it's just impossible to say "well I ran for that bus so I can scarf down 5g of carbs and feel no guilt."Grin

No exercise here to speak of; didn't leave the house all day.

For brunch I had a linseed pancake and some bacon,

For tea we all had baked salmon and veggies.

For pudding I went a bit experimental to see if I could satisfy dh's sweet tooth. I stewed some bramley apples with xylitol and cinnamon, then conconted a topping with ground almonds, xylitol and butter. I over-did the butter, because it ended up like squishy pasty, and I ended up having to blob it on top of the apples in little lumps, but after 20 minutes or so in the oven it was lovely and brown, and went down very well with a slosh of double cream.

I'm hoping the fabled laxitive effect of xylitol only kicks in if you overdo it, otherwise my family will kill me, and there will be a queue outside the bathroom door later.....

Evening all. Slightly up today at 10 9.5 but that's still at the lower end. Am hoping to keep below 10 10 next week and beyind.

Today has been uber lazy here too.

Breakfast: fried egg, streaky bacon and one slice of fried supd

Snack: piece of cheese and some chorizo

Lunch: confit goose leg (christmas leftovers) with asian salad (leaves, finely slived pepper and scallions, chilli, ginger, lime and sesame oil)

Dinner: shin of beef casserole, garlic spinach and brocolli,

Alsi put away half bottle of white wine but let's pass over that!

before i go any further, let me explain that if my typing is worse than usual its becuase i spilt a shitload of vodka on the keyboard

i haven't done any exercise yet, but i keep thinking i might try a jog.

ive never jogged and only have trackies from when i was fat. i am literlally - literally sat on my arse most of the day as i dont have a job

got some, so what the fuck do i do with it - remember i have no patience and don't want to fuck about

Happy Valentine's day folks.

10 7.75 this morning - lowest Monday weight and well into "I've definitely lost weight" territory. I am now investigating clothes that I haven't worn comfortably in years. It's great! Boobs shrinking too (was roughly 34E/F, now a small E with less back fat) which DH will be less happy about. Tough shit, boyo.

Little bit egg bound this morning despite heroic amounts of veg over the weekend. So two prunes with my morning yoghurt.

I have used almond flour to make crumble, rather than using flour. But it wasn't exactly textbook atkins as it had porridge oats and real (gasp!) sugar in it. But you could leave out the oats and use splenda.

There's a pancake recipe up the thread that might also be worth a try.

13s! Shock Admittedly fully clothed with boots, jeans and jumper, but even so.

So....here we go. Bacon and mushrooms for breakfast. Delivery due this morning with lots of meat, cheese, mayo and salad. DH doing it too.

Feeling your pain Orm, I am there too (and not fully clothed either) and used to be 10. I use the lbs setting on my scale to stay in denial about the stones most of the time.

on which, 182.2 today and some more 181.somethings over the weekend Grin when I see something starting 170-odd I am going to celebrate with a new bra and proper bra fitting as only one of mine fits at the moment. I think I am 36DD at the moment which at this weight means my tummy is still significantly bigger than my boobs Sad so decent bras are a must if I am not to look like a walrus!

Gotta start somewhere Orm.

I found that I needed a lot of snacks in the first few weeks. So have cheese, ham, smoked salmon, celery and cream cheese etc on standby for cravings. Some people have nuts but I am a bit all or nothing with nuts. A handful does nothing for me; a bagful will obviously be shit for weighloss.

going to try those celeriac chips tonight.

I think i might use the almond flour for breaded chicken today

Well, I fell off the wagon for a whole week. It started with a stuffing ball and half a hot cross bun and ended with a tin of quality street and a packet of jaffa cakes.

I'm such a twat sometimes.

I'm back on it this morning. Weighed myself...blocked out the horror of the damage.

DH bought me some diabetic chocolate for valentines day. I didn't tell him it was allowed; he researched it himself and everything.

I'm not taking on exercise until I'm either a) thin or b) stalled (at a push - and then only after extensive diet tweaking). I can only manage one life change at a time! Perhaps couch to 5k next year ....
