Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

10 3.5 today. Bumping along at my lowest weight. I am still resisting exercise.

I am feeling very happy. Just tried on all my summer clothes which had been hibernating in the loft since the autumn. They either fit much much better or are too big! Even some stuff which I've kept from optimism now fits! It's really given me a boost.

I have just sorted a massive pile of charity shop stuff, a pile of stuff to be altered/dry cleaned plus a great big pile of stuff to wear!

I desperately need work summer clothes which are not black or grey. Waaayyyy too much dark stuff. Also need tops. I seem to have barely any. Any excuse to go shopping though. Will make a list for after next payday.

Had scrambled eggs and smoked salmon for breakfast. Lunch is a filled salmon fillet, with ricotta and spinach (M&S, 1.8 carbs per portion). Dinner is left over butter chicken from freezer with spinach or maybe some stirfry veg. What veg is good with curry?

With curry I do cauliflower, peas and tinned tomatoes. Bit of oil, curry powder, cook the cauli for a bit to cover in the curry powder, chuck a tin of toms in and cover and cook for 10 mins, then put some frozen peas in. Works for me.

Delighted as weighed myself this morning and I have lost 12lbs since the start of Lent. Hurrah. Still loads to go.

hi everyone, i wanted to join, as i started no carb on friday. need some help to keep me going really, and wanted to find out what everyone else is eating.

also what is celeriac? I have never seen it, are the chips nice? And do you have any idea how may carbs are in it? I might eat it everyday as miss potatoes already....

Hi happens - welcome.

At a fair few places on this thread there is a link to custardo's blog about lo-carbing. Worth a look as she spells it all out very succinctly. Also, if you google low-carb then you will get a few websites that will tell you all about it.

I think carrots are quite high in carbs tbh. You may want to re-think your 'everyday' option on them Smile. Beetroot as well ... not a good choice (for many reasons Grin)

Celeriac is a knobbly , ugly veggie - looks a bit like a dirty swede (Shock) or turnip. You peel it, top and tail it and then you chop it up. You can fry it, roast it, bake it etc. It smells like celery and tastes lovely. Give it a go ... my DH, who loathes celery with a passion, likes celeriac.

Hello hello, just got the DDs to bed to cries of "I'm not tired!". DH and DS think it's summer already, and are sitting in the garden round the firepit, burning things. What a lovely weekend we've had!

Had a tasty dinner - Tarragon Chicken from the India & Neris book, basically sliced chicken breast sauteed with loads of tarragon, then add double cream and a squeeze of lemon juice. Yum. Very quick too.

Hiya happened, welcome to our nearly full thread. Avoiding high-carb food is a bit of a minefield - some things are obvious (starchy or sweet), but some things catch you out. Have a look at one of the online tables.

Hello all. Phew busy day despite being home alone - dh still at work, 21 days ina row!

Went to pilates ; the other girl didnt turn up so ended up having a one to one session with crazy pilates tattoo man. Was fun but hardcore. Apparently i have no hamstrings, he is on a mission to rectifybthat!

Food wise i was okay; bacon and fried egg for breakfast, crispy duck with plum sauce (bad) with cos lettuce wraps and cucumber and spring onion then a few nibbles of cheese and ipd butter chicken with brocolli and celeriac rosti.

The celeriac rosti were a bit of an experiment but i think they could work. I grated the (bastard) celeriac, squeezed out as muvh water as possible, added an egg, ground coriander, cayenne pepper, salt, pepper, fresh chopped coriander leaf and an egg. Also had to add a tablesppon of flour to make it a bit like a batter. Then shallow fried in 2cm of veg oil, and crisped up in the oven for 5 mins while everythign else cooked. V nice and hit the onion bhaji gap.

Well, Sal, I'm very seriously contemplating the meet-up.

DH is a bit Hmm about it; I think he'd prefer it if you lot all stayed as my "imaginary friends".

Apart from that, the usual concerns (What if everyone knows each other and I'm the nobby-no-mates in the corner? What shall I wear ffs?! ). But there are quite a few of you I'd love to meet. And I'm close to London, so won't need to stay over.

Oooh, decisions, decisions....

Hi all

Oh dear bad day. Not quite sure why.

No breakfast
chicken and bacon baguette and a chocolate krispy creme donut for lunch.

TBH didn't enjoy the baguette that much. The donut was lush though!

10 3.25 this morning, which is lowest Monday weight ever. I'm going to try not to go off the rails tonight. But I am already starting to get hungry. Must.Resist.Vending/Machine.

I think dinner will be more crispy duck lettuce wraps. They were lush yesterday. Plus need to use up the massive pile of duck in the fridge as DH is still at work and friends who were coming tonight have cancelled.

Hello all. Another sinner here. I just can't seem to get the motivation to stay on track.

I was up with my dad and DB/SIL for the weekend, and we had a lovely time - but it was carb (and wine!) city for the whole time.

So I'm starting again.

Cointreau - you must come to the meet-up. I have no idea why your DH would think we are all odd !

I'm giving up for a bit, can't be doing with anymore eggs and fat - I need fruit and cereal and healthy stuff!

Going to spend a couple of weeks trying to maintain my current weight with a healthy varied diet and then I'll give atkins another go in two weeks time.
