Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

Orms, am v interested in your recipes. I am a total glutton foodie and need to cook nice stuff or I will revert to bad food choices. The only way I can live without pasta is to eat something more interesting instead.

My favourites so far as:

Chorizo, squid and kale stirfry (thanks to mammya for that recipe)

Aubergine Parmigiana

Thai Curry w/o rice

Chilli con carne w/o rice but with sour cream, gauc and salsa

cabbage and bacon cheesy bake

Roast chicken thighs (with skin on - yum!)

Sausages

Celeriac Dauphinoise (thanks to BIWI(?))

Big interesting salads - liing asian style ones at the moment - much more interesting.

I am looking to move into curries now but fear that they won't be the same without naan bread.

Just had spicey bacon salad. Make a mixed leaf salad with spring onion. Add some crumbled feta and sprinkle on a little nice vinegar (not balsamic). Fry some chopped bacon in a pan with chillies (and garlic if you don't have to talk to DS2's teacher later!) in plenty of olive oil. Cook until bacon is crisp. Pour over the salad.

Am planning a sort of stir fry with spinach leeks and mushrooms with chorizo (or similar) and goats cheese.

Chicken breast marinated in lime juicem, chillies and garlic with olive oil and then baked in the marinade until it goes slightly golden. Ditto chicken thighs but without skin.

It's not a big box anyway ('That stuff's bloody expensive!' he whinged at me this morning. He's sweet, but cheap Grin)

Ham and egg salad for lunch. With a lemon and dill flavoured olive oil. Rather nice.

Inspired by found's dessert post last night, I am attempting to make creme brulee with splenda. Put them in the oven and ended up licking the bowl in a frenzy. Probably should have had a snack beforehand... Munched some peanut butter with celery and felt better. Following fellatio's advice and putting it in a box. Chinese tonight, (woo, splashing out!) as Saturday will be our eight year anniversary!(mondays are the only night off we have together) think I will order duck:)

I'm not actually sure about carbs in wine, strangely enough! I think we're talking about 3g for a small glass, but don't hold me to it.

Off out with DH tonight, and hoping my resolve will stay strong.

We had Thai last night, which isn the worst possible choice if you're low carbing. I had one battered king prawn and one small vegetable spring roll, and two breaded chicken wings, so that wasn't great. I chose something for my main that I know shouldn't have sugar in it - Crying Tiger (basically a sizzling sirloin steak), and had stir fried veg with that - no rice.

Today I haven't eaten much - a burger with some cheese, a bit of coleslaw and some cottage cheese.

May have to have something to eat before we go out, as our table isn't until 9.30.

Welcome to you, Orm! Sorry you've had to join us, but it's nice to see another familiar face.

I can highly recommend the India Knight/Neris Thomas Pig to Twig recipe book - some really good recipes in there that all the family will enjoy. I can especially recommend the Butter Chicken, the Moussaka and the Beef Korma.

oooh will have to try the chips - i am normally a big fan of wedges etc.

made the butter chicken tonight - it was nice - but i burnt the onions slightly which made it a tiny bit bitter. Also need to balance the spices slightly better as I had too much garlic and cinnamon and not enough of something else - cumin I think. Also didn't have any fresh coriander which I think would have freshened it up nicely.

But v good overall - a solid 8 and the nicest from scratch curry I've ever made. I added some chopped peppers to mine so was a bit like curry soup!

Lunch was chicken salad, snackage included 2 mini wee m&s choc meringues, a piece of cheese and 3 sq dark choc. I'd give myself a 6.5 overall on food front but no booze which is a bonus. Fearful of scales tomorrow but hoping the massive water intake will help.

Well, I was very good all weekend, but this evening I treated dh and myself to a lovely Valentines candlelit dinner of fillet steak & salad Smile, prosecco Hmm and profiteroles and choccy sauce Shock.

Weeeell, it's a special occasion, and it is dh's all-time fave pud!

And he is definitely losing weight, about 6lbs so far; he can't quite believe it. He has to sellotape his wedding ring on, now his fingers aren't so pudgy!

No ill-effects from yesterday's xylitol crumble, so I'll try that again. I can't find Splenda in the shops, though, apart from the tiny pills you put in your coffee. Where do you all buy yours from?

i think i have overdosed on low carby goodness.

i had way too much celeriac, inf act its all i had for my tea - must have had 3/4 of a full one

lunch was 2 quesedillas that is six

then i orderd almond butter paste - like peanut butter from lc megastore with some lc crostini -

i can even add it up - ive not been counting - but from a rough guestimation - i reckon its nearer 30 carbs today - which for me is way way too much.

but im full up

and ive got the farts too sal!

I found flaxseed in Holland & Barrett (and our shop is quite small). "Milled Flaxseed" to be precise.

It was on "buy one get one half price" too (good thing, as it was mega-£).

Supersal Sainsburys do a big sachet of the stuff with the free from stuff it's called Virginia harvest cold milled ground flax- it's amazing with almond flour mixed.

tonight I had a yummy worm salad of Jerusalem artichokes and blue cheese and green leaves.

I've never had them before. Erm, it's true what they say about them. Thank god my dh is away working and not here. Blush I've never known anything like it!

Chinese takeaway last night...but no rice/noodles/batter etc so not a disaster...then wine...and v day chocs (about 4). Oh dear. I weighed this morn and the effect of friday, sat and mon on the wine + various chocs has been 3lbs on - Booo but better than expected!

Am going to try and be super good for the rest of the week.

B- Ham
L - smoked mackerel and wasabi
D - Duck salad with celariac chips
...and NO WINE OR CHOC!!!

Must pull self together! I'd be happy if I could get back to 10st7 by saturday. One night of wine definitely needs to be my maximum until I reach goal or this could turn into a 3lb on 3lb off nightmare Shock
