Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

Spam: I think the losses can be a bit lumpy after the first couple of weeks. Plenty of water and a fibre supplement do help.

My losses have been:
Wk1 - 5.5
Wk2 - 2.5
Wk3 - 1.5
Wk4 - 0.0
Wk5 - 3.0

I'm not holding out much hope for Wk6 Hmm

I am losing weight vvvveeeerrrryyyyyyyyy slowly but I am not very strict! I lost 5lbs pretty quickly and pretty much haven't gone above that weight since then. But I am struggling to hit new lows although my weekly average is decreasing - so I spend longer at a lower weight each week.

I have not much on over the next two weeks so that will hopefully help the downward movement.

DH is now fully on board and very good at doing dinner without a big carb load when he is tasked with cooking. I had a big carb blow out over the weekend and TBH I didn't really enjoy it that much. So that's been helpful in making me think I am pretty happy to eat this way most of the time with expcetions when it's something good and actually worth it!

I just bought some ground flaxseed at VAST expense from the health food shop, but hopefully it will revolutionise my breakfasts. I have a bag of ground almonds knocking about, so I'll try the pancakes too.

A good day today, no cheating. I had a salad for lunch - raw spinach, cubes of cheese, salami and a couple of cherry toms. Then we have some leftover bolognaise for this evening, with some garlic courgettes.

supersal I've always pan-fried the goujons (quite a hot pan and a bit of oil so the coating doesn't all stick/come of (hot pan helps with that too), but baking on baking parchment should totally work, I might try that next time.

systemsaddict that is really interesting and very helpful, have ordered the newer version and will give it a read. I feel I could make long-term changes (headstuff as much as anything), with a reward meal system.

Sal - have you got a little stash of low-carb snacks for those cakey moments? I've found filling the fridge with nice cheese, mini salamis and so on has been a huge help, as I can just pick at those. I always think it's a "sweet" craving, but actually something like a wedge of brie takes it away.

The random weight-loss is weird, isn't it? I was slow at losing weight, taking about 5 months to lose a total of about 18lbs. It seemed to tick along quite slowly and steadily, then suddenly, for no obvious reason - whoosh - 4lbs in a week, and my clothes were too loose all of a sudden.

I have to say, I'm amazed at those of you losing half a stone in a week! It makes me realise I wasn't quite as rigorous as I could have been, but I can't complain, I got where I wanted to be eventually.

Hello new thread!

I have been super, super strict since I climbed back on the wagon. Doing my three day thing of lean protein only and minimum carbs. Day 3 is tomorrow, and I'll be glad to put some more salad/green stuff on my plate.

I will be weighing in next on Thursday. I'm hoping that I will not be more than the last time I weighed.

Weekends are definitely the worst time for me as well. And this weekend is not going to be easy - I'm out to dinner on Friday, then DH and I are going out for Valentine's Day.

Morning all...ended up having salmon and stirfried veg for tea last night as DD ate half the prawns i was planning to use! Going well this week I feel well but I was considering going for a run today and my legs don't feel as though I would have much stamina iykwim? I think I might leave proper exercise til I start plateauing...

Today:
B: Ham and cream cheese
L: Prawn cocktail and lettuce
D: Chicken chasseur (nostalgic!) with courgettes (or cabbage if I get to the shop)

BIWI that sounds hardcore...I don't think I would manage to stick to lean protein only for three days! Hope it gives you the weigh in you want.

Morning!

It is hardcore, FF, but was very necessary to 'undo' the bad behaviour of the weekend.

And I did venture on to the scales this morning, although I still have another day to do, and I was really pleased (and massively relieved) to find that I have dropped 3lbs, and I'm now weighing in at 10.8.

I've been plotting my weight since I started, and have given myself a target of 2lbs per week, so I'm absolutely on target.

I will carry on for today and then from tomorrow will re-introduce carbs. My challenge is going to be coping with two dinners in restaurants! However, it's always when I'm eating out that I appreciate how much easier it is to manage to low carb than count calories.

Good morning everyone!

FINALLY some downward movement on the scales this morning. I can totally see why daily weighing isn't recommended as knowing I'd been two pounds lighter midweek did take the shine off my last 'official' weigh-in, but it has given me a big boost to see the lower number this AM.

Plan for today is to make a giant pot of broccoli and stilton soup - does anyone know if I would do better to use leek or celeriac in place of the potato?

Found DS2 (4) trying to pee on one of my ketostix this morning(!!!), so have moved them to a higher shelf in the bathroom.

10 9.75 this morning so hovering about the same. Appetite is not great at the moment - haven't managed to have breakfast which is bad. I have finally lost my carb bloat which is nice!

Would be nice to actually lose these 3 lbs rather than losing and gaining them back again! But pah, I'll get there.

chicken parmasan crust - sounds fab, deffo going to give that a go.

i am at the moment addicted to quesedillas.

just had 2 for lunch ( ok early lunch)

ive had them every day for three days.

happy with my weight today for a mid week weigh in.

i think this weekend will be easier as i've convinced dh that we should stay in this weekend to save some money.

so yes it will be me on facebook pissed up on vodka friday night!

It's just not happening for me this week. I had had 10 biscuits yesterday evening Blush

I wasn't even hungry...more bored and pissed off. I felt very sluggish and sleepy afterwards.

Sharkadder - per 100g, leeks are 2.9g of carbs and celeriac is 2.3g.

However, leeks are a lot less dense than celeriac, so you can use 'more' IYSWIM!

Celeriac will give you more of a similar texture to potato, although not quite the same.

Bought the IPD recipe book - looks good.

Had a cobb salad for lunch - never really got the point of them - they look like someone shoved the entire contents of the fridge in a bowl. But was the most protein filled ready made salad in the shop - had egg, avocado, chicken and bacon in it.

Dinner tonight is goose leftovers from Christmas - will prob make a big hot salad - going to do a version of this duck salad Yum yum

Hi all,

New thread confused me a bit! I have been away from the thread and off the wagon for a couple of days (not even glasses, but bottles of cava, some chocs, oatcakes, a mini danish and a pudding) and nowhere near enough water. Surprisingly, I have still stayed off wheat and caffeine.

The generally deteriorating situation in work (bullying) has reached crisis proportions, and I am currently having to work from home to avoid my boss.

Today is a new day, and I have stuck to LC so far today. Have to get back on track, although it is hard when there has been no loss for the last 3 weeks. Off to go and drink some water.

Made it with celeriac because I thought that might be a bit more 'neutral' tasting. soup tastes fine so calling that a win.

Big shock (after I'd made it!), at the carb count of my veg stock powder - must be more careful with it in future.

Sharkadder - celeriac will be nice in a soup - good texture when pureed. And you'll lose a few pounds just peeling the bastard.

BIWI - I have a "restaurant-heavy" few days coming up too, as it's my birthday next week. I have to say, I tend to relax my rules when faced with a restaurant menu; I try to choose sensibly but if there's a potato on my plate I wouldn't like to waste it!!

I found myself unexpectedly at home for lunch today, so I had a go at a flax-seed pancake/muffin/whatever. I didn't have one of those american cup measures you all refer to, so I guess-timated - using 3 heaped dessert-spoons (about 30g) of ground flax-seed, one egg, 1/2 tsp baking powder and a little melted butter. I also shoved in a little grated cheddar, salt and pepper for good measure.

I dolloped the mixture in a frying pan with some butter, observing it looked rather like a giant brown cowpat. It puffed up quite alarmingly too, but, do you know what? It was delicious! A bit like wholemeal eggy bread.

I'll try the almond version later; someone mentioned pre-preparing the dry mix for quick breakfasts, which seems like a great time-saver.
