Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

Rigth i now have to decide on a target weight. How do you guys go about that? Given that i've never actually dieted for more than a week before this, the issue has never arisen! I am still not quie into the normal bmimrange (am about 2 lbs away). And i don't really want too lose that much more weight. If i got to 9 7, that would be amazing, i think. But how did you guys work it out?

i very much think it depends on your frame and height - and at one point i did get down to eight and a half - but i looked gaunt.

BIWI - I've used xylitol in a few things, not cakes specifically, but it says on the pack it's OK.

ggirl - various methods for cauli rice - I just blitz raw cauli into crumbs in a food processor, then saute in butter, salt & pepper until it softens (8-10 mins). Or you can steam it or microwave, but I like the butter!!

pinkbraces - have a leaf through some of the low-carb threads for recipe ideas, or pick up a book - I like the India & Neris Pig to Twig one, because it's easy to follow. I just started by giving up spuds, rice, bread, sugar etc. and upping my intake of protein, and it evolved from there.

Sal - look after yourself. Sending you a virtual cream cake...

Custy - you never know, you might be "the one" they're looking for. Who says the next candidate wasn't a total loser? Positive thoughts, girl!

Wow! Congrats custy!! Well done. Ya boo sucks to the internal candidate!

I am only 5 3 but can't really see 9st being a realistic target. Well we shall see. I am going to keep at it and see how it goes into the spring/summer. I am not finding it particularly difficult at the moment so no reason to change the way i eat.
