Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

biwi - I've tried the supplement route. None of them worked well for long. GP tells me that I will only be on HRT for a short period of time so the amount of 'unnatural' hormones I take won't be much more than I would have if I had started meno at the same time as most women. I'm afraid I just can't take it any more - I am sitting at work bathed in sweat, I didn't sleep last night because I spent my entire time throwing the duvet off because I was too hot and then pulling it back on because I was too cold. I am knackered, and a total wreck. I totally appreciate why you would want to avoid it though Sad So sorry about your mum x

This was nice last night.

Chicken breast cut into chunks
Sainsburys Black olive paste mixed with a Taste the Difference pesto to coat the pieces. Tiny bit of tabasco.
Cook in olive oil.
Serve over salad leaves, spring onion and celery.

I reckon the carb count of the pesto and olives was about 10g per 100g and I used about 20g.

Hi all,

Yesterday's dinner was chicken breast, celeriac dauphinoise and sauteed cabbage. But DH came home with a bag of Percy Pigs (how could he?), so my good work was undone in a matter of seconds.

There's something about jelly-type sweets, once I start I can't stop until I've wolfed the packet. I must investigate a low-carb version (I have some very nice diabetic creamy hard caramels in my desk drawer that I dip into every now and then, and they're lush).

I'm currently at my desk eating yet another mackerel salad, but I haven't got much of an appetite at the moment, as I'm still fuming after a run-in with a rude cow of an accounts clerk who doesn't like me. Angry And breathe.......

lost 1lb today thats 3 this week am thinking the jogging is helping muchly.

today didn't jog so much as walked into town and back - jogged a small amount.

i have an interview for a job tomorrow eeeeeeeeeek!
bought myself some new trousers in town and literally squeezed into a size eight - but it was at dorothy perkins and i always called that my fat shop - cos when i was fat i could fit into their 16s and i was really an eighteen.

so wish me luck and if you believe in god say a prayer for me cos i really need this job now.

oh and its sausage for tea - don't know in what guise yet

no nodders, i drink caffeinated during the day, but i drink so much coffee its disgusting, so i switch to half caf decaf in the evening - i literally mix half caffeinated and half decaf

Thanks custy i can't do no coffee atm maybe thats where I have given up on this in the past I find that harder than the food!I am on day 2 of no carbs and already jeans looser! Only weigh once a week though otherwise i become obsessed

I've just bought some Xylitol (instead of powdered Splenda). Has anyone tried using this in baking? I have a fabulous biscuit recipe, which is essentially little meringues, which if they worked would turn out to be less than 0.5g carbs each!

Everything I've read about Xylitol suggests you can just substitute it for sugar, but I want to be sure before I waste all the other ingredients.
