Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

Not sure what to have for dinner; hmm, am off to acupuncture this evening so will have to be a quick one. Might go for eggs as well. Have bacon, mozzerella and tomatoes so would be quite a nice mix.

How do you do your celeriac chips - I parboiled mine and then roasted them but they were a bit soggy. I have another massive on left. However, top tip - DO NOT PEEL! I cut the bugger in half right down the middle then just cut the skin bit off as I went along. Probably wasteful but saved my wrists from hours of painful peeling and it's not like they are expensive!

Hey all Smile

Im currently not very happy with myself. Today I was on day 3 of being back on the wagon, doing well and 9st. I did the shred dvd after the school run and was feeling pleased.

Then teatime comes, I had mine, then finished off the kids chips Sad Dont even know why I did it - I knew Id feel crapola afterwards - angry with myself and stomach cramps, but had them anyway. How stupid.

So now I'll be back to square one again and have to spend the next couple of days getting back to where I was this morning.

Im feeling shitty now. Why the hell do I do it?

Hello everyone,

Haven't posted for ages, but still plodding on. I've now lost a whole stone Grin and people are starting to notice, which is great! Got another 2 to go to get down to my 10stone target but feeling really positive. I'm halfway through Couch 2 5K as well which is probably helping.

Made almond pancakes this morning, which made me late for work! Really liked them so could be a change from my regular cheesy scrambled eggs! I also bought a tub of Atkins shake for when i don't have time to make anything.

Got chicken satay made by DH last night for lunch today, it definitely tasted a bit sweet last night but didn't have the heart to question DH when he'd made it especially for me!

Custy, love your blog, only got around to reading it yesterday!

Yay!! So relieved!! DS1 got into his first choice school, which was a major long shot - we are well out of catchment. Chuffed to bits, and somewhat amazed.

I spent so much time this evening fretting, texting, phoning and throwing things at the PC that I completely forgot to have dinner - I think we can call that another day of low-carb success!

Long time no see, LivinginOz, sounds like you're doing brilliantly. Couch 2 5k is brilliant, don't you think? Makes runners out of complete potatoes like me!

Still plodding on here, although haven't had the nerve to get back on the scales yet Blush.

I tried making celeriac dauphinoise yesterday, and added some leeks. Whilst it tasted nice, it made it too liquidy, so the celeriac over-cooked and went a bit too mushy. Would probably have to be made with less cream and/or double instead of single cream.

But it was very nice as a bubble and squeak alternative for breakfast this morning, with a couple of rashers of bacon!

We got our 1st choice too so am feeling totally fab. Was feeling soooooo worried, legs like jelly etc. Now, on cloud 9!!!

Will prob have a champagne celebration on the weekend but will remain resolutely lo-carb Grin

People are starting to notice the weight loss now, which is a great boost. Grin

Moving back down this morning by a lb and a half which is good. Might give the celeriac chips another go - thanks for the tips.

I have a raging thirst on me today - have already had about a litre of water. I just can't get rid of the dry feeling at the back of my throat. I hope I am not coming down with something.

Oz - wow, that's fantastic - really well done.

No one other than DH has noticed that I have lost weight. Am not too bothered really.

Dil - put it in a box. It's done, nothing you can do about it and by dwelling on it you are more likely to slip again. New day, new focus. Be strong!

Thankyou FreeButtonBee - Im back on track this morning, did the shred an hour ago. Im going to treat myself to something lovely (dont know what yet, not food obv Grin ) when I hit my target weight. Plus kickboxing tonight so should help.

well i got amazinngly drunk playing poker and 'i have never...' with the twins and a couple of their friends at home.

i had huge hangover and have just got dressed! stuck to the diet though and lost 1 lb. i am still a pound up on last fridays weight so hopefully by this friday i will have lost another 1lb - so averaging at 1lb a week with the ups and downs. i dont know if that makes sense - am still a bit fuzzy.

Yes. Low GI is very confusing - I found it hard to stick to because there was no logic to it. At least with this WoE, you just look at the carbs number on the back of the packet.

10 6.25 this morning - which back close to my end of week weight of 10 5 from last week. Yay! Carnage weekend seems to have no done too much long lasting damage.

I drank about 300 pints of water yesterday though which must have helped. Dinner was home made burgers with salad, cheese and coleslaw. Also had 6 sq of G&B.

Feeling a bit shakey and achey today and didn't sleep the best but am drgugged up this morning on all sorts in a bid to beat this cold.

I found low GI confusing because there is no strict list of what you can and can't have. LC means I can't eat certain things and it helps me get into the mindset. If there isn't a strict guideline for me, its a short slippery slope to blowing my diet!

Saying that, I weighed in this morning and I'm 2lbs back up! I have been really good, except one flat white coffee yesterday! Grrr! That serves me right for weighing every day!

Oz - spreadsheets and averaging are the way forward. I even have a chart. Someone on the last thread inspired me.

It really helps stop me getting demotivated and fretting about the odd gain. I weigh daily and record daily and work out my average weight per week.
