Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

Had Nigella's Thai Crumbled Beef again last night; it's becoming quite a favourite of ours.

I'm currently half way through my lunch which is salad and some egg mayo - I was making some of DS1's packed lunch and fancied some myself.

Sal - nothing wrong with a prawn salad! I bought some prawns yesterday because I spotted a nice recipe for Spanish Egg and Prawns on the Tesco website - I'll give it a try and report back.

I would
like to join, if that's ok.

I'm actually doing Atkins, well my variation of it.

I try and eat no carbs, or very very less carbs.

I have lost a stone since I started in January but it is very hard sticking to it and in the weekends I slip as I'm always going out.

Even though I do go out I still seem to keep on losing every week, even if it is little.

I'm also doing the shred DVD, about once a week, as I don't have anytime at all to do it.

Is anyone else doing the shred DVD as well?

Welcome aluvss!

I think I would struggle with v low carb but interested to hear what you eat. I am greedy and need variety to stop me getting bored and reaching for the sweeties and bread.

I did about a week of shred - it was v good but have fallen off the shred-wagon. Have you seen the shred thread?

lost 1lb this am so am same as last fridays weight - but on thursday - so hopefully tomorrow will have lost 1 lb this week.

kand i have two pieces of birthday cake - awaiting me for....BREAKFAST tomorrow!

been hard this week what with birthdays and chocolate cake staring at me everytime i reach for a leek or pepper

on the upside, i found a job right up my street and so have applied, first one in bloody ages

Custy - I have DS2's birthday on Saturday! So managed to avoid the temptation of DS1's cake on Monday but have to go through it all again on Saturday!

Not going so well here. Food is OK, but I can tell from my clothes that I'm not shifting the weight. Mainly because I haven't managed to knock the white wine on the head. I seem to be able to manage Monday and Tuesday OK and then it all falls apart. I'm a bit worried about it, tbh.

But I have also realised that my portions probably need addressing - it's great knowing that you should eat breakfast, and that you can snack on cheese or nuts, but I'm eating too much. It was brought home to me today by DH, who is working from home. Whereas I was preparing my lunch of celeriac dauphinoise, salad (with dressing) and grilled peppers, also in a dressing - he just had toast.

I'm wondering if a spot of calorie counting might not be a bad thing, just to get me used to consuming less food!

biwi - is it not about counting carbs?

i set myself 20 carbs a day.

so much like counting calories or doing ww points - i have a limit

so forinstance, as gorgous as the dauphinois is - depending on what you put in it iirc, you can have a decent slice - but no more - not if you want to enjoy another meal in the day

in a glass of wine there is an average depending on the wine of 3.5g carbs and if you eat a lot of veg it can easily mount up can't it - anyway - im preaching to the converted here, cos you know what your doing - good luck with the birthday xx

How did you make them, ilove?

I have just made celeriac mash, which was also lovely:

Peel and chop celeriac, and boil until soft
Mash, with a good knob of butter, salt and pepper
Add a handful (or two - to taste) of grated, mature cheddar
Fry a bunch of spring onions, chopped and then stir into the mash.
Add a good dollop of thick, natural yoghurt (I used Total full fat)

Making the butter chicken again - have managed not to burn the onions this time which is an improvement. Think it might be a little under spiced but very tasty nonetheless. Think this might be my longed for basic curry recipe v good!!

Peeled, chopped bastard celeriac then put in a roasting tin, sprayed with olive oil spray and threw them in teh oven and promptly forgot about them watched them carefully.

It tastes more like mash with the cheese in it - on its own, it's a bit watery/thin, even with butter or cream added.

Celeriacs aren't in season here until April and I can't get them anywhere!! Angry

Had almond pancakes this morning with bluberries - mmm! Lunch is ham and cheese salad. God knows what we'll have tonight - going to the Manly food markets Hmm They usually have a Thai stand so I can have a couple of satay sticks!

Celeriac is also nice mashed with a bit of carrot, creme fraiche and garlic. It's one of my stepmum's signature veggie dishes. Or is that a bit carby?

what about mashed swede with loads of butter and pepper? Less carby than carrot, but a more subtle flavour than celeriac. Probably not for induction, but after.

But I can see a difference in the mirror and I can get my favourite jeans on - they cut off circulation to my legs and look dreadful but at least I can get them done up! I am using them as my benchmark I think.

May I recommend my latest experiment. It was very nice.

Two large chicken breasts, cut into strips.
Make a marinade with a few tsps of lime juice, plenty of good olive oil, some garlic, salt, pepper and chillies.
Pour over the chicken and make sure it's coating all of it.
Put in fridge for an hour. Pour the lot into a hot pan (add more oil if you wish).
Cook until it;s started to go brown and a little crispy at the edges.

We ate it with a green salad and some mayo but it would go with anything.

FreeButtonBee, this is my daily menu:
B - 2Eggs, 2glasses of water, and Tea
L - 35g Tuna with a tbs of Mayo, 2 glasses of water
Snack - 2 Scrambled Egg (if bothered)
D - tuna Patties (3/4 can of tuna with 1/2 onion chopped mixed with an egg and curry powder and fried in a little oil)

I like that this version is just simple and I don't need variety, I prefer to eat like this, as I don't have time to cook different types of food for me and then my husband and then something else for my daughter.

I try to stick to this during the week, but the weekend is bad for me at the moment. I can't seem to stick to the diet during the weekend.

At the start of the week my weight was 64.1Kg, I'll let you know what happens when I weigh myself again on the coming Monday.

Stayed the same this morning. I don't mind too much but that's because I am getting plenty of sleep so feel vaguely human and relatively perky.

Had two glasses red wine last night which was nice. Going to aim to have no booze tonight and get another early night. Hair cut tomorrow morning - I hate going to the hairdressers with a hangover - nothing worse than staring at your own bloated face for 2 hours...

Aluvss - wow - that is hardcore - I couldn't survive without veg. Are you taking a good multivitamin and Vit C? TBH that diet looks a bit extreme for me.

I have done something like that as a weight loss boost but never for more than 3 days. I'd struggle long-term I think.

Hmm... re sleep! I am sleeping really badly atm. Can't get off for ages and then wake up for a wee and can't get off again! Feeling quite dreadful TBH. I am wondering if that doesn't help with weight loss.
