Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

Mucho red wine tonight but food was good.

Pork rillettes with pickled cucumber then saddle of lamb with celeriac dauphiniose!!! Was nice; seemed to be made with stock which was intresting and a bit less rich.

Then small choc pot topped with single cream.

So for dinner out, not a bad deal. And alk for £35!

on a good day I can just about get past 2l of water.

How is everyone else doing on the water?

Feel really fat today, had a few squares bar of 85% dark choc to cheer me up last night but now feel like i have gained several pounds Blush

Scales reflect that this morning - 10 8!

Back on thw ater as feeling v dehydrated.

Had smoked salmon and lemon juice and black pepper for breakfast. Lunch will be salad and fridge leftovers.

Dinner - i am thinking curry of some sort as i have shedloads of veg in the fridge to use up.

Any ideas what to do with a butternut squash? I normally do rissoto which is obv off limits.

Butter nut squash - cut it into large cubes (unpeeled) and roast it in olive oil with garlic. Lovely.

Low-carb 'potato' cakes. Break two eggs into a bowl, mix in approx 80g ground almonds and some good strong cheese. SHallow fry with bacon for breakfast. Just eaten some.

Frazzled I am the same as you so is Hubby! We are stumped. I lost 13lbs in the first two weeks, hubby lost 18lbs and neither of us has moved for 4 weeks now. I am not being as good as hubby as am having wine a couple of nights a week but I am still in ketosis. Water I have not been great this week but usually manage over 2 ltrs a day - hubby can have up to 4 lts some days. Although we are not supposed to count calories I have been tracking them as well and we are between 1000 and 1400 calories a day, have the odd blip and go up to about 1700 or 1800 but on the whole we are sticking to it. Both of us are getting really despondent.

Have just spied this thread as have just started a v low carb plan (Paleo diet). I have grain/gluten intolerances so this seemed the best way to go.

Would love to have a place to chat about it/get inspiration/have a moan Hmm

Have a significant amount of weight to lose after yo-yoing for years.

so, i will be over my usual daily carb intake but still under 30 carbs for the day me thinks

i just can't face anymore fucking meat!

I love your "fucking meat" comment - I love meat but sometimes find it quite hard to get that much down me Grin and I must admit to being a bit bleurgh about eggs too.

I will let you have any recipes I try. At the moment I am kind of just missing the rice/potatoes/pasta part of dinner off my plate but giving DH and DS the full ration. Seems to be working but it was unusual eating stew with a spoon and no polenta/potatoes Grin.

I am off to have a look at your blog.

I have just had fish pie which I cooked on Thursday and it is bloody lovely

White fish - I used cod
Salmon
Prawns

Poach and then flake up and mix together, made a sauce with a tiny bit of lacto free milk, some fresh tarragon leaves and some double cream (I also added a handful of grated cheese) boil it up so it thickens, pour over the fish, cover in mashed celeariac and bung in oven until celearic browns a bit.

got my yeariod last week - i only have a couple ayear - don't know why, another thread, so was proper hard last week and didn't understand why i was almost in tears for no reason.

sh peeled my celeric and chopped it and its ready for tea - he's a love pot....no wait, he's just crashed a box of magnum ice cream - FUCKER!

Keeping with the programme today. Lunch was goats cheese with tomato and rocket with a big dollop of hummus and a few olives.

Keeping with the greek theme, am makng the feta and aubergine bake from IPD but going to bulk it up with a layer of lamb mince at the bottom.

Need to drink more water though...

no i haven't done a soup yet - must do that next week.

i am going to try and make some low carb ice cream too - i'll let you know how that goes - sometime next week.

i hae just made celeriac chips in three flavours - chili, garlic and herb and curry

just tasted the curry for the first time - and it IS LIKE HAVING chips and curry!

i swear i can't get over celeriac chips

I wanted to ask, if you cheat and eat a piece of toast or something, does that then put you out of ketosis? I know it takes about 2 days to get into ketosis, so in effect, the piece of toast has cost you 2 days of burning fat? Confused

LOL at yeariods! I have quarterlies these days.

Been good. No appetite which is bloody amazing for me. Big breakfast at about 11.30am and nothing since. I think it's partly to do with all the protein and fat and partly because I just don't much fancy meat so can do without. It's eye-opening to realise how much of 'hunger' is to do with wanting to eat something lovely and not any real need. Mouth hunger not stomach hunger.

But I am very much enjoying my big glass of cava atm.

So we made:
Chocolate truffles
Choux buns and eclairs
Meringues
Genoese sponge
Pasticcera cream
Lemon tart
Pear and Amaretto flan
and four types of Italian biscuits:
Baci di Dama
Brutti ma Buoni (hazelnut)
Zaleti (vanilla and orange polenta)
Pistachio Cantuccini

And we had pasta for lunch, so I'm not really sure there's a big enough box for me at the moment!

It was great though. The Genoese sponge was one of the nicest cakes I've ever made/eaten, so will definitely make it on to my (high carb) repertoire.
