Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

FreeButtonBee - am following a paleo plan which involves eating like our ancestors did 40,000 years ago ... Hmm ... or at least eating in the way they ate BEFORE farming and agriculture took over and the cheap grains were added to our diet to bulk it out in the cheapest way possible.

It suggests that our genes have not undergone a major evolution in order to successfully deal with grains and the like so we have difficulty with them. It also states that legumes have a toxicity to them that enables them to avoid being eaten and it is these toxins that causes problems for us when we eat them.

Tbh, I have gluten and grain intolerance (a problem I have successfully avoided dealing with for some years Hmm) so giving those up are having fab results. I have also stopped legumes which has seriously reduced the bloating Grin.

ladyoftheflowers, you should look at it this way - you give yourself a carb target for the day to enable you to remain in ketosis - if you go beyond that - you're screwed for a couple of days until you get back into it

you see - THAT is the reason the diet works for me, its not like you can say 'oh a little bit of toast is ok' or ' just one bowl of cereal won't harm'

becuase it will - you have to stick with it properly to get any results - you an't fuck about!

don't get disheartened though, that's why we're all here, to support each other.

i had a brainwave... crisps.

so i looked it up on google, and yes, you an do crisps.

supersal - I eat meat, veggies (not potatoes, parsnips etc), fruit (mainly berries, melon and citrus), some nuts (not hazlenuts as have mild allergy to them and not cashews as they are never raw - they have to be processed in order to be edible).

I have very little dairy - the odd bit of cream and a small amount of cheese (which is a pity as I could eat my own bodyweight in cheese Grin). I don't like eggs too much but try to get a few down.

I think I may try custardo's celeriac chips/crisps - they sound lovely.

So the mousaka was lovely; recommended. It's basically the one fromthe ipd diet book.

Cooked some lamb mince with onion and garlic, added oregano, tomato puree, cinnamon and a few dead looking tomatoes. Added a bit of water and let it cook down.

Sliced an aubergine and dry-cooked it into the oven for 10 mins to dry it out.

Mix 100g feta with some double cream and two eggs and add some black pepper and nutmeg.

Put the mince in the bottom of an oven proof dish, top with the aubergine slices and then the cream/cheese mix.

Oven at 180 for 30-40 mins.

I served with spinach. V good, will have that again.

celeriac crisps - well google tells me that you slice celeriac with a mandolin

i have a cheese grater - so will figure something out Grin

then bung in hot oil and fry for 4 minutes or until golden brown

i can't see it taking 4 minutes in hot oil - but i'll let you know

then sprinkle with salt

or i dsuppose anything

Must remember to buy a celeriac this week. I thought as well as the chips I might try the dauphinoise recipe with some sliced leeks as well.

a downward movement this morning to 10 7.25. Which is good.

Feeling a bit constipated so plain yog and 3 prunes for breakfast.

Made butternut squash soup in the end - roasted the squash for an hour, blitzed with some chicken stock. Will serve with either goats cheese or fried chorizo pieces for lunch.

Dinner is lovely butchers sausgaes, broccoli and mushrooms. Still trying to get through the veg mountain.

Need to make some good progress this week as am in Edinburgh next weekend for the rugby which will be a disaster.

I can't afford to lose 2 days fat burning! Hmm

I am 2lbs down so must be doing it right.

right, i just made the celeriac crisps.

they were actually pretty lovely yayayayayayayay

arseache to make though! dh grated his knuckles - ouch

also made the ice cream, only i have devinci syrup from lcmegastore - so instead of the 12 tsp of splenda i put some banana syrup in

anyway its been in the freezer for an hour and its still like water - so that might not go so well will let you know

also, for the icecream you just have to use egg yolk, so with the egg white i tried to make meringue, only i fucked it up

anyone got a surefire meringue recipe for a dunce?

ps. i have made them before ages ago and they turned out fine, no idea what i did wrong

Congratulations to all those who are seeing the lbs drop off.

I really want some celariac crisps! Made a lovely blue cheese dip with mayo and cream earlier. Had it with some cucumber sticks but I really want crisps and dip now!

Got to stick with the water drinking. Noticed my rings are alternating between falling off and getting stuck so pressume its water retention?

Not sure about the meringue, how did the ice cream turn out?

we couldn't wait any longer and ate semi frozen ice cream.

it was very creamy. and a bit sickly for my taste, but dh said it was fine.

i have another lot in the freezer, so i will see if the properly frozen stuff is ok tomorrow

ice cream recipe

5 egg yolks
280ml Double Cream
3 teaspoons of vanilla extract (sugar free)
24 teaspoons of Splenda
1/2 pint of water

however i used 1/4 pint of davinci banana syrup sugar free instead of spenda and 1/4 pint of water

Blend the eggs, vanilla, splenda and water together

In a separate bowl whip up the cream until thick

Fold yolk mixture into cream trying to retain the consistency

Pour into a tub and freeze for 2-3 hours

Low carb ice cream - Done.

Custy - the icecream sounds interesting. I am beginning to really miss pasta and sweet things. I can sort of survive Mon-Fri on more 'austerity' rations but Sunday without crumble and custard is starting to hurt. Hmm, will have to get more creative. It's not like I can't eat well; I've just having a patch of concentrating on what I can't have.

10 7.25 yesterday and 10 7.75 this morning - still a bit slow in transit so another dose of prunes this morning!

That is another joint lowest Monday weight which shows that this is working for me. And my weekly average is definitely moving lower and lower. I just need to keep the faith and crucially not get bored.

I am going to start back at Pilates; have found a new class so I am really looking forward to that.

Tell you what, though, I have definitely lost internal fat. The belt on my dress is about 3 notches looser (small nothces!) and still a bit loose. I seem to have suddenly rediscovered a proper hourglass waist despite still having quite a lot of surface fat on my tummy. Amazing. Hopefully my internal organs are breathing a bit more easily these days.

I bought a new waist belt at the weekend to celebrate the return of the waist!
