Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

Right, food diary for today:

Breakfast - bacon and a few cherry toms
Lunch - mixed salad with feta cheese and ham with homemade vinaigrette
Snacks - chicken leg and a bit of cheddar.
Drinks - coffee and tea with a drop of milk and lots of water.
Dinner - gawd knows Hmm I am going to my parents house and they tend to get a bit sniffy if I don't want to eat anything and everything. So I shall have to employ great tact and diplomacy and negotiate my way round the spuds and pud.

Orm, my MIL is a bit like that - she watches evrything you (don't) put on your plate. I have found that the best thing is to put a few spuds on my plate, and either cut them up & push them about a bit so I look like I have eaten some, or feed them to the DC.

Asking for seconds is a good excuse not to have pudding.

I'm afraid I'm too embarrassed to post about what I am eating at the mo - too much wine and chocs (I even ate the orange and strawberry quality street which were left over from Christmas - the ones no-one likes). In my defence, I have been having a v crap time in work.

I need to stop though - am going skiing in 4 weeks!

Dinner was 2 scrambled egg, 3 slices of smoked salmon, piece of cheddar and a big massive salad. Yum.

Had 2 more mini meringue things for afternoon snack. Won't be buying anymore of those bc they are too nice. I can't handle having them in the desk drawer. I'll have to find a better snack.

Off to acupuncture for my dodgy reproductive system in a bit and then early to bed with my book.

D: low carb crostini from LCMS and phili
T: parmesan chicken and celeriac chips

so i made th parmesan chicken - it tasted like cheese - just cheese - the cheese was oerwhelming and sickly and dh and i both were disapointed becuase it looked so...well...so.. kfc like!

DD then tried one and proclaimed them 'amazing'
so it wasn't my cooking!

fed up of having just a few c.chips, i went in and 'breaded' the chicken with the almond meal.

it tasted of ....well..not much - but in a not so good way - not almonds anyway.

but i think i can work with that, curry powder or chilli powder or something - i can work with that.

plus the whole thing took me ages and i felt like i was in the kitchen for a long time, so i won't be doing that again.

so all told, haven't had many carbs today - not through bloody trying though!

eSo lunch today was very boring - lamb leg steaks, plain (well, salt and peppered), cooked in the morning 'cos they needed used up, some big salad leaves and a blob of mayo - that was it - and yet another person looked over and went "Wow, your lunch looks fantastic!" I do feel like I'm eating really well at the moment, but it also makes me realise that I can eat this way without doing too much extra or time-consuming cooking.

I get the tasting things better thing too. Cucumber tastes a bit like melon. Even tap water has a flavour - a bit sweet.

I agree with the tap water tasting sweet too- I have been eating this way since last Tuesday and I am staggered at how quickly my sweet tooth has been curbed, no longing for chocolates/sweets/puddings which are my absolute weakness and always have been!

So Thursday today and in 9 days I have lost 7lbs, I am rather delighted. I thought my initial weight loss would be pathetic as I still feel really bloated. (must have been the incident with the rocket fuelJerusalem Artichokes that I will never mention again)

WE are going to a wedding in June, it's going to be a really flash affair and I want to look knock out not blobby Blush

no weight loss this morning, i am hoping for good things tomorrow cos i walked to town and back yesterday and didn't go beyond my carbs.

i think my body is saying 'excersize? wtf is going on'

Not a great week for me. Dinner with DH on Monday was lovely, but too much to drink led to picking at the after dinner truffles Blush.

Then on Tuesday I was running a client workshop all day. I forgot to ask what the food arrangements were - but as we had ordered a buffet for the evening thought there would be something I could eat. How wrong could I have been! The menu was:

pizza slices (great big thick bready slices
vol au vents
spring rolls
samosas

Having already given in and had two sandwiches (1/4s, so equivalent to 1 slice of bread) at lunchtime, I caved in and had a slice of pizza and two samosas. I was so hungry, and we didn't finish until 9.30pm.

Day two was a day-long workshop at the same hotel, so I managed to get them to do me a salad. And we finishe earlier, so I could cook my own evening meal, so that was OK.

But then I opened a bottle of wine, which I'm not supposed to be doing during the week.

And I'm out for dinner with some old colleagues tonight (we get together about every 6 weeks), and it's Chinese.

So all in all, I think I'm not going to bother to weigh this week, and will need to put all this in a box. A bloody great big box!

You know, tap water does take sweet! How weird, I've just noticed as I was reading the new posts.

10 5.75 this morning - so up 3.5lb. Not a big surprise as I thought that yesterday's 2 was a bit punchy! Still under 10 7 for the past 3 days which is great.

B: plain yog
L: maybe fajita salad if I have time to go and get it; otherwise, pret salad (bit bored of those now though - need to find a new quick lunch)
D: hmmm, risky one as my dad is visiting for one night and I might end up taking him out for dinner. If not, then prob bangers and mash with lots of veg (no mash for me).

That article is very interesting FBB. I am feeling that I am thinking much much more clearly now that I am back eating this way; ongoing mild depression has lifted, so I don't feel overwhelmed by everyday life any more, but I am also seeing things much more clearly at work and being able to think things through better. And I am finishing writing projects! (which is kind of important as I'm an academic Grin)

181.0 today - only the second time I've seen that figure this year, first time was after giving blood but this time it's 'real', so I'm happy. Smile

i go for hellmans - FULL FAT remember

we did have a store own mayo in the cupboard and i read the carbs - it was a full fat one too, and i was astounded - still a shitload of sugar in there

t. mince quesedillas proper nice with a bit of the left over parmasan from yesterdays horrific chicken crusten parmesan debacle urgh!

tomorrow - i have decided i want my carb free day, but i am going to try on saturday to be good

Bugger! I went for a run and stopped off in Morrisons on the way back for some bits. Picked up a bottle of lemon and lime flavoured Volvic and knocked most of it back.....before checking and reslising it was 13g of bloody carbohydrate.

Grrrr....I was doing so well
