Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

ok, Sainsbury's delivery not due until tomorrow. What can I make with the following?
Aubergine
mushrooms
mascarpone
feta

Have other bits & pieces, but the ingredients above need used up.

Yum! You could make a sort of aubergine parmigiani using the feta and mascapone in place of the mozzarella. Lots of olive oil and garlic and perhaps a little tinned tomato as well.

Think I may try to adapt Neris & India's Moussaka - Don't have any lamb mince (or in fact any mince) but may substitute with spinach and thin slices of celeriac to bulk up. Will use mascarpone instead of cream.

Yes to parmigiana. It's v good and very filling. To make sauce, I use half a tin tomatoes, seasoned well with olive oil, s&p, garlic and dried oregano and simmered to really thicken it up. That does 2 servings.

Salt your aubergine, then roast on baking tray for 5-10 mins each side (helps dry it out - you can fry instead but too much faff for me) before layering up. Can't see why you couldn't alternate the layers of aubergine with some of mushroom. Maybe cook them quickly first in a bit of oil/butter?

I think parmigiani just means with parmesan, or from Parmesan (assuming there is such a place Grin). Sort of layer cake of auberine, tomato and cheese. Seriously nice.

Food today not too bad

B: plain natural yog
L: big salad with chicken, cheese and salsa. was a bit sweet but I was panicked into it by the server so just pointed at something at random!
D: chorizo, squid and kale - excellent

Snacks: 2 tiny M&S chocolate meringue things.

Lots of water

Just one more hour to get through in the office and then home to collapse on the sofa.

Got through lunch with a rotisserie chicken breast and salad, avoided the skin in case of sugar marinade, MSG etc. Drank lots of water. Just come home to cheese and gherkins, coffee with cream, and now have to decide what to do about coordinating cooking dinner / dealing with exhausted kids Confused

So....meals today:

Breakfast was my usual (greek yogurt with chopped fruit and nuts).

Lunch was raw veggies with some sour cream & chive dip (I had some guacamole too, but it had gone a bit fizzy; I generally ignore sell-by dates but this was about 6 days over Blush).

I felt a bit peckish when I got home, so attacked a wedge of brie.

Dinner will be Nigella's Thai Crumbled Beef again - dh liked it last time. Off to the kitchen I go....

I have created a new low-carb delight! ...... Rockpool cabbage! Tis v nice

Steam some cabbage - sweetheart nOt savoy type and leeks. Need to be sliced into long strips. SteAm very briefly. Put in an oven dish and mix in some chunks of goat cheese, chorizo, mushrooms, olives and a few cherry toms and pour over some olive oil. Bake for about 15mins in a slow oven.

We had it with sausages but it would have been better with something blander like chicken or fish I think

Have just had greek yog (yum!) raspberries and tiny amount of grated dark choc over. Was v nice actually. Felt like dessert without the artery clogging feeling of cream.

I am going to have knock the little treats in the afternoon out (or find something else). Massive hunger pangs at 6pm - barely got around tesco without ripping through the crisps aisle!

freak out this morning - have lost another 4.5 lbs. Down to 10 2.25...

I did actually get off and on the scales again. That's just shy of a stone since New years day. I am fully expecting that to go right back up tomorrow but bloody hell!

Yest was OK, did have a few chocs and a glass of red wine but other that that very low carb day so i'm the same weight this morn. Valentines chocs are finished now and i'm out tonight and am driving not drinking so should be easy to be good Hmm

B- smoked salmon and cream cheese
L- Mackerel and wasabi
D- defrosted leftover IPD butter chicken and spinach
Snacks- cold chicken

yes those celeriac chips are super yummy - so yummy in fact that i may even forfeit my fri night blow out - i do sat too- and make some celeriac chips instead.

this am lost 2 lbs which i was super suprised at becuase i thought i had overdone it yesterday

today for tea, i am going to make some kind of coated chicken with the almond flour and parmasan cheese - and celeriac chips

Will have to try the celeriac chips. I do love wedges and chips and stuff so that's right up my street.

Haven't managed breakfast yet - it will be left over pot of greek yoghurt.

Have training over lunch so will have to pop out and grab a salad to take with me. Will prob be a good old pref chicken salad. I now look like a weirdo because I constantly hunt around in order to find the one with the most chicken in it. They are not all prepared equally!

Dinner tonight is smoked salmon salad - have loads of veg type stuff in the fridge so need to use it up.

FBB - well done on the weigh loss...sooo close to a 9 at the front!

I've been mostly good the last couple of days. I've stuck to no more the 2 of my valentines chocolates a day. I did eat a little bit of naan bread with my dinner yesterday. And a HUGE portion portion of sugar free jelly. But I'm getting more sensible.

3 of the 5.5lb I gained during my week off has gone now, so I'm happy with that.

I have a 3hr meeting over lunch today and they're providing a buffet. The buffet's are amazing, but definitely not LC friendly. Normally I'd pick out the fillings and stuff, but I'll look a right twat doing that around a boardroom table Hmm

Blimey, you're all wasting away. Well done, keep it up.

My halo will be slipping over the next few days, with my birthday and a family get-together planned, but I'm quite relaxed about it.

I am starting to get the "you're getting too thin" comments from friends and family (total rubbish!) so need to demonstrate that I haven't turned into some mad carb-counting obsessive. I shall embrace the birthday cake!

cointreau - I got that all the time. "ooh you musn't lose any more weight" or "I hope you don't mind me saying but I think you are looking a bit too thin, you look ill!" (well yes I do mind actually!)

My mum is a good barometer actually. She always thinks I look thin so when she stops telling me so I know I have to lose some weight!

I have a lot to lose. I need to get down to about 148/9 to be happy but I'd be happy with anything round about 154.

Well I am nowhere near anyone saying that I am too thin. Am 5ft 3 - I am still (just!) overweight by BMI so a way to go til I look too thin!

I am a wee bit annoyed though as I got married last year and was in and around my heaviest weight (almost 11st). I wish I had lost a bit before the wedding as I did feel a bit fat at the time... I didn't want to be one of those people who lost weight for their wedding - how stupid is that! I also had a friend who was getting married at roughly the same time and she was obsessive about losing weight and she really turned me off the idea. I hate being in competition with someone over personal things so I almost deliberately didn't diet. The only person that really cared was me in the end. Pah, stupid!
