L: grapes, 2 plums, sticky rice traybake with butternut, cashews and broccoli
S: handful of pistachios
D: potato and violife feta bake with cherry tomatoes, beetroot and Bombay carrot salad

B. soaked linseeds/dried apricots whole lemon fresh pear and apples/ pear juice\filtered water smoothie
L. Leftover baked butternut squash, onions and garlic with veg. gravy and cabbage. Heated up.
Sn/S spelt toast\yest spread. Bowl of Amisa spelt flakes with almond milk and molasses.

Yesterday

Breakfast: 6 hash browns
Lunch: homemade veg soup with half a bread roll
Dinner: fajitas (Peppers, onions, naked ‘chicken’ with avocado and A few fries

Snack: a third packet of love heart sweets at the cinema

B: crunchy nut granola with soya milk
L: hm leek and potato soup with crusty bread spread with flora salted plant butter
D: mushroom wellington*, roast potatoes/parsnips/butternut/celeriac, sprouts, carrots, broccoli and gravy
S: Japanese rice crackers, bournville chocolate fingers (not sure how many, but for once DH ate more than me 😂)

*from Sainsbury's (plant pioneers) and was a bit disappointing tbh. Tesco did a similar one last year expect it was more like a vegan sausage plait and was lovely. Fingers crossed that appears again soon...

It's a good idea to 'test' the shop bought Xmas vegan subs. Sometimes they're disgusting. I prefer my chestnut loaf which is easy and tasty ,Also freezes well so it can be made before the rush.

The same with the custard. dsis ate mine one year and had no idea she was eating vegan custard!!!! She loved it (normally she sneers at my vegan choices in cafes). Not any more though, since she's been ill.

B. yesterday's smoothie
L. Steamed parsnip\turnip and veg gravy.

Sn\S Pears,figs, dates and mooshed up almonds/dates\lemon juice to be made into little cakes.

@ppeatfruit completely agree. How do you do your chestnut loaf? I'm going to try the lovely looking wellingtons also posted about, and me and DDs love a roast so happy to try and squeeze as many trials as possible in between now and Christmas 🎄😬 DH will suffer them HmmGrin

B: tinned grapefruit, muesli with giant raisins, seeds, raspberries, chopped hazelnuts and soya milk by
L: Pret A Manger falafel meze (falafel, hummus, lots of green leaves, beetroot, some kind of grain salad, cucumber and a tasty dressing). Was nice, if a little challenging to eat with the single wooden fork provided 😂
D: green olives followed by mushroom risotto at cafe rouge. Pudding at home was a hm brownie warmed, and served with ice cream.
S: more Japanese rice crackers...

PartTime Recipe for Chestnut loaf. ; A flexible one as usual, you could place it in the centre of pastry if you wished. Start with chopped small garlic,onion celery and carrot. base cook gently in olive oil and some stock a heavy based saucepan or wide solid frying pan with a top. I use ready cooked whole chopped chestnuts, one tin unsweetened. (depending on how large or otherwise you need it to be) add a cup of breadcrumbs, plenty of the herbs you like, you can add fresh chopped butternut squash or celeriac with the chestnuts and more stock and or red wine. (If you like a smooth texture blend it) (sorry you could blend before adding the chestnut pieces) Then after cooking for 20 mins or so. More chopped garlic and or mustard , horseradish or chilli. Bake in a tin for 30\40 mins or so at 180C .

B.Grapefruit,pear, pumpkin seeds pear juice/filtered water smoothie.
L. Hm. Vegan shepherds pie with blended flageolet beans\carrot garlic,onion filling with mashed parsnip\turnip\ garlic and horseradish topping. I did pick at this it was so delicious Grin
Sn/s. couple of pieces of toast and pnut butter with yeast spread and frothy almond milk/ carob drink

Hello vegans - been awol for a few days because I threw a mattress in the back of my jeep and went camping on my own just for a change of scenery, was getting really cabin fevery. Didn’t cook at all so it was basically a vat of hummus with crisps and red wine most meals but I did treat myself to a beautiful loaf of bread with a new macadamia nut butter (As in its like butter-butter not a nut butter if that makes sense?) so had that on my first day and it was lush. Got back late Wednesday and the family went for ramen and yesterday was a snacking free for all, had some random globe artichokes obviously out of season so tasteless, some kimchi noodles out of the box etc. Terrible eating but delicious.

I’m going to attempt making a “rabbit” stew using jackfruit for DS birthday dinner tomorrow - we’re doing a lord of the rings murder mystery so I’m making a meal fit for a hobbit

B: tinned grapefruit, 2 small slices sourdough toast with peanut butter and kimchi
L: red Thai lentil soup and small sandwich (1 slice of granary, wrapped around squeaky bean 'pastrami', mustard and sliced gherkins. Would have been a full sandwich if DD17 had left more of the pastrami 😂)
D: 2 Richmond sausages, 2 hash browns, spinach, avocado, half a beefsteak tomato, massive portobello mushroom, baked beans, 1 slice granary toast
S: pineapple, grapes, Japanese crackers (damn you big tub from Costco...)

D: tried out a new hearts of palm pasta that was pretty good, sautéed it with broccoli, cabbage, capers, lemon and garlic

I'm a twit I just reread my chestnut loaf recipe and I didn't mention that the tin of chestnuts should be unsweetened PUREE. Depending on the size of your loaf you can use it all or half of it or not use it at all (just blend half of the veg, before adding the chestnut pieces and herbs and extra garlic/mustard.

B. Leftover smoothie
L. My veg. shepherds pie with a grated carrot/onion mustard dressing salad.
S.Sn HM oatie\molasses biscuits. Fruit later.

@ppeatfruit thanks. Are tins of chestnuts generally smaller than a standard tin? Tesco have both purée and whole chestnuts in pouches rather than tins and they're roughly 200g.

S: trek peanut bar, pear, handful of Japanese crackers, crackers and violife cream cheese
Dinner was out in Bournemouth to a plant based restaurant that was lovely. The after dinner coffee was atrocious but the food, service and ambience were all fantastic. We shared tempura vegetables, green olives and oyster mushroom 'shallots' served with 'chorizo' and pea purée to start. Then I had chick'n pad Thai and key lime pie with Italian meringue. The others had bruschetta/seaweed salad, chick'n Caesar salad, battered tofu and chips, chocolate brownie and pumpkin pie and all were thoroughly enjoyed (2 non vegans) Worth the drive from Southampton even though the rain meant that we chose not to walk by the sea as originally planned

PartTime I know that delis sell small tins of puree which would be ideal, they are usually sweetened though. Those packs are good you could use a whole one to chop up and puree the other or half of it. I love chestnut puree sweetened and mixed with dark melted chocolate for a sophisticated dessert type cake for Christmas. With, whipped sweetened silken tofu and vanilla as the cream accompaniment.

That restaurant sounds nice, I wonder how they'll cope with this shut down (if it happens)?

D: quiche, wedges, broccoli, carrots and peas
Lots of snacks - beetroot, dates, tinned peaches, mini jam tarts (leftover pastry from the quiche) and my friend brought some baked goods over too. Lovely thin and chewy almond biscuits drizzled with chocolate and homemade honeycomb which I ate too much of...

Oh and the lots of snacking included 2 crumpets with naturli/marmite and a bowl of crunchy nut granola with soya milk 🙈😂

@ppeatfruit mostly silken tofu. I added a couple of tbsp of gram flour and some milk (probably similar qty) and followed the flavourings from this recipe with an extra tbsp of nooch www.google.co.uk/amp/s/tasty.co/amp/recipe/garden-vegetable-vegan-quiche
I only had onions and cherry tomatoes as that's what I had in, will put more veg/mushrooms in it next time. Am going to freeze a portion as I think it will reheat ok.

Asda vegan wellington - not sure if it’s been mentioned here before - trying out vegan options for Xmas (not all the family ate vegan but like to find things that everyone will enjoy), and it’s good. Basically a huge, mushroomy vegan sausage roll. I’m sure it’s absolutely filthy for you - BUT - if the meat eaters enjoy it it’s a huge success in my book :)

My “rabbit” stew was disaster because I didn’t rinse the jackfruit properly (no idea how or why, I use it often enough and always managed to before) so no matter what I did it tasted of brine. So it was a quick change of plans and thankfully DS loves shepherds pie and mine is pretty good so we had that insteadlast night
