L: grapes, 2 plums, sticky rice traybake with butternut, cashews and broccoli
S: handful of pistachios
D: potato and violife feta bake with cherry tomatoes, beetroot and Bombay carrot salad

Also wondering what pozole soup is...

B: museli with giant raisins, raspberries, seeds and soya milk
L: Thai tofu and veg curry with rice
D: burger, sweet potato fries and salad (Sainsbury's plant burger, 2 follow your heart cheese slices, lettuce, sliced gherkins, jalapeños and Leon burger sauce all in a wholemeal bun 😋)
S: grapes

A Mexican soup made with hominy, usually with chicken but obvs mine wasn’t. Lost of coriander and lime and chilli, v fresh tasting. The one from the shop was pretty good

L: salad with sweet chilli dressing and quorn smokey ham slice, salted popcorn
D: M & S plant burger in a lettuce bun and Salad. Pudding was a vegan a Choc Fudge piece and dark choc rice cake.

Lol I’m not at all - I’m a Brit living in California but surrounded by Mexican people and food and that’s what they call it too I guess 🤷🏻‍♀️ but yeah it’s like giant corn but kind of inflates and goes soft when cooked in the soup

It wouldn't fool an omni that it was made with fish, but it has a fish-y-ness from the nori and caper brine and the mushrooms work for texture.

B/L: tinned grapefruit, avocado on malted sourdough toast, 2 tomatoes
D: 2 wholemeal wraps with falafel, lettuce, hummus and tahini sauce inside. Plus beetroot, cucumber and pepper sticks with more hummus
S: small bowl of crunchy nut granola, some Japanese rice snacks and a magnum

Thanks PartTime I've had nofish and chips, which was interesting with tofu and nori. I can't stand capers or mushrooms done in too much sauce, they go slimy for me Grin

B. gently cooked apple and pumpkin seed with pear and lemon smoothie
L. HM chopped leek,cabbage and white sauce pie. With quinoa crackers.
S. Leftover minestrone. Rye oaties.

Yesterday I had:

B: some walnuts and an alpro greek yogurt before the gym
L: fry up with a Waitrose leek and mushroom banger (that were on special- they're the best), this isn't bacon, beans, tomato and mushrooms
D: roast with Linda McCartney rosemary and jus sausages, thyme and rosemary sweet potatoes, polenta roasties, maple carrots and brussels & cabbage. Probably just practising for Christmas 😍

Today I'm going to have caramelised pineapple on a bed of alpro greek plain yogurt with toasted oats. I saw it on Jess Beautician's YouTube page. Her recipes are fab!

Also really loving Jenn Im (although she's not vegan; often makes vegan dishes) and hoping to be able to make some of her Korean (jiggae I think?) spicy soup which looks delicious!

I’ve seen that pie mentioned before, need to try it!

Yesterday had tagine and cous cous and broccoli followed by cardamom and almond cake for lunch then grazed the rest of the day on a quesadilla, some hummus, leftover tagine etc etc

B. Finished yesterday's smoothie
L . Baked butternut squash with garlic and onions. veg gravy.
Sn. Spelt toast with pnut butter and yeast spread, cup of chicory coffee and hot almond milk|grated nutmeg on top YUM

S. Sprouted oat porridge with molasses and almond milk

It seemed a long day with the clocks going back!

D: curry night - Dahl, new potato and aubergine curry (leftovers from freezer), roasted cauliflower, steamed tenderstem, rice and chapatis
S: Japanese crackers and a few ginger nuts

Also forgot to mention that on Friday I had a few vegan snicker bites which someone lovely at work made for me. Very nice. Think they were this recipe

Yesterday

B: fresh fruit salad and coffee
L: homemade salad with sweet chilli dressing
D: crispy gnocchi with pesto, roast tomatoes with garlic and thyme and a mini corn on the Cob
Treat: you probably know by now that I alway have one! A dark choc rice cake today Smile
