L: grapes, 2 plums, sticky rice traybake with butternut, cashews and broccoli
S: handful of pistachios
D: potato and violife feta bake with cherry tomatoes, beetroot and Bombay carrot salad

Leftover lentil and sausage stew (yesterday’s dinner)
Nandos great imitation chicken burger - not as good as a KFC vegan burger but I enjoyed it and really nice to have another option

Post workout snack because I was starving!: coffee, banana and almond butter smoothie
Had a turmeric latte in the afternoon
D: leftover lasagne and apple crumble

Yesterday was

B: oats soaked in soya milk with raspberries, cherries and seeds
L: cherry tomatoes, beetroot, Dahl/veg curry/rice/mango chutney
D: Thai soup (mostly squash with some carrot and sweet potato) with crusty bread and naturli and a couple of puff pastry fingers brushed with soya milk/nooch before cooking
S salt and vinegar kettle chips, a couple of lazy days millionaires crispy bites

D: peanut Tofu with cauliflower rice

Pudding/treat: choc brownie

I'm on a diet too so all this was within my 1,200 daily allowance and had choc twice!

@Mummyoply beetroot and kale Wellington sounds great. How do you cook the veg for the middle?

Yesterday
L: Richmond sausages, baked beans, hash browns, mushrooms, roasted cherry tomatoes, slice of sourdough toast
D: miso aubergine/tofu/kale traybake with rice and broccoli
S: handful of salted cashews and 3 dates, chipsticks/sensations and chocolate (Tony's chocoloney 51% dark with almonds and sea salt, which was not very dark and lovely)

B. b.t.w. it's always yesterday's (a good memory exercise! for me). I baked some eating apples for an experiment the day before, they were delicious plus a tiny bit of leftover smoothie.
L. Fried Ceps and grated courgette with spinach and onion. Ceps are amazing fat mushrooms that you only get here in autumn when it has rained. We had some in our field last year! I must go and look soon
S. Picked at Ella nut balls, Planet Organic truffles and figs.

It's really good, I roast the veg (beetroot, butternut squash, red onion) with garlic, thyme and sumac. Once roasted - add puy lentils and cooked chestnuts. Make kale pesto then assemble into the puff pasty :-) I make mine like a bit of a sausage roll shape and they freeze really well too. I also put sumac and fresh thyme on top just before cooking - it's really tasty!

B: tinned grapefruit, spiced porridge with soya milk, sultanas and seeds
L: wholemeal bap with tomato nut roast, rose harissa pesto and Mayo. Chipsticks
D: stew made with shroomdog 'chorizo' sausages, carrots, celery, mushrooms and dumplings. Served with peas and broccoli. Pudding was a slice of the tiramisu iced fudge by vegan richa. It was okay, but tasted too much of coconut for my taste

@IJumpedAboardAPirateShip @ppeatfruit I do have this for my Christmas dinner! It's delicious, I don't make it too often to keep it as a special treat! And because it's very high in calories- I have a full one on Christmas Day but only half the rest of the timeGrin

We’re hoping to fly home for Christmas and my brother and his family to join at my parents’ - normally I’m the only vegan but he and his wife have converted this year so I’m def suggesting we do this @Mummyoply

Yesterday we had friends over for lunch and it was massive:
Nibbles: dried olives and rosemary covered nuts, crisps with romanesco dip
Main: shepherds pie and green beans
Pud: Apple upside down cake and vanilla ice cream

I def overate because it was so tasty but then was too full for any tea 😆

@IJumpedAboardAPirateShip I serve it to guests for Christmas dinner and it always goes down well. Even my meat eating husband likes it 😃. Made in advance it can be frozen for a couple of months, freeze before cooking the pastry and defrost before cooking.

B: avocado on wholemeal toast with houmous, squeeze of lemon and smoked paprika, coffee, hob nob
L: small wholemeal wrap with houmous, sweet potato falafel, cucumber, roast red pepper, spinach, chilli sauce and orange juice
D: pasta shells with roast butternut squash, fried sage and pinenuts, garlic and herb cheese (Kinda co) lots of black pepper and a glass of white wine followed by Alpro chocolate dessert and another glass of wine.
S: small bowl of co-op bacon rasher crisps and two coconut macaroons and cup of tea

D: shared dinner out with a friend, artichoke pizza, roast cauliflower and chickpeas in a puttanesca sauce, trumpet mushroom with polenta and capers, bottle of wine between us

Came home and defrosted some mango chunks for our and had a hot toddy

D: chickpea and tofu chowder (was supposed to be jackfruit but realised I totally forgot to buy a tin of jackfruit) was pretty delicious, from the forks over knives magazine this month
