Yesterday
B: usual smoothie
L: green soup and crackers
D: pasta with hm tomato sauce (made by DD14) with lots of from the freezer Mediterranean veg and nooch
S: grapes, last of the unsatisfactory peanut butter flapjack bars, a few spoonfuls of alpro custard that needed eating up or throwing out and then the last 6(!!) pieces of rocky road (which didn't exactly need eating up but once I started, I couldn't stop Blush)

Today
B: usual oats with berries and seeds
L: aubergine, chickpea, tomato, rose harissa traybake with garlic tahini sauce
D: hm leek and potato soup with crusty bread and naturli. Pondering some Ritter marzipan at the moment...

L: follow your heart smoked cheese, vegideli sage and onion slices and sriracha veganaise on a wholemeal roll with homemade lentil and red pepper soup, orange juice, deliciously ella choc brownie with strawberry oatly ice cream and strawberries

@ppeatfruit it’s a brand that I don’t think is available in the U.K. - you guys have beyond now right? It’s basically the same thing but doesn’t have that “beyond meat” taste. I love the beyond sausages but am over their burgers and mince, impossible was much better. I rarely buy subs but it was nice for a change

Def do the courgette and aubergine one @PartTimeDomesticGoddess that’s the one I was raving about. I need to try my pickled mushrooms today!

Thanks @IJumpedAboardAPirateShip. I might have to eat it 2 days in a row as I'm unlikely to get courgette and aubergine past 2 of the household lol

@Hangingover that looks incredible. Do you have a recipe to share? And did you eat it warm or cooled? With or without custard? More detail needed Grin

So you make the the cake from this recipe (ignore the topping and cream bit) then while it's cooking melt together a tablespoon vegan butter, about two tablespoons of brown sugar and a table spoon of apple sauce (it has to be the blended/purree kind not the fancy sort with lumps in so go for a cheap one). Stir it a lot so it doesn't burn and take off stove when it's bubbled, leave to cool for five mins them add a good spoon of the thick fatty cream at the top of a can of coconut milk and stir to combine. When cake is cooling (I set mine on the rack from a grillpan so there was a pan underneath to catch) prick cake all over with a toothpick and smother the sauce over it. Chop into slices and serve warm with a fork. I swear it's like sticky toffee pudding! I bet a dollop of vegan ice cream would be delightful with it.
