L: grapes, 2 plums, sticky rice traybake with butternut, cashews and broccoli
S: handful of pistachios
D: potato and violife feta bake with cherry tomatoes, beetroot and Bombay carrot salad

Welcome @TazMac!

I too find vegan cheese mostly pretty gross, but have found some soft white cheeses I really like. The good stuff does tend to be from expensive 'artisan' brands rather than supermarket stuff unfortunately. My tip is to check ingredients and try those based on nuts or soy; slabs of flavoured coconut oil are usually disappointing!

Yesterday was market and shopping day = many delicious treats.

L: mushroom and vegan feta toastie, Swedish cardamom scroll

S: coconut and oat cookie, Aldi vegan almond/choc icecream

D: tofu rendang with roti bread, lemon slice

Thank you all! I’ve had the coconut cheeses before and that’s what has put me off - coconut and cheese don’t really go together.

I will have a look for some of the more expensive ones, can you buy them in supermarkets?

I skipped the dairy and added some cashews into the pot and simmered them them with everything else before blitzing. As it says in the make it vegan bit at the bottom. I’m sharing it as it was a new discovery last week but is simple to make and tastes very good.

Yes welcome Taz Ref. vegan cheese, the soft cheese is quite easy to make from scratch and if you put enough garlic, chives or spring onions plus herbs you like, I like basil, fresh and dried, in it etc. it's fine.

B. Lemon/figs/apple\linseed smoothie
L. Last of the minestrone with spelt toast
S. Green salad with warmed beetroot, cumin, basil green beans and
tofu yoghurt dressing. Oh and quite a bit of my oat soda bread with olive oil and yeast spread.

B: seeded wholemeal toast with naturli and marmite. orange juice, pain au chocolate (from Aldi) and coffee
L: potato wedges, frys vegan nuggets, peas and tartare sauce
D: udon noodles with tofu, broccoli, cashews and mushrooms in a miso soy dressing with kimchi, spring roll and sweet chilli sauce
S: packet of Lidl own brand monster munch, cup of tea and wagon wheel style chocolate, blueberries. Now about to have s glass of red wine.

Yesterday was
B: pack of 5 Nairn's choc chip oat biscuits and a smoothie (pineapple, mango, banana, soya protein powder, a glug of maple syrup, water)
L: roast cauliflower soup, 2 small slices of Jason's ciabatta sourdough toast and naturli
D: lentil and roast squash lasagne type thing with broccoli. Jam roly poly with custard (vegan used the nadiya one, wasn't blown away by it)
S: tinned grapefruit

Today has been
B: tinned grapefruit, 2 slices of Jason's toast with naturli and peanut butter
L: pea and pesto soup (to use up the leftover pesto from Friday night) with more toasted Jason's and naturli
D: Bosh banana blossom and mushroom Goan curry with rice, naan, broccoli, roasted squash and cauliflower. Sponge and custard.

Over the weekend I've also made Rocky road and some black bean brownies. And I've picked a lot at both over the course of the weekend. The brownies are quite good and reasonably low in calories. You wouldn't know the main ingredient was black beans

I’ve tried black bean brownies and they’re ok but now have done Vegan Richa’s recipe and they’re AMAZING taste just like non vegan ones

It’s too hot here for soup still despite everything in the shops now pumpkin flavoured.

I cooked up a Japanese feast for family lunch after buying a new cookbook: rice, edamame, pumpkin braised in dashi (also homemade) mirin and ginger, tofu patties, teryaki carrots (teryaki made from scratch) and it was all delicious and super filling

If I’m hungry later will prob just have a salad. Am pretty tired and still full from lunch so will see how that goes

Had a gin and tonic, 1/5th of an apple and about 10 grapes for my dinner and frankly didn’t even need that, still stuffed from lunch

Did you make the black bean brownies ijumped ? I've looked at HFW's recipe and wondered ! There's a lot of ingredients to go to waste if it's not nice.! It's like avocado mousse recipes I can't quite persuade myself that they'll be nice. Without tons of sugar, like Aquafaba meringues!

B. Leftover smoothie
L. Oaten soda bread toast\pnut butter with steamed cauli and courgettes, sprinkled with yeast flakes and olive oil.
S. dates,figs hazelnuts.

In the spirit of waste not I made a stock with the leftovers (which I had cooked in the steaming water) from the cauli and today will make a soup with it. I LOVE soup season Grin Oh and I LOVE japanese food too (yours sound very yummy IJumped )

@ppeatfruit I’ve tried a couple of different brownie recipes using black beans, chickpeas, etc and they were all fine but never got the consistency of brownies right - but the recipe Attached is perfect in every way. I quite quite avocado mousse and we’ve made avocado chocolate cookies before too but you have to get the amounts right so the avocado doesn’t overwhelm. I am however very partial to Aquafaba chocolate mousse and served it to omnis who had no idea

Thanks for that IJumped It's very similar to mine! (I use Delia Smith's without the butter and egg of course. But with molasses, linseeds and a mix of rice and spelt flour ).

HFW's is for cake not brownies btw. I do a lot tweaking recipes, tbh sometimes it's successful, not always ! Grin

I would agree that they were ok but didn't really taste like brownies @IJumpedAboardAPirateShip. Will give the vegan richa ones a try though Smile

B: coffee/date/banana/PB/milk smoothie
L: baked sweet potato, broccoli and spiced lentil and mushroom ragu leftover from Saturdays bake
D: Richmond meat free sausages, hash brown, baked beans, mushrooms, beefsteak tomato and spinach. Half a slice of Jason's sourdough toast. Then a jam tart* and custard for pudding

*made by DD17 before she went to work. DH mentioned he'd had one and DD14 had one saved for later so I thought I'd have one. They are a present for her friend and now she's in a strop because I had one too! And they weren't even vegan. Didn't think to check before I had one, but because I'd make them vegan I assumed she would have done. You even have to check in your own house unless you cook everything yourself...

D: a frankly absolutely delicious, umami filled, filling, unctuous and amazing ramen made all from scratch including the dashi from my new vegan Japanese book - it was seriously good. Made enough for lunch tomorrow

S. I was sitting quietly in front of the telly and dh arrives from the shops with 4 bleedin' patisserie type cakes !!!! 2 each, non vegan. I was hungry so I ate them (scraping off the buttercream from the macaroons and the yucky icing from the top of the eclair)) and wished I hadn't , they were horrid weren't worth it either Shock

Hope the link works... I am usually terrible at cooking jackfruit, I've never ever liked it in my life but this jackfruit stew from Pinterest is the absolute best thing I've ever eaten. I'm low-carbon so I had it with cauliflower mash. I kind of did my own thing with measurements so I'm worried I won't be able to make it as nice again.Grin

I bought it on a whim in a shop and genuinely it’s brilliant. We all went to japan last year and loved it so we’re all a bit obsessed, and being in California Japanese food and supermarkets are in abundance

Normally DH makes the noodles from scratch (he mills the flour fresh!) but was under it yesterday so I bought the dried stuff from the Japanese supermarket. I just wasn’t expecting it to be so tasty

Oooh, I'm feel very lazy reading all your lovely recipes, just can't get motivated to spend much time on food at the moment.

This week is Tofu Week after picking up a beautiful big batch of super fresh stuff direct from a supplier near me.

L: crunchy fried tofu cubes with cashews and a Chinese lemon ginger sauce on courgette ribbons - thank you lovely boyfriend for cooking that one for me!

S: 2 satsumas and picked at the roast veg I prepared for tomorrow's lunch

D: macadamia milk, yoghurt and protein powder smoothie

Well DH didn’t finish his leftover lunch of ramen because he smacked all morning so I ended up having ramen for lunch and dinner 😂 also had a banana, almond butter and date smoothie for breakfast (unusual for me but I was so hungry), some hazelnuts as a snack and with my dinner ramen rather randomly had a salad with balsamic dressing as there was a tomato calling my name
