Today has been
L: grapes, 2 plums, sticky rice traybake with butternut, cashews and broccoli
S: handful of pistachios
D: potato and violife feta bake with cherry tomatoes, beetroot and Bombay carrot salad

I didn't. I didn't have much time so I had a sandwich instead. And I'm working the next couple of days...how can i go this long without my dream food?! Ohh melted mexicana how I live thee.

Anyway..
B. Apple and ginger shot
Porridge, prunes, cashews, maple syrup, figs and sunflower seeds.

L. Butternut and ginger soup. (But it wasn't very good) tomato, spinach, cucumber and mayo sandwich.

D. just came in from work and my dh had made theee most delicious mushroom risotto. He makes the mushroom stock all day. And more spinach.

S. Healthy sized chunk of hotel chocolate vegan chocolate. I got the biggest slab of it for my birthday. Even says haooy birthday on it. The "D" on it's own was too big for me to finish so I shared it. It will take forever to get through at those rate.

Oooh lucky you Breath And Happy Birthday for yesterday Grin Did you watch Nadiya making THE most amazing chocolate puddings\cakes last night ? Not vegan but they could be veganised!

Did your dh use dried mushrooms and fresh ones?

B. Pear/linseed/fig smoothie and fresh figs
L. Warmed chopped pumpkin on a bed of of lettuce/chives.chervil with a mustard,shallot,walnut and olive oil dressing.
S. punnet of strawberries and some dates. Yumm Wed. is fresh fruit day here.

@ppeatfruit you're a light eater, does that come easily to you or is it something you work at? I really struggle with portion control, I'd eat all day if I could!

L: bean and soy protein chilli with avocado and tofu 'sour cream'
S: peanuts, strawberries
D: almond milk, coco yoghurt and protein powder smoothie

B: avocado on toast with houmous, smoked paprika and lemon, coffee
L: bean and veg pasty and small wholemeal wrap with mushroom, Iceland no chick chick'n and shawarma spice mix and houmous (random work from home lunch)
D: Smoked tofu with green lentils, courgette, red pepper, red onion and mint, balsamic and smoked paprika dressing
S: throughout the day...Lidl fake monster munch, almond magnum, cup of tea and 3 booja booja hazlenut truffles. Gin and tonic shortly....

Muhrooms were just all fresh i think. The skins and stems all cooked up all day with an onion, some herbs from thr garden. Makes for a delicious mushroomy liquor. I think dried ones make it nice too but not this time.

L. Green smoothie
D. Sweet and sour stir fry with rice noodles with some sort of fake chicken stuff in it. And like any meal that's been made for you when you've worked a lomg day, its lovely.

Binky I eat light due to losing 3 stone with Paul Mackenna, which is basically eating mindfully, slowly. I can't eat too much because most of the time I listen to my body. An awareness of fullness! I do also make a large cup of green tea or chicory\decaff coffee and some walnuts for snax. Just before lunch.

B.Strawberry\fig\lemon pear smoothie
L. Spelt toast with pnut butter, salad with mustard dressing.
S. HM flageolet bean.rice no tom. minestrone

Interestingly Breath Yottam Ottolenghi was on Woman's Hour, with a recipe for "meaty" mushroom lasgne, he caramelised the mushrooms for a long time and blended them for the sauce.

Morning all
Hope everyone is safe and dry. Some pretty crazy weather going on down here in the south of England

Yesterday was
Late breakfast of tinned grapefruit, spiced soya milk porridge with sultanas, seeds and a small spoon of Demerara
Lunch was a large bag of sweet and salty popcorn eaten at the cinema while watching Bill and Ted (birthday treat for DH, hence the day off and late breakfast)
D: spaghetti with hm pesto and nooch and a large salad topped with a handful of sprouted lentils
S: bbq lentil chips, cleos peanut butter cup (pack of 2)

@ppeatfruit we've had biblical rain over the last 24 hours with more forecast. The local primary school sent everyone home yesterday. DD14 had to stay in the same classroom for about 2.5 hours due to flooding at her school too 😲. Plenty of local roads flooded too, quite a few in places that don't normally. Felt pretty fortunate to get away with a lake in the garden to be honest!

We had some leftover sprouted oat porridge so I just made Dan Lepard's recipe for oaten soda bread and it's turned out well! Couldn't be easier! I'm pleased Grin

Can I join please, just to get some ideas? I’m veggie but considering becoming a vegan and regularly have vegan days. Yesterday’s menu:

Overnight oats - oats, chia seeds, unsweetened almond milk, pinch of salt, vanilla essence, flaked almonds and cherry compote.

Celery soup - garlic, onion, potato, celery, cashews, veggie stock. Slice of seeded sourdough.

Slow cooker Sri Lankan curry - onions, garlic, butternut squash, cauliflower, green beans, peas, coconut milk, veggie stock and spices. With rice.

Snacks - grapes, melon, rice cakes with marmite.

(I’m now going to check that the veggie stock and vanilla essence is vegan).

Welcome TazMac hopenyou get some ideas.

I think the way you are doing it is great. If it's a challenge to let things go then just keep replacing more and more with vegan choices until it becomes natural. Might happen quicker than you think. Fond meal ideas that you love and just start incorporating them in.

Ive said this before on here but when I was trying to give up dairy (i was veggie) my daughter's wise friend said to me why not think about just reducing dairy. So "i will eat LESS dairy " rather than "i wil never eat dairy again" and then falling at the cheesy hurdle. I did that then one day, very it just became something i didn't do anymore. I think once i took the pressure off then it didn't seem such a battle.

Yesterday.

B. Aldi blueberry soya yoghurt
L. Lentil curls Blush
D. Smokehouse oomph, mustard and soya cream sauce, chips and salad.
S. - My Friday snacks are like the first rule of Fight Club.

I prefer almond and oat milk to dairy milk now (although not too keen on soy). I’ve also enjoyed the Coconut Collective puddings and ice creams.

I would be really grateful for some decent vegan cheese ideas though.

Vegan cheese you say?!
Well....

Let me tell you about the delight of vegan Mexicana cheese. Grin
It even toasts. My posts all last week were ALL about the toasted Mexicana cheese. It was a new revelation.

But generally vegan cheese is a bit shit to be honest. Its best to learn to live without it. There are things that are hard to replicate well.

If you look back this comes up a lot. I think in the same way that bacon rolls are known to ruin many a veggie wannabe cheese is the same for vegan wannabees.

My vegan cheesy pasta go to is..
Pasta cooked and drained and added back to the pan. Over a light heat add soya milk, grated violife, Engivita and seasoning. I also add spinach. And just warm though stirring. Even my meat eating family will eat this.

That sounds delicious, kind of like a vegan macaroni cheese... I’ll try out the Mexicana too, thank you.

My friend made me a tofu scramble for breakfast once, that was also very good and I keep meaning to give it a bash - tofu, nutritional yeast and lots of chopped veggies. I could happily eat that instead of eggs for my weekend breakfast.

Welcome TazMac and I agree with Breath - reduce cheese at your own pace rather than going cold turkey and feeling guilty when you “fail” and def get to used to no cheese for a while before trying vegan cheese - we have a mammouth discussion about this further back!

Yesterday was:
L: blistered shishito peppers and a crumpet with almond butter
D: veg box salad with tahini lemon dressing and tofu and snaffled some of DD’s chips
S: (a friend came over to watch movies, ooops) 2 slim Oreos, some home popped popcorn and a bit of hummus with pita chips, thankfully all small amounts. And two glasses of wine!

@TazMac your food sounds delicious- like that of a seasoned vegan! I was a cheese fiend before becoming vegan two years ago and as a long time vegetarian, cheese formed the basis of many meals! I eat a lot more stir fries these days and miso paste has that 'umami' taste I miss. Also, marmite and things like smoked tofu. Strongly flavoured foods mean I don't miss cheese so much. Also adding things like capers and sun dried tomatoes to pizzas and pastas where before cheese would provide that saltiness.

I agree with others who suggest leaving it for a while. I tend to buy the more high end vegan cheese so it is more of a rare treat. Brands such as Tyne Chease, Kinda Co, Mouse's Favourite are all great and very cheesy but expensive. Applewood is a good supermarket option. The Tartex pates from health food shops fill the cheese void too.
