L: grapes, 2 plums, sticky rice traybake with butternut, cashews and broccoli
S: handful of pistachios
D: potato and violife feta bake with cherry tomatoes, beetroot and Bombay carrot salad

I've got a soup that's almost finished in the good old soup maker - vegan cauli cheese made with soya milk and nutritional yeast. It's smelling pretty good.

Tonight is vegan "lamb" kofta skewers with lots of salad.

Silken tofu is great in place of making a bechamel sauce and minimalist baker does an amazing quiche using silken tofu, or add it to miso soup

Took DS to my favourite restaurant for lunch, we had cashew raclette, kimchi scramble, frittata and roast veg on the side

Dinner is Chinese tofu and veg stir fry with rice. I usually just use Chinese 5 spice powder but I’ve run out!! Damnit....

B. Pear and ginger\lemon\ground linseeds smoothie.
L. Large green salad with mustard/ olive oil/yeast flakes/pnut dressing and ryvitas
S. HM grape juice, water melon. and dates, walnuts.

Soya yoghurt and muesli this morning.

I've got a batch of black bean chilli on the go to have a portion later and then portion the rest up for the freezer for easy quick meals. Might do quinoa with it instead of rice or maybe just a handful of salad.

Afternoon all 

On silken tofu, I second @IJumpedAboardAPirateShip about the minimalist bakers silken tofu quiche and miso soup/ramen. I am having shakshuka this week and will use some in that as an egg sub (without the yolk obvs). Doesn't have much flavour, but I don't mind the texture and it's close enough to the white of a poached egg to work for me

And for firm tofu, I'm still very much experimenting but think that even when the packaging says there's no need to press it does need pressing. There's still loads of moisture comes out, although @ppeatfruit's tip for freezing is something I'm going to try

Friday was
B: overnight oats with raspberries, blueberries, alpro Greek and seeds
L: minestrone soup and a wholemeal roll spread with naturli
D: olive pesto spaghetti with herby fried breadcrumbs
S: grapes, dates, bagel thin with PB, salted cashews, chilli rice cakes, 2 x jammie dodgers

Yesterday
B: 2 slices sourdough toast with PB and kimchi
L: bowl of Kellogg's protein crisp cereal with soya milk
D: lots of itsu veg gyoza (some steamed, some fried) with lots of wok fried greens (tenderstem, pak Choi, green beans)
S: pineapple, grapes, fry's chocolate cream and almost a whole sharing bag of sensations lime and coriander poppadoms 🙈

Is it my imagination or have I seen silken tofu and dark chocolate cake? I eat a lot of the firm type but never tried the silken version.

@SerenityNowwwww not sure about the chocolate cake but you've reminded me that I've also used silken to make chocolate mousse and that worked well

Brunch out today. Baked beans, mushrooms, hash browns, vegan 'bacon' (more like quorn ham that had been cooked tbh), roasted tomato, avocado, a falafel, toast. And freshly squeezed orange juice
S: pineapple, plums
D: falafel, garlic tahini sauce, pitta, hummus, crudités, beetroot, cherry tomatoes

Ref. silken tofu I remember having a really lovely dessert in Planet Organic which was just like a whipped cream mousse with an oat base like a fluffy cheesecake. Non vegans would have had no idea it wasn't dairy. It was better than dairy! It was in single pots.

Yesterday was
B: date/coffee/banana/PB/soya milk smoothie
L: aubergine/courgette/tomato/chickpea/rose harissa traybake with wholemeal pitta and garlic tahini sauce
D: salt and pepper tofu, rice noodle salad with tenderstem, green beans and peas
S: pineapple, grapes

Today
L: 2 slices toasted sourdough with a whole avocado, plums, pineapple
D: big salad, all plants roasted veg lasagne, peas
S: mince pie (yes really 😂). Lots of tea with soya milk (worked at home today)

B. (dh bought 5 organic plums that were stone solid for more than a few days so in a spirit of not wanting any waste I tried gently cooking them with pear juice, just to soften them not to make jam !) It worked well so removed the stones then mushed them with water and pumpkin seeds for richness). Then made a lovely smoothie with them.
L. My lovely green soup warmed with spelt toast

Was your mince pie your own? Part time
S. Curried courgettes and quinoa.

@ppeatfruit they were from Asda (accidentally vegan) but technically my own as I paid for them 😂 Couldn't resist when I saw them for the first time

L: large wholemeal roll filled with nut roast, cranberry & Mayo. Beetroot, tomato, grapes
S: plums
D: butternut squash carbonara with crispy sage. Another one from the new Bosh book, my favourite so far. And DH liked it and he's not a fan of butternut so winner all round

Oh my!! I'm on holiday in a self catering place and they have a toastie machine. I haven't bothered for years as i am GF as well as vegan.
But i had the most amazing toastie with schar bread and vegan Mexicana cheese. It was a little bit stringy and everything!
I am going to invest in a toastie machine when i get home

Grin PartTime I always attempt vegan mince pies at Christmas, the pastry is usually the problem! My most successful ones were made with marzipan!

That amazing lunch is almost the amount I eat in a day! Sappho !

B. Leftover plum smoothie
L. Quinoa salad\mustard dressing on a bed of lettuce with Rude Health oat\rye crackers and yeast extract.
S. Nearly a whole punnet of strawberries and some dates (it's strawberry day!) Half a mini water melon

Ha ppeatfruit it was rather a large lunch but in my defence I'd been for a run and I'm breastfeeding.

B: Jason's ciabbatin toast with marmite

L: tomato and basil soup

D: Coconut and lentil dal with rice and Oatly yoghurt - it was v simple just fried garlic with cumin, paprika, chilli powder and curry powder. Added a tin of tomatoes some red lentils and a can of coconut milk and left it for 45 mins or so stirring every now and again and adding some water.
