S: handful of pistachios
D: potato and violife feta bake with cherry tomatoes, beetroot and Bombay carrot salad

Ref, Chinese food , I used to love the old sweet n' sour stuff as a teenager (we're talking a loooong time ago) I remember going to the first Chinese in our Nth London suburban town! Now we do still have sushi, sometimes, with tamari which of course is much more sophisticated and Japanese. But giving my dislike of sugary and vinegary foods , it suits me better ,oh and i don't eat wheat! If I can avoid it.

B. ground walnuts\ o.night soaked linseeds pear ,lemon and ginger smoothie.
L.HM mushroom/red onions, garlic and tarragon (gently fried) with ryvita and salad. ( I made a dip with the leftovers , there were a lot of shrooms to use up)
S. 3 plums,walnuts and some tofu yoghurt with molasses

B - soy yoghurt and muesli
L - will be some sort of spicy veg soup - still ploughing through that cabbage!
D - Linda's mock duck with rice noodles, sugar snap peas and baby corn.

@IJumpedAboardAPirateShip was it vegan Richa's hoisin sauce? That looks really tasty. I love black bean sauce too
@Gatr will bookmark that one for when the weather has turned a bit. No sign of that in the south this week!

B: overnight oats with raspberries, flaked almonds and seeds
L: crackers with cheese (I'm nut a miner) and white bean and mustard spread from a jar. With an Apple, some plums, beetroot and cherry tomatoes
S: dates, salted peanuts
D: 'fish' finger tacos (gardein fillets, lettuce, tomato, avocado, jalapeños, cashew sour cream and coriander leaves)

I've got creative in the kichen for a couple of days, I made oat milk, yesterday ok but needing to be used in other things, so I made a gingerbread parkin today. Oh and I'm making custard (english custard!) as we speak. With the oatmilk.

B. Dates,figs and leftover smoothie
L. Mushroom dip with celery\cucumber sticks and ryvitas
S. Bowl of oats soaked in HM oatmilk with nutmeg, maple syrup/molasses.

I've never made a Parkin @ppeatfruit but I love ginger cake so think I should like it? Do you use an egg sub? My normal ginger cake recipe is naturally egg free, and I've shared it before but happy to share again if anyone would like it.

Yesterday was
B: date/coffee/banana/pb smoothie
L: Asda falafel and hummus sandwich on rye bread, plums, grapes
S: bowl of wheat flakes, choc orange rice cake x2, lots of chilli rice cakes (the little deep fried ones rather than the healthy ones!)
D: freezer curry of leftovers from other meals, so I had Dahl, saag aloo, chickpea/spinach/tomato curry and a naan bread (DH and DD also had some fish curry and rice)

There are plenty of different names for similar cakes\breads! I love gingerbread, Delia Smith calls it parkin, you call it gingercake! I used some oatbran and normal oats in mine , it gives a good chewy texture in a day or so, not immediately, it really requires keeping to improve. I used all molasses, instead of brown sugar and the egg sub. is 2 tabsp. soaked overnight (in boiling water) ground linseed and GF baking powder. What's yours? Grin

B.Apple,dates and finished the smoothie.
L. HM Celery and cucumber remoulade, dressing with mustard,olive oil, fresh and dried basil, on a bed of lettuce with crunched up ryvitas, olive oil and pnut butter.l
S. Finished salad. Some of the gingerbread with custard.

I made a lovely simple mushroom dish for lunch, literally just fried mushrooms in a little olive oil with salt, pepper, garlic and thyme. Added a splash of Elmlea plant based cream. Had them on top of toasted sourdough with a rocket salad. So tasty!

B - slice of toasted sourdough with vegan flora
L - handful of vegan sweets (I'm still working my way through the jelly sweets)
D - will be puff pastry pizza (the jus roll one) topped with sundried tomatoes, mushrooms and grated violife. Little rocket salad on the side.

B. ( 've discovered a new way of mushing up my lemon and linseeds and dried apricots without soaking) I use the specific goblet that came with my hand blender DUH! I don't know why I didn't think of it before! It works really well, I deseed and chop up the lemon first. So I had a lemon,apricot and apple with water\pear juice smoothie .
L. Large green salad with raw onion, horseradish dressing and pnut butter ryvitas.
S.n HM Ginger bread and warmed oat milk custard.
S. Some watermelon, finished this morning's smoothie

Breakfast: fruit smoothie with raspberries, banana, chai seed and coconut water

Lunch: vegan sushi

Dinner: stir fried shallot, mushrooms, cherry tomatoes and spring greens with oatley cream fraiche and spaghetti. It was pretty good.

Does anyone have any good tofu recipes? I usually get the cauldron one and stir fry it with veg that's pretty much it. I love the Chinese style deep fried tofu but have no idea how to make that. I'm sure that silken tofu in my cupboard could be put to good use too.

If you have the normal tofu, just freeze it for a couple of days or as long as want (that changes it's texture when defrosted) then slice, after marinading and dipping into rice flour batter deep fry.

The silken is a good for substitute for cream. There's an old book called The Tofu Cookbook by Leah Leneman. You could probably get it on Amazon
