Wow that’s a good looking box! Where do you get it from? I used Riverford when I lived in the U.K. and it was first a thing getting veg boxes. I use a company here called imperfect which sells produce that would normally hit the bin due to surplus or misshapen or sized

Yesterday was
B: spiced porridge with soya milk, sultanas and seeds. Tinned grapefruit
L: picnic at DDs cricket match - cucumber, cherry tomatoes, pear, dates, crackers and cheese (kinda co. Spirulina blue, violife cream cheese)
D: Richmond sausages with new potatoes, carrots, tenderstem, corn on the cob, peas and gravy
S: a few more Mcvities caramel and chocolate chip digestives

@IJumpedAboardAPirateShip it's from a local company. About 70% of their produce is from the local area so extremely fresh and I love the idea of reducing food miles as much as possible! The cabbage is from a farm about 5 miles from here.

@PartTimeDomesticGoddess omg I've still got half of a cabbage let from last week!! They were both absolute monsters! I think I may need to Blanche and freeze quite a bit for future meals as there is no way I can get through all that! Then I'll be back on the soup mission once I find a palatable cabbage soup recipe. Eldest DD already had a giddy when she saw the leeks as she loved last weeks leek and potato soup.

That’s great - we’re super lucky to live in California so our veg doesn’t have to travel as far as if we lived on the easy coast or mid west

A local box sounds great. I have had riverford and Abel and Cole in the past, but not for years. We're a family of 2 big veg eaters and 2 not big veg eaters so I struggled with it a bit. Might try again but every other week...

Today has been
B: @IJumpedAboardAPirateShip'S coffee/date/banana/nut butter/plant milk smoothie. Used almond milk and butter as the milk needed using and it was lush. Didn't really taste the banana much at all
L: tinned grapefruit, super green soup and crackers
D: one pot lemon and chilli linguine with cherry tomatoes, olives, spinach and lots of nooch. Big salad
S: pear, handful of salted peanuts, M&S vegan marshmallows (I got the last packet on Saturday Grin)

Cricket I find if you start your soup off with plenty of onions and garlic, cooked really gently, using a solid saucepan, a le Creuset is best, I find, with a tight top in a little olive oil and a little water or stock (or whatever) don't leave it ,then when they're transparent (not burnt) add the stock, finely chopped cabbage a handful of cooked rice and or finely chopped carrots,celery. (Whatever you like) Cook gently with the top on till all is softened. Then anything tastes good!!

L: tomato, aubergine and freekah bake with Greek alpro
D: curried mushrooms and cucumber/yogurt/chilli (made with more Greek alpro 😂) eaten on a naan bread. Beetroot
S: 3 choc and caramel chip digestives

Today
B: date/coffee/banana/peanut butter smoothie
L: mango, fosalakia, naan bread
D: Thai red curry (tofu/aubergine/yellow pepper/green beans/broccoli) with rice
S: pear

Yay you did the morning smoothie!

So far I’ve had a lunch of avocado on rice cakes with kimchi, fresh tomatoes and some olives.

Feeling so unmotivated to cook so it might be an easy creamy avocado and pesto pasta dish from Oh She Glows for dinner, even though I’ve defrosted some veg. Might slice and fry some tofu too - all I want is protein at the moment and happily
Getting through blocks of the stuff

Sorry not been posting last couple of days. I've had literally no appetite at all so my vegan meal plans wouldn't have excited anyone lol!

Creamy with no cream cabbage and potato soup today. I really want to get some of those Vegan bacon bits to crumble on top but I can't justify a trip to the supermarket for one thing (we are in one of the areas where cases are rising at a scary rate and it's just not worth the risk)

Trying the green cuisine Swedish style balls tonight with pasta and a lovely garlic and herb tomato sauce.

Hope everyone is ok!

B.Leftover over pear smoothie
L. usual salad and ryvita.
S. Strawberry, raspberry and almond milk smoothie.

ref. Bananas, they leave me nasty reflux The ground linseeds and almonds give a lovely rich texture to my smoothies. You do need a good couple of tablsp. of each for enough for 2 days.

The day started off so well for me but then went downhill.

I had a smoothie for breakfast with lots of fruit, protein and veg (banana, blackberries, kale, broccoli, peanut butter, flax seeds, tofu, cacao and cashew milk) followed by another a banana.

Then I had some macaroni cheese just made with cashew milk, pure spread and nutrional yeast and onion rings.

I have just finished a pot noodle sandwich Grin.

B: porridge made with Innocent coconut milk (by far the best for porridge) and a teaspoon of biona dark chocolate spread. Decadent 😋

Snack: Noccelara Olives and an apple

Dinner: Butternut squash and sweet potato stew with plum tomatoes and brown rice. Had it with some vegan yoghurt.

Nobody else in my family is vegan but seeing as I do all the cooking it’s mainly vegan, sometimes vegetarian and once a week or so they get some chicken drumsticks, but DS loves new food and I introduced him to my chopped salads that I like to do with tons of very garlicky dressing today and he LOVED it and asked for the same tomorrow. Fairly basic with lettuce, cucumber, tomato, red onion, avocado and cannelini beans but that is such a win because it’s my favourite kind of lunch too. DH also had it - DD had a quesadilla and some cucumber 🙄

👋 to @cricketmum84. Bought a savoy from lidl and thought of it as the poor cousin of your monsters while chopping for the noodles 😂
@ppeatfruit haven't seen that, how interesting (although I'm sure you have to have a clean lifestyle in all other respects as well as food )
@EveryPlanetHasAYorkshire and @SapphosRock both great sounding food days in different ways!
@IJumpedAboardAPirateShip, DD17 is mostly vegan at home and DD14 has started to mostly cook her own thing if she wants meat or fish (I still cook fish for her sometimes but not that often). DH mostly eats what someone else cooks for him. Without complaint, he picked out and gave to me every single piece of red pepper and broccoli from tonight's noodles as he'd rather do that than cook dinner 😂

Ijumped Your dh sounds sooo funny!! BUT we hate all peppers and chillis too! . DH cooks his own organic ,omniverous meals, with specially unburnt veggies for me Grin . I Luurve broccoli .

Everyplanet Did you see my recipe for vegan mac N cheese (upthread somewhere! ?). It's simple with a blended tin of white beans and yeast extract flakes or marmite for the cheesy texture and flavour.

Yes PartTime This was to do with a huge sample of 7th Day Adventists (or some such American religious sect! ) So they would have been teetotallers I expect!!!!!

B. lovely blackberry/raspberry ground linseeds smoothie
L. Spelt toast, yeastflake, basil, olive oil spread and cucumber salad.
S. Half a mini water melon. Ground almonds in almond milk with lime juice and chopped dates and strawberries Yum!

I'm not going to admit to how many rubbish snacks i've eaten today (aldi fake veggie percy pigs- I'm looking at you!) but i did also have the most delicious fajitas made by my dh.
Gf wraps . Oumph sticky smokehouse marinated in lime and coriander and sliced. With sizzling onions, peppers, spinach and mushrooms. Natural soya yoghurt. Home made guacamole and a very spicy home made salsa. It was soooo tasty.
(For anyone also gf the Old El Paso mini tortillas are the best -
Nice and soft)

Breakfast -- porridge smoothie which is basically oats, cashew milk, cacao, flax seeds, peanut butter, banana and raspberries blended up followed by another banana

Lunch - spicy rice with tofu, lentils, bok choi and peas.

Snack - cashew nuts and an alpro yoghurt

Dinner - ramen noodles with tofu, bok choi, peas, kale and cherry tomatoes, a nectarine

@ppeatfruit I actually used to make the bean one but I could never get the consistency right. Now I just keep adding nooch and plant milk to my pasta until I have the consistency I like which is quite thick and not too 'soupy'.

I also like cashew mac but can never be bothered with soaking or boiling the cashews.
