I hate the professional kitchen round, they aren’t trained chefs, it’s a little bit like asking a first aider to stand in as a scrub nurse in an operating theatre though without the possibility of killing anyone or leaving a swab inside a sauce. :)

[I would also be blumming peeved if I was paying restaurant prices for a meal cooked by an amateur , I know the punters aren’t paying but it’s the same difference.]

I've never tried scallops and I've always wanted to try them, but I think I'd prefer to try them in a restaurant rather than try them at home

I suppose the one good thing about it is that they learn the pressure of cooking covers during a service, and that might help them decide whether they really want to work in a kitchen like that.
