Morning all.

Spreadsheet, as ever

Although we're coming to the end of this particular Bootcamp, you'll see that @FinallyHere has added enough columns to the spreadsheet so that you can keep going, should you wish.

We'll also keep this thread going too, past the end of the week, for general low carb/Bootcamp chat and support - although I won't be starting a weigh-in thread each Monday after this one.

I know it's only been a short one this time, but looking at the spreadsheet, it looks like there have been some great results, even before today's weigh-in. Flowers

@lastchancesalmon how do you make your minestrone? I'm always on the look out for lc soup recipes. Today I made some broccoli, courgette and blue cheese soup for lunch - going out for dinner to a friend's house so light lunch seemed like a good idea.

I've had a good week - pork with FLGV on Sunday; a sort of salmon nicoise salad on Monday - green beans, eggs, olives, salmon, leaves, tomatoes and salad dressing; home-made herby meatballs in tomato/veg sugo with another FLGV. No breakfasts (to counteract the sweet and carby Italian breakfasts of the previous week), just coffee with cream at 11am, and soup or eggs for lunch.

I've got a turnip from the veg box, so tomorrow might be something with that. Do you think you can mash turnip with cheese to layer on top of a pie?

@venusandmarsminestrone is basically bacon, small diced veg and tinned toms in stock. For 3 portions this week I used 1 pack diced pancetta, 1 carrot, 1 celery stick, 1 shallot, 1 courgette, 1/2 pepper, 2 handfuls of shredded cabbage and a handful of frozen peas and sweetcorn with 1 tin tomatoes and instant stock - fry pancetta, sweat veggies and add liquid, simmer until just tender, adding cabbage and peas at the end. You could add whatever is in your fridge, I’ve used green beans, ts broccoli, broccoli stalks, celeriac, all sorts but a good quality plum tomato that you chop yourself has more flavour than cheap chopped tomatoes. There are some carby veg in there but very small amounts and you could omit. Serve with EVOO and grated Parmesan to add fat. It’s quite quick to make and lasts a few days in the fridge and reheats beautifully.

Had a lovely whoosh on Wednesday but bounced back up again, hopefully it’s temporary. Half term has presented some excuses for wine so the discipline of the June thread will be welcome. hanging in there though.

brunch - bacon, scrambled eggs, spinach, mushrooms, coffee with cream
Dinner mixed meat BBQ, lettuce, pickled cabbage, tzatziki

Thanks to whoever it was that recommended using AI for meal planning. I used Copilot to do my June meal plan and it was great. Lots of interesting news meals to try and I got it where I wanted it in about 15 minutes. It even helpfully made a shopping list, prep list and recipe booklet.

I find, in general, that I eat a lot less on this woe than I expect. So I buy an avocado, I've got eggs, I've got soup made with leftover veg... And I feel like I'm always juggling - things put in the freezer, and sadly some things thrown out (hate food waste). I wonder whether AI meal planning might help...

The challenge is that I get a local organic veg box andnever know what is in it until arrives...

Was planning a big breakfast today, but dh decided to go off on an adventure. I swapped meals around and dinner tonight was bacon, scrambled egg, sausage, tomato, mushroom.

It’s always interesting to me to get in touch with all the non hunger related reasons I find for eating. Once I’m fat adapted and burning fat, I tend to not feel hungry. Still so many prompts to eat, including if being ‘lunch time’. The most beguiling reasons tend to be around being a tad bored with what I’m doing….
