Anybody want to share? In no particular order:
Brazilian stew with palm hearts - recipe from Lad Iguanas
Cauliflower cheese and jacket spuds
Nigella's fish finger bhorta
Thai green curry with tofu
Shallot tart with rocket salad
Veggie chilli

Tonight is salmon and prawn linguine with greens & garlic bread
Sunday: Veggie toad in the hole, mash and veg
Monday: Tofu and veg teriyaki stir fry with noodles
Tuesday: Vegetable fried rice
Wed: Pesto salmon, baby potatoes, roast veg
Thursday: Frittata using leftover potatoes and veg from Wed, salad, garlic bread.
Friday: Either bean and veg chilli from the freezer with wedges/guac/ sour cream etc OR a takeaway. Depends on the mood. Whatever it is it will be served with wine.

So, as expected, DH's Slimming World requirements are being annoying. In his defense however, he starts to make something my problem, catches himself and attempts to solve the issue himself so I do appreciate the effort. He has suggested he might try cooking a few things. I have said that would be great (but am not holding my breath)!

Quite a lot of what we eat is fairly slimming world friendly anyway, or I can make it so without too much problem. It's more the variety that starts to be an issue. And I am feeling a bit irritable about the whole thing, I admit.

So we're having
roast chicken with veg and new potatoes
Salmon parcels with noodles and broccoli
Chicken salad with garlic bread
Beef stir fry (DH is making this one...)
Asian style mince and rice parcels
Fajitas
Tuna jacket potatoes (made with 0% quark) and salad

I've bought some mushrooms, spinach and cream and am hoping to turn them into some sort of creamy pasta pesto thing for tonight. Beyond that, gawd knows.

@RemusLupinsBiggestGroupie yeah we love it, not sure if it’s the same stuff that you’d get in the U.K. though? Omnivore chorizo here is minced not a solid sausage like I was used to back home so soyrizo follows the same formula

  1. Spanish omelette
  2. Chicken quesadillas
  3. Sausage, veg and bean stew
  4. Soup (broccoli and blue cheese) and sandwiches
  5. Tofu in spicy peanut sauce with rice
  6. Chickpea, potato and cauliflower curry with homemade naan (or an attempt at homemade naan...rice as a backup)!

Ok I think I have a plan:

Tonight: soyrizo hash
Sunday: Persian legume and pasta soup
Monday: Hakka stuffed tofu with noodles and bok Choi
Tuesday: green roasting tin lentil and leek bake
Wednesday: shepherdless pie
Thursday: DH doing steak for him and D.C., fast day for me so prob soup
Friday: pizza as per but there’s a vegan fried chicken food truck not far away I really want to try so might go for that!

Last week of having to plan lunches. We will be having:

  • Thai style cauliflower red curry
-crispy duck with rice noodle salad and a hoisin sauce
  • maple cured pork chops with spätzle and greens
-salmon poke bowls -sweet and sour chicken with rice -pasta with a fennel/nduja/tomato sauce -fish tacos with mango salsa -beef borek -ham and cheese toast with crudites -homemade pizzas with side salads -grilled cheese sandwiches with tomato soup -egg fried rice

Sweet treat:

  • Swedish style cardamom cake
-cherry pie (found a place selling frozen sour cherries!)

Have opted for:
tonight - enchiladas stuffed with vege, black beans and Quorn pieces

tomorrow - veggie shepherds pie (from the freezer after dp made double last time) with vege

Then in no particular order -
Thai red curry with crispy tofu, baby corn, sugar snaps and rice

Jacket potatoes and 'something' - maybe cauliflower cheese again as that's one of my favourites

Mushroom risotto

homemade wedges and 'something' - maybe omelettes and salad

probably a chilli or maybe keema (veggie) or maybe dosas with potato and pea filling and coconut chutney

Plenty of fruit, vege and salad to bulk things out if needed. We'll not starve but I'm not very excited about any of it.

Last night we had toasted mozzarella, pesto and tomato panini whilst watching the new David Attenborough series.

This week:
Mexican bean burgers and sweet potato fries
Satay tofu stir fry
Spinach and ricotta pasta bake
Stuffed roast butternut
Tuscan bean stew and cheesy mash

Was going to try Jamie’s veggie moussaka, but it looks such a faff so it’s definitely one for when I’ve got the time and energy!

For lunches, I’ve made a load of frittata muffins and I’ve got some cheese scones and Quorn sausage rolls in the freezer.

These threads have been so useful for coming up with quick & easy meals since DS was born. I’m so used to cooking more difficult meals but an 8 week old doesn’t play ball!

This week:
BBQ chicken wraps
BBQ chicken quesadillas
Fresh pasta (spinach & ricotta tortellini) with homemade pesto, rocket and parmesan
Baked Brie and grape tart
Halloumi, grape and walnut salad with a balsamic honey dressing
Cod wrapped in pancetta with new potatoes, peppers and red onion in some kind of traybake with pesto

Might also try the Tiktok feta pasta.

Next week:
Beef roast dinner
Bbq beef tacos
Chilli con carne
Stuffed peppers (with leftover chilli)
Chicken tikka, salad, flatbreads & raita
Creamy chicken potato topped pie & veg
Chicken parmigiana (I want aubergine but DH hates it)
Warm sweet potato & goats cheese salad

I think we're all just at that point of being bored and tired of it all. I'm not a massive burger fan but for some unknown reason, all I can think about is going somewhere for a burger. I think it's the sort of casual normality of it?

The DC have swimming one evening a week normally and usually we let them have dinner at the gym afterwards as they have a few friends who are all there together. I miss that one day a week of absolutely not cooking, plus the occasional meal out with friends etc. Just to break up the monotony a bit. Sigh. We're on the final stretch now...

Have actually managed to plan ahead according to veg box delivery on Thursday as well so now mine looks like:

Weds: sheperdless pie
Thurs: leftover lentil and leek bake
Fri: pizza night but I might have roasted veggie with tahini and lemon instead
Saturday:
Sunday: lasagne, garlic bread and salad
Monday: white bean, pea and leek risotto
Tuesday: raw Thai noodle salad
Wednesday: shiitake and potato stew
Thursday: mung bean soup for me, pork chops for the others
Friday: as always pizza night (might splurge and get a takeaway for a change)

Monday: got a big work deadline on Tuesday so likely some crap from the freezer/takeaway

I have enjoyed reading these meal plans, much more varied than ours.

DH and I have our main meal at lunch and prefer different things to the DCs so it has been quite a challenge. Final push before they go back to having lunch at school, we have had a successful fishy week of

Prawn burgers (bbc good food)
Fish pie ( Lucas hollweg, good things to eat book)
Fried floured plaice, roast new pots, veg
Roast chicken etc
Macaroni cheese with cauli and bacon

Next week who knows but there will be things in a sauce! with green bits! Spicy things! A stew made up completely of vegetables! And not a meatball or oven chip in sight, can't wait.

Wed- smoked mackerel, new pots, horseradish sauce, winter salad

Friday: cod fillets roasted in oven with lots of different veg and dollop pesto
Sat : fakeaway beef curry (make more for freezer) with bought pickles, flat breads etc

Sun: braised gammon with mash and purple sprouting broccoli with onion gravy or parsley sauce
Mon: leftover gammon shredded in to home made pea soup (make more for freezer)

Wed: gigantes plaki, green salad, tomato salad

Sat: croque monsieur & salad

Sun: small shoulder of lamb with ratatouille
Mon: leftover lamb shredded with cous cous and more ratatouille
Tues: oven baked mushroom "fake" risotto
Wed: tray baked chicken thighs in oven with root veg
Thurs: butternut squash soup (make more for freezer) with cheese scones
Fri: frozen salmon baked in foil parcels with steamed green veg and new pots
Sat: ploughman's

Sun: spare ribs with rice and Japanese style dressing and steamed greens
Mon: shredded beef with shredded Vietnamese style salad
Tues: linguine with courgette and tomato
Wed: sausages with roast root veg
Thurs: chick pea veggie casserole (make more for freezer)

Friday: curry with all the trimmings
Saturday: leek and potato soup
Sunday: cannelini and blackbean chilli with tortilla chips
Monday: tofu&potato goulash with some sort of extra carb
Tuesday: buffalo cauliflower and chickpea flatbread
Wedbesday: Cajun fried rice with mushroom chiorzo
Thursday: DPs day

Really looking forward to a gnocchi/pasta free week
