@shannie I've taken a photo of the recipe. It will be a little different without the spice mixes but still delicious. I'd replace the Biber blend with chilli flakes and a bit of paprika. The Kammun mix I'd leave out or replace with cumin. My DH isn't a big fan of halloumi but absolutely raved about this one.

The mezze book is new and I've only made one meal so far but I really like it. If you were only going to buy one of their books I'd start with the Taco legend. It's the one I go back to most often. There are lots of photos in the reviews and wall of fame section on their website.

I posted mine elsewhere but just found this thread. There are so many wonderful ideas here.

I'm not vegan or vegetarian but I do eat a lot of vegetable based dishes.

Mine so far is

M)Honey sesame Roasted brussel sprouts and crispy baked tofu with rice. I'll probably throw in some peppers and onions too.
T) Black bean and vegetable enchiladas
W) Curried bubble and squeak
THU) Pumpkin and mushroom pasta
F) Mujaddara
S) Sweetcorn fritters, fried egg,, tenderstem broccoli.and mango salsa,
Sun) I have a ramen kit to use up so probably vegetable ramen or possibly Toowoomba pasta.

Had a little hiatus in menu planning while on holiday.

S- roast dinner with everything but the meat
M- Indian chip butty from Mowgli
T- Suprise Tatin with dressed salad from Yotam Ottolenghi's Plenty
W- Grenadian oil down with Chicken for DH and Tofu for me
T- Katsu curry with chicken for DH and sweet potato for me
F- out for dinner
S- Bean chilli with rice

Tuesday: Dahl with tandoori cauliflower
Wednesday: going out

@Kobanidaughters I just don't think I can bring myself to do coconut milk with pasta. Grin

Am totally uninspired this week so just did basic shopping when I picked up ingredients for roast dinner last night. It's quite heavy on convenience food which is unusual for us but reflects my boredom with cooking and thinking and shopping.

Tonight: some version of mushrooms with pasta or rice. I have bacon and also left over roast lamb that need to be eaten so need to figure that out with at least one of those. If there's creme fraiche I might be able to make it creamy.

Tuesday: Gyoza and dumplings. Just have to decide whether to do them with noodles and peppers and salady type ingredients or with noodles in miso with tofu and spinach.

Wed: Fishcakes

Thurs: no idea as realised I'll be with DD at her activity and DH and DS need to go to an activity that involves being out of the house between5 and 9pm!!! I suspect I'll be making them sandwiches to take with them or possibly chicken breast burgers which we often do for school lunchboxes as they work well even if they're not hot.

That's as far as I can go. I have got a Korma curry kit - one of those ones Spice Taylor ones so if I pick up some chicken and a few veg I could do those for Friday.

But I'm not sure I've ever had a week with this much prepared food!!

This week has been / will be

Mon...meat free Monday most Mondays so it was Quorn cottage pie.amd rainbow chard

Tues.... chicken fried rice with leftover roast chicken from sun

Weds..... chicken fajitas

Tonight.....fish pie and green beans

Fri.... out for dinner

Sat.... Turkey meatballs and spaghetti

Sun....m and s Christmas party food as we put the tree up!

Inspired by pp's mushroom stroganoff/bourguinon, so that's going on the list. Trying to empty freezer of the many tubs of frozen leftovers, so will be having:
Mushroom one or other as above,
Dhal and rice
Butter bean casserole
Chickpea and cauliflower curry
Katsu and rice - probably aubergine and sweet potato
And a recipe someone posted recently on another thread: JO cauliflower carbonara. Need to sub the milk, not sure with what yet.

I'm feeling uninspired and craving sandwiches/ easy meals this week

M- Banh mi (Vietnamese sandwich)- marinated tofu for mine, chicken for DH
T- Creamy courgette pasta from Jamie Oliver's veg book
W- Quesadillas filled with peppers, onions and cheese, served with guacamole
T- Reuben sandwiches in pretzel rolls (pastrami for DH, fake veggie pastrami for me) served with potato salad
F- leek and potato soup with a couple of leftover rolls
S- Reuben sandwiches and potato salad again

Not planned out the whole week but have a vague idea!

Last night was m and s party food while we put the tree up

Tonight.... cauliflower Mac and cheese

Tues.... spaghetti carbonara and garlic bread

Weds..... crispy chicken fajitas

Thursday..... Quorn tacos

Fri....not sure yet possibly some sort of traybake I have lots of veg to use up so thinking some sort of sausage butternut squash and potato traybake. Children will probably pick out the squash 😂

That's as far as I've got!

Also hoping to make a butternut squash and lentil soup in the slow cooker for my lunches this week

DS loves cauliflower cheese, I don't know why I don't make it more often. Must maybe do it next week.

This week we have:

  1. Sort-of roast pork (came in my meat box, it's sort of a cross between a joint and a very big chop..... Hope it works out. I'll do yorkshire puddings so the kids won't care either way!).
  2. Roasted butternut, spinach, goats cheese and pine nut "salad" with garlic bread
  3. Spaghetti bolognaise
  4. Spaghetti with courgettes with chilli, garlic, lemon and feta cheese
  5. Salmon parcels with noodles and stirfry

Pasta with tomato sauce (from freezer) with tinned sardines (a Sicilian pasta dish of sorts)

Spicy bean burgers with chipotle lime Mayo

I have beef mince so something simple like cottage pie/meatballs/bolognese I think - something they will make leftovers

Monday: grilled cheese sandwiches and lentil soup
Tuesday: Moroccan tofu and onion kebabs with harissa roasted cauliflower and Moroccan cous cous
Wednesday: hosted vegan Christmas dinner for a bunch of friends: stuffed pumpkin (sprayed with gold food colouring pictured), roast potatoes, parsnips and carrots roasted in thyme, maple syrup and orange zest, miso roasted Brussel sprouts, mushroom gravy
Thursday: impossible burgers
Friday: potluck at a friend’s (taking leftover pumpkin!)
Saturday: after Christmas meal Wednesday we’re doing an alternative meal of seafood platter, stuffed onion with cherry tomatoes and feta, tartar hashed potatoes
Sunday: going out for Mexican food after cancelling a Christmas trip to mexico
