I’m badly in need of a push/some inspiration after a busy week in work so this thread helps!

F. Chickpea & veg masala (from the freezer thankfully) naan, bhajis.
S. Aubergine parmigiana, salad, garlic bread
S. Salmon with red pepper gnocchi, broccoli and green beans
M. Broccoli cheese and leek pasta bake - easy comfort food for the dc after their first day back at school.
T. Bean and halloumi burritos
W. Fish pie and veg
T. Lentil bolognese

I keep wanting to make some lighter/Spring recipes but it’s still flippin freezing 🙄

Saturday: Japanese curry with cabbage and green beans and chickpeas
Sunday: spaghetti bolognese
Monday: aubergine and spinach with cumin and rosemary from HFW
Tuesday: vegetable tagine
Wednesday: gnocchi with peas and mushrooms
Thursday: Mexican cauliflower rice with spinach and lentils
Friday: pizza night

Day off on Sunday, thank goodness for Mother's Day, will eat whatever is rustled up by my family but there had better be scones

Crappy weather has me thinking of steak pie and chips

Full on week of work next week so aiming to batch cook over the weekend and use the instapot a lot!

Saturday: baked potato surprise (ton of toppings for everyone to help themselves) and build your own salad
Sunday: “chicken” tortilla soup and quesadillas
Monday: gnocchi with peas and mushrooms
Tuesday: black bean and veg chilli
Wednesday: veggie tagine out of the freezer
Thursday: Mexican rice with lentils
Friday: pizza night

I’m so sad it’s the highlight of me week doing these at the moment.
Tomorrow: pizza
Saturday: squash and harissa soup
Sunday: aubgerine and chickpea stew with pitta
Monday: jambalaya
Tuesday: spicy peanut butter noodles and stir fried veg
Wednesday: general Tsos chickpeas and rice
Thursday: DP cooking

Sunday we had pheasant curry, with jasmine rice.

Monday we had stroganoff made with leftover (medium rare) flat iron steak, with brown rice and a medley of greens* from the freezer.

Tuesday we had spaghetti with mussels in a white wine sauce.

Yesterday we had Chipotle, coriander & lime chicken with potato and sweet potato wedges. Served with a sour cream dip.

Tonight we’re having baked pork chops and cabbage with butter & fennel, with baby potatoes.

Tomorrow we will have rigatoni and meatballs in tomato sauce, with courgette on the side.

Saturday we were going to have Korean Fried Chicken wings, but that’s been pushed back to next week so I’m not sure what we’ll have. I might do a veg and butter bean stew.

Sunday will be a lamb curry.

*that’s what it says on the bag.

Haven't been on here for ages. Partly because I got a bit tired of meal planning. But am trying, if only to ensure we don't eat the same things over and over again.

It did work in that we had absolutely delicious tuna steaks last night. Cost more than a takeaway but were really good.

This week we are having:
Pork steaks with veg
Beef stir fry and noodles
Thai chicken "soup"
Asian-style mince in lettuce cups
Fishcakes
Chicken tray bake
Vegetable fajitas.

We're doing less vegetarian as hard to do with the zero fat DH insists on [yes, that's an eye roll from me].

lol me too @lastqueenofscotland we’re going away to an AirBnB for DH’s birthday this weekend and have a private chef coming on Sunday - never done that before so am very excited

Friday: beer and pizzas
Saturday: fondue and martinis
Sunday: for the omnis: prosciutto and burrata crostini’s, lobster gnocchi, diver scallops on celeriac mash, vanilla and chilli chocolate cheesecakes. For the vegans: summer spring rolls, grilled baby romaine with avocado, cauliflower Meatballs with turmeric, a vegan dessert
Monday: BBQ
Tuesday: Thai noodle salad
Wednesday: home by then so prob just something I can conjour out of the store cupboard and freezer

Tonight - Sardines baked with harissa and garlic, fennel, watercress, avocado, pomegranate and toasted almond salad, halloumi fried with sesame seeds, hummus and flatbread
Sat - Cajun salmon tacos, elote, chipotle and lime mayo, mixed vegetable rice
Sun - slow cooked lamb, homemade mint sauce, cauliflower cheese, roast potatoes, broccoli and cavolo nero
Mon - prawns, chilli, tomato, garlic and spaghetti
Tues - breaded chicken burgers with gochujang and kimchi coleslaw
Weds - sausage, apple, parsnips and onion tray bake
Thurs - falafel, flatbread, picked onions, tahini dressing, salad

Last night was Lamb Burgers with minty mayo.

Today we had roast pork which I'd managed to get on a yellow ticket.

Mon - Soy Salmon and Broccoli Traybake with new potatoes

Tue - Easy Vegetarian Fajitas

Wed - Hairy Dieter's Salad Chilli Bowls

Thu - Chicken Katsu

Fri - homemade pizza.

Along with the tedium of 7 days a week lockdown cooking, the weather change is making me want different kinds of food too now. But the EFFORT!!! Grin

This week we are having:

Chicken burgers with chips and salad
Salmon parcels with noodles
Fried cod with new potatoes and salad
Roast lamb with veggies (easter)
Spaghetti bolognaise (probably. I'd rather skip it but there's always a request over here)
Chicken curry
Roasted vegetables with couscous. I had planned to do lamb neck skewers with courgettes, tomatoes and onion but then remembered we already have lamb for easter. So will save the skewers for another week. They are always a lovely spring meal and if weather permits, DH can BBQ them.

@MirandaMarple aaah, I haven't had bobotie in years! I bet DS would like it, you've inspired me, I'll have to track down my recipe and make it!

@TheMethodicalMeerkat I like the idea of a vegetarian pasta bake but we're trying not to eat things that are super high fat. I assume you make it with lots of cheese and/or cheese sauce? Or do you use tomatoes as a base?

That one’s got lots of cheesy goodness I’m afraid @SpaceOP. And some breadcrumbs on top Wink. I do limit myself to a smaller portion though.

I also do one with leftover roast veg and broccoli in a tomato base which is very nice too. We add mozzarella but you could leave that out and maybe just add a sprinkle of grated cheese? Or not but these things always benefit from cheese unfortunately!
