@lastqueenofscotland - for your chickpea fajitas, what else do you add? I usually add a bit of meat to fajitas which I make with onions, peppers and sauce from the pack. We've done vegetarian with just the peppers and onion and it tasted great, but I found we were all hungry a bit later. Clearly we needed more protein. None of us are the types to like lots of beans added. But chickpeas could work. I was also thinking of adding Houmous as a topping to a vegetarian version..

I roast the chickpeas with oil, salt and paprika
Fry off onions and whatever veg needs using in some spices and add that and loooaaaads of guac

Just done mine for this week. Bit lower than normal on vegetarian options but need to go and get some inspiration as am a bit tired of most of our veggie options:

Spaghetti bolognaise
Vegetable lasagna
Salmon, broccoli and rice
Jacket potatoes with bacon, sour cream and mushrooms and a salad (this is a bit of a splash out for us - we usually have jackets stuffed with tuna mixed with greek yoghurt but I just really feel like something a bit more luxe).
Beef and veggie stir fry
Veggie fajitas
Traybake chicken with new potatoes and veg

Remus - my local cafe does these in non lockdown times. Soo good. About 3000 calories though. I'll do it the night after the salmon!!!

So this week are meal plan is:

Tuesday- bacon and mushroom pasta
Wednesday chicken korma and rice
Thursday -tuna pasta bake (husband chilli con carne)

Friday- chicken and goats cheese traybake
Saturday- lamb koftas (fakeaway night)
Sunday- toad in the hole
Monday- chicken Kiev’s and chips

M - quiche Lorraine, salad and jackets
T - butternut squash and spinach lasagne, salad and garlic bread
W - chicken burgers, chips, coleslaw, pink pickled onions
T - chipotle sweet potato and black bean stew with cheddar dumplings, guacamole and nachos
F - frankfurters with warm potato salad and green beans
S - fish and chips from chippy
S - roast pork, apple sauce, stuffing etc

All homemade except Saturday as I'm on compassionate leave as my lovely mum died last week and I'm trying to distract myself!

Can share recipes if anyone is interested in anything I'm cooking Smile

Lockdown means more cooking as elder DS eats the same amount as 2 large adults. I need to cook normal meals plus small meals so he has things for his in-between-meal meals.

I’ve planned in no particular order

  • pan fried sea bass with fennel and mangetout and mash
  • egg and veg fried rice from leftover rice
  • chicken, celery, lemon, rice, and kale soup with homemade focaccia
  • cauliflour and cashew curry
  • steak and caramelised onion sandwiches
  • miso spaghetti
  • cheesy tomato and white beans
  • tagliatelle Bolognese
  • fish finger and watercress sandwiches with cucumber
  • kimchi jiggae
  • brioche galette des rois for epiphany
  • salmon poke bowls

This should take me to Monday, hopefully.

Sunday: borlotti and lentil shepherds pie
Monday: tahini and tofu stirfry with whole wheat noodles
Tuesday: sweet n sour chickpeas
Wednesday: red lentil Dahl with naan
Thursday: cauliflower and pickled carrot bahn mi
Friday: mushroom and kale stroganoff

Love a good meal plan, I currently have a monthly one on the go as the freezer and cupboards were so full after Christmas but am tweaking it depending on the veg box delivery which came today and every Thursday.

Friday - Chicken, cauliflower & nduja
Saturday - Steak with spicy sweet potato bake
Sunday - Roast turkey dinner
Monday - Turkey & ham pie
Tuesday - Chicken kiev pasta
Wednesday - Salmon, leek & bacon risotto
Thursday - Chicken Casserole

There will obviously also be soups & leftovers for lunches as dd & I are at home all day and dh is out at work

This week we have had
Ras al hangout salmon, cous cous and a Greek salad.
Vegetable chilli.
Spaghetti in sauce ( Sicilian pesto) salad and garlic bread.
Chicken thighs in thyme and honey, roast potatoes broccoli and carrots.
Pizza, chips and beans.
All quite quick and easy to do after work / school.

I've managed (again) to mess up my online delivery. So have one coming on Saturday but then nothing for more than 2 weeks. Between work, homeschooling etc, finding time and energy to go out to do another big shop is annoying so am going to be trying to do a really really big shop for this week, a small top up shop of just fresh vegetables next week from my local Tesco, then back to a big shop the week after. But I see this complicating meal planning even further!!!! Argh.

A follow up note - what does amaze me is how a meal plan does at least make this possible. Until recently, i didn't do them. I couldn't manage more than 5 days without having to do another shop and we definitely had more wastage and higher food bills. So although it's tedious, I'm quite amazed at how effective it actually is.

Today: roast beef, yorkshire pudding, veg and gravy
Mon: tapas or pizza (depending on what needs to be used first)
Tue: organic free range middle class meat box arrives, so I'm making chicken & leek pie
Wed: sausage and bean stew
Thu: pizza or tapas (depending what we've had on Monday)
Fri: homemade nando's
Sat: mutton & chickpea curry

Weds - halloumi green bean & potato bake
Thurs - Spinach cheese & potato puff pastry pie w broccoli & carrots

I did the two week meal plan. It's a bit stressful but...

Sunday: Roast chicken with yorkshires and veg
Monday: Chicken salad with garlic bread
Tuesday: Fish cakes with veg
Wednesday: Roasted cauliflower and carrots
Thursday: "Asia mince" (basically mince just cooked with ginger, garlic, lemongrass, soya sauce, lime and served in lettuce leaves with feta and cucumber and rice).
Friday: Roasted tomatoes and pasta
Saturday: Meatballs

Sunday: Beef stew
Monday: Fajitas
Tuesday: Salmon with noodles and broccoli
Wednesday: Sausage pasta
Thursday: Spaghetti bolognaise
Friday: Lamb chops
Saturday: Cod fillets with potatoes and veg
Sunday: Chicken thighs

I struggle to plan more than five days in a row, because of vege. But I suppose I could plan for more meals and then just pick some fresh vege up half way through.

Fingers crossed my order this week comes as planned. I had in mind (lunches and dinners as we are all at home, all the time):

  • soba noodles with aubergine and mango
  • roasted beetroot and fennel salad with crispy tofu
  • maple slow roast salmon with quinoa salad
  • spiced sweet potato, red lentil and coconut stew with flatbreads
  • roast chicken with parsnip, chestnuts, and sautéed greens
  • black bean burgers with corn salsa
  • chicken and cheese quesadillas with the leftover chicken
  • grapefruit, avocado salad with smoked fish, homemade focaccia
  • mushroom risotto
  • kimchi and mung bean pancakes
  • black bean/leftover chicken quesadillas

  • spicy udon noodle soup

And for sweet treats,

  • homemade jammy dodgers
  • Italian almond cake

Missing one day, where I promised the boys I’d order burgers.
