Im' not feeling very inspired this week but my order was booked and delivered so have to stick with it. I might try a different salmon recipe if I can find a good one. It's half term, it should be fun, but I'm working, kids and DH are stuck mostly inside and frankly, the temptation to just order a takeaway eery night is high.

I did finally try a homemade pizza recipe using a ciabatta bread mix. It came out really well except that next time I'd use much less of the ciabatta! So that was exciting to have something new and delicious.

Sunday: Spaghetti bolognaise
Monday: Pork Chops, new potatoes, veg
Tuesday: Fish cakes with vegetables
Wednesday: Steak stir fry and noodles

Thursday: Salmon, rice, broccoli,
Friday: Fajitas
Saturday: breakfast for supper or quiche.

Tonight - supermarket pizza, garlic bread and coleslaw
Tomorrow - roast beef, roast potatoes, carrots, kale, Yorkshire pud
Friday - leftover beef
Saturday or Sunday depending on whether I have ds this weekend - fish pie
Mon and tues something I've made previously and stashed in the freezer, as I'm crap at labelling things this will be pot luck

Alright meal planners, I committed the cardinal sin of ordering my veg box without making a plan - anyone got any particularly fun dishes I can use the following in (must be vegan or veganisable!):

Gnocchi
Broccoli
Spaghetti squash
Kombucha squash (I’m not sure that’s the actual name!)
Celery
Carrots
Golden beetroot
A million potatoes (small red ones)
Radishes
Brussel sprouts

Have a healthily stocked store cupboard (lentils and dried beans of every description, pasta and a million different grains), also have a lot of tofu in and some different vegan cheeses, and a Japanese curry roux in the freezer.....(plus other frozen veggies: peas, spinach, mushrooms, lotus roots, mixed peppers)

I'd make a lentil bolognese sauce and then roast the spaghetti squash halves in the oven for spaghetti bolognese

Tonight - homemade falafel, flatbread, hummus, pickled red onions, radishes, raita, tabbouleh salad
Saturday - roast rib of beef, broccoli gratin and caramelised shallots
Sunday - roast chicken made into a Caesar salad
Rest of week - sausage and apple tray bake, gnocchi gratin with chopped salad, pasta with nduja, fennel and tomato, chicken thighs with salsa verde

Monday: air fried mixed veg and chickpeas with lemon tahini sauce

Wednesday: curry out of the freezer
Thursday: stir fried rice with Brussel sprouts and tofu skewers
Friday: pizza night but for a change think we’ll order in

Last two weeks go having to plan lunches for a while!!

This week's meals:
-salmon with watercress and cram fraiche sauce, sautéed mangetout and green beans, boiled new potatoes
-red wine braised lamb shanks with root veg and cannelloni beans
-crispy tofu and greens with rice
-baked chicken thighs in satay sauce, rice, miso glazed aubergines
-chicken and smoked sausage cassoulet
-courgette and spaghetti carbonara
-4 grain minestrone with homemade focaccia
-open faced smoked salmon and avocado sandwiches, salad
-tuna melt sandwiches, crudités
-salami, burrata, rocket panini, tomato salad

  • breaded fish sandwiches

Sweet treat: rhubarb custard tart

I am so so so so so so so so bored of all the food. And I'm bored of thinking about new ideas and new meals and new recipes. And I'm bored of cooking. I basically just downed tools this weekend! Grin. Friday night I didn't feel like eating at all as I wasn't feeling fantastic anyway so DH made a fry up for him and DS and on Saturday I still wasn't feeling inspired so me and DS had hot cross buns!! The problem is that I don't even feel like takeout. I'm just so bored by the whole thing! Grin.

I have a meal plan for this week but I think poor family will experience less than my best!

Spaghetti bolognaise
Spaghetti and meatballs (because meatballs are taking up so much bloody space in my freezer that we'll have mince and spaghetti twice, so what!?)
Fish cakes
Chicken tray bake
Fajitas
Butternut risotto
Some kind of cauliflower dish. Possibly with carrots. To be decided.

DH has also decided he needs to shift a bit of lockdown weight. Absolutely fine. Except he will now be going all Slimming World on me and treating perfectly normal healthy family meals as the devil incarnate. This will annoy me more than it should because when he isn't on slimming world, he consumes his own body weight in peanut butter, cereal, bread and biscuits and hoovers up all and any leftovers but of course, none of THAT is responsible for the weight gain. It's all the "butter and cream" that I apparently put in our food (I buy cream once a month and for the vast bulk of our meals do not do things requiring butter. Incidentally, low butter and cream etc is because I know DH doesn't like it. I probably WOULD use more if it was just me and DS).

Can you tell I'm feeling a bit grumpy!? Grin

Sorry just seen the recepie request!
I cube up sweet potato and chop up red onion, toss in oil and spices, I use cumin, paprika, tumeric, cumin, garam masala and chilli powder but adjust for your tastes.
Roast that for a bit, add in peas and chickpeas when its nearly done.

Dressing is literally tahini, oil, juice of a lime and a bit of water to loosen.

Saturday: creamy mushroom and spinach penne
Sunday: broccoli and lentil pie with roasted new potato
Monday: teriyaki peanut tofu with stir fried veg
Tuesday: trying the aldi vegan pizzas
Wednesday: bean chilli with wedges.
Thursday: DP cooks

@Kobanidaughters how was the butternut squash and courgette risotto, I have these left from last week's veg box and the new one comes today so need inspiration to use them up?!

Any other suggestions for them would be greatly appreciated before I tackle this week's plan. DH "helped" last night by picking all the recipes he liked the look of and then got grumpy when I told him that none of the ingredients were in either the freezer or veg box Grin

@TheOnlyMrsW it was good - I make risotto a lot, basic recipe then chick in whatever veg. I roasted the squash and courgettes and folded them into at the end

@Kobanidaughters I'm planning to do a butternut risotto tonight. I am still feeling uninspired but actually the idea of standing and stirring risotto for 20 minutes with a glass of wine is appealing. I wonder if I should add the courgettes? I might just do them on the side.

I usually roast half the butternut and boil the other half and then mash it and stir it into the risotto. So I get orange risotto with chunks of roasted butternut. If I'm less organised/energetic, I just shove small chunks of butternut into the stock to cook/flavour the stock as I'm cooking the risotto. I'm thinking roasted or chargrilled courgettes on the side could be nice. I quite often serve with tender stem broccoli so courgettes aren't a big departure.
