Ours ended up being all over the place, but I did end up making a delicious risotto last night which involved forcing dp to eat broad beans by drowning them in lots of wine and cream.

We're having fajitas tonight, which I'd planned to eat days ago

Tomorrow will probably be dhal and rice

Saturday is a birthday in the house, so will be a takeaway

I've got to do an order but am thinking along the lines of:

a noodle tofu thing, or maybe trying tempeh which I've never used before

celeriac gratin with veggie sausages and steamed Savoy cabbage or green beans or something else with vitamins!

spag bol, which we don't seem to have had for quite a long time

falafel and salad wraps, maybe with cous cous alongside

cheese night with a baked camembert, pickles, etc - am craving radishes and celery!

veggie shepherds pie

Not sure what else.

Starting tomorrow

Salmon fish cakes, broccoli, peas and homemade tartare sauce
Prawn jalfrezi, rice, naan, poppadums and chutney etc
Slow cooked lamb with roast potatoes, green beans and homemade mint sauce
Sweet potato and squash stew with cheddar scones (thanks PP, get so much inspiration here)
Hake, bean and chorizo stew
Sausage, apple and parsnip tray bake
Sicilian stuffed chicken with potatoes and tomatoes

MirandaMarple · 04/02/2021 18:42
@MirandaMarple Thanks. Roughly how long in oven? 15 minutes?

We had a change last week as I forgot I'd ordered one of those Restaurant at Home burger kits to try out. Everyone agreed burgers were delicious, the little extras going a LONG way to improving the flavour. However, when I cleaned the pan afterwards I came to the conclusion that the main difference was the fat content!!! The base of my pan was completely covered in solid fat - so all animal fat that came out of the burgers. Delicious but... phew.

We are having a bit of a higher meat to vegetarian ratio this week, with beef three times due to specific requests from the family! Feels weird. Can't remember the last time we ate beef so many times in a week.

Monday - Spaghetti bolognaise
Tuesday - Fish cakes and veg/salad
Wednesday: Steak and veg stir fry with noodles
Thursday: Smoked haddock risotto (recipe I'm trying out from this month's Olive magazine but couldn't get any smoked haddock on weekend so hoping to pick some up when I do the milk/bread run later in the week)
Friday: asian-style mince in lettuce cups (DS' request)
Saturday Chicken pieces with veg and potatoes
Sorry for late reply. Yes, 15 minutes will do it.

Bloodybridget · 05/02/2021 03:08

Spaghetti Bolognese (actually will probably use tagliatelle)
Home-made pizza with artichokes, capers, anchovies and black olives - I already have the dough and tomato sauce in the freezer
Steak and mushroom pie, roast parsnips and new potatoes
Spinach and chickpea curry and rice. Forgot to put nan on supermarket order, might try making them.
Paella with chicken, chorizo and prawns
That's as far as I've got.

yikesanotherbooboo · 05/02/2021 12:05

Mominatrix I am interested in your poke bowl; do you use supermarket fish? Do you cook it at all? Any pointers gratefully received!

Mominatrix · 05/02/2021 14:21

Hi @yikesanotherbooboo. I live close by to both a Japanese grocery store which supplies sashimi grade fish and also a good fishmonger so I go to whichever is convenient that day. I cube the raw fish and serve it with seasoned sushi rice, cubed avocado, grated raw carrot, edamame beans, lightly pickled cucumber , and some kimchi. I drizzle poke sauce which is available from Ocado and sprinkle sesame seeds.

Raw fish isn’t necessary - you can use lightly smokey salmon, tofu, tinned tuna or even chicken. It is a low cook, no fuss, high in nutrient meal which also tastes great.
