@MirandaMarple I've been keen to try a salmon tray bake - can you tell me your recipe please? I usually do salmon parcels in foil with ginger/soy/lime so I'm guessing its a similar flavour?

Monday : Fajitas (because it turns out after my two weeks that in fact my order is only coming tomorrow at 8pm! I have everything except some peppers which I'll buy at local tesco)
Tuesday: Roast chicken, potatoes, vegetables
Wednesday: Gyoza with stir fried veg and noodles [testing out the Itsu gyoza from Ocado!]
Thursday: Salmon parcels, broccoli, noodles
Friday: homemade pizza
Saturday: Roasted tomatoes, chorizo, feta
Sunday: Quiche - bacon, feta, broccoli and salad

Tuesday: chipotle roasted sweet potato, fajitas veggies and guacamole with tortilla chips

Pasta, cavelo nero, ndjua sauce (got a back of goodies off a friend from local Italian deli - the ndjua is awesome) with lemon and Parmesan breadcrumbs

I really need to meal plan on Tuesdays as that’s when I know what’s coming in the veg box on Thursday but I can’t get my head around not planning at the weekend!

It's from a tray bake recipe book which I can't remember the name of as it wasn't my book but it's this

Salmon with any green veg (green beans, broccoli, sugar snap, asparagus) and frozen peas. Roast in soy, sesame oil and and honey. When cooked drizzle with a dressing of sesame oil, ginger, lime juice, spring onion, peanuts and chilli.

I serve with rice or roasted sweet potato.

I'd forgotten about this. Nice to see it still going.

Tonight we've had a cheese, potato and leek bake.
We've got the wherewithal to make:

veggie carbonara

potato/pea dosas and coconut chutney - I'm trying to find a recipe for the thin curry sauce that is often served with them, but if not, we'll probably make a dhal as that will give us leftovers

veggie sausage rolls and homemade baked beans, perhaps - or I'll just make the sausage rolls for lunches

veggie fajitas or burritos

some sort of soup

omelettes and wedges maybe, or egg and chips or Spanish omelette

We'll have a takeaway at the weekend

Meals for the week will be:

  • chicken and veg soup with homemade focaccia
  • butter chicken with homemade naan
  • spaghetti and meatballs in tomato sauce
  • meatball subs for lunch the day after
  • tofu and kale salad
  • salmon poke bowls
  • cauliflour steaks with quinoa
  • vegan Japanese curry with sweet potato and tofu
  • sausage and root veg tray bake

Birthday dinner for DS where he chose the food: sashimi starter, then cheeseburgers and chips with truffle mayo, red velvet cake, ice cream.

Birthday lunch will be giant American hot dogs and crudités. Root beer float.

DS has a craving for American junk food!

We had a change last week as I forgot I'd ordered one of those Restaurant at Home burger kits to try out. Everyone agreed burgers were delicious, the little extras going a LONG way to improving the flavour. However, when I cleaned the pan afterwards I came to the conclusion that the main difference was the fat content!!! The base of my pan was completely covered in solid fat - so all animal fat that came out of the burgers. Delicious but... phew.

We are having a bit of a higher meat to vegetarian ratio this week, with beef three times due to specific requests from the family! Feels weird. Can't remember the last time we ate beef so many times in a week.

Monday - Spaghetti bolognaise
Tuesday - Fish cakes and veg/salad
Wednesday: Steak and veg stir fry with noodles
Thursday: Smoked haddock risotto (recipe I'm trying out from this month's Olive magazine but couldn't get any smoked haddock on weekend so hoping to pick some up when I do the milk/bread run later in the week)
Friday: asian-style mince in lettuce cups (DS' request)
Saturday Chicken pieces with veg and potatoes

Has anybody tried the new Richmond veggie burgers? I'm not generally a big burger fan, but the sausages are so good that I'm tempted to try the burgers. And OH would be a happy man if I planned a burger night.

What are the sausages like? DH and I used to buy the most amazing vegetarian sausages - proper chunks of veg with some mash I think. But we can't remember where they were from and every time I search the veggie sausage aisle I don't recognise them. I thought they were linda McCartney ones but the ones my local store has now don't seem to be the same.

Me and the DC aren't keen on bean burgers so don't usually due veggie burgers. We do occasionally do veggie bakes of one kind or another which usually go down well.

The Richmond sausages are great, but quite 'meaty'. They remind me of the sausages we used to have with crinkle chips in cafes at the seaside as kids!

Mmm, not so keen! Grin. As meat eaters, we like vegetarian sausages where they are more obviously vegetarian. That's why I like veggie bakes too. Will have to keep looking!
