Ooh that butternut cake looks fancy!

Last weeks meal plan ended up serving us for an extra day (we had leftover vegetable pasties one day) so we're shopping tomorrow for the week. We've successfully kept our shopping under £80 for two weeks now and the last one included a case of 24 beers and 4 (Blush) cheap bottles of wine. We do have an excessively well stocked store cupboard with every spice, herb and condiment known to mankind so it might not be so easy in a year's time!

Sunday- Suprise Tarte Tatin with dressed salad- recipe from Ottolenghi's Plenty. I've had the book for years but never tried this recipe.

Monday- Sunshine fusilli pasta from Jamie Oliver's Veg. Basically a sauce made from yellow peppers and Parmesan with crushed pistachios on top. Very quick and easy.

Tuesday- white bean, pepper and mozzarella burgers with tomato balsamic relish. Recipe from Charred. Baby potatoes roasted in oil and a crushed oxo cube (trust me it works) as a side.

Wednesday- Basic veg curry with cheese naan breads. Recipes from The Spicery's curry legend veg book.

Thursday- a mix of frozen dumplings we bought from a Chinese supermarket.

Friday- Homemade pizzas. Goats cheese and Italian charcuterie for DH. Roast pepper, artichoke hearts (from a can I found in the back of the cupboard), goats cheese and pesto for me.

Not entirely sure of the order yet but am thinking:

Chunky winter veg and potato soup
Creamy cannellini beans, courgette and vegan chorizo
Lentil and feta salad (Wednesday looks set to be 28degrees so prob that day!)
Spaghetti squash with roasted tomato and garlic sauce

Going to a carved pumpkin exhibition in a botanical garden on Friday so reckon we’ll get dinner out

We’re a bit end of the month-y here this week.

M - chicken enchiladas and salad
T - sausages, chips, beans
W - Parmesan chicken (basically chicken breasts brushed with olive oil and garlic purée, then coated in Parmesan), mashed potatoes, broccoli
T - veggie stir fry and noodles
F - out for dinner
S - spaghetti carbonara
S - cottage pie and veg

I’m trying to cut out tomatoes because of stomach issues and finding it very limiting - usually we would eat a lot more stew/casserole type things, chilli and so on, but they all tend to have tomatoes as a base.

Judy - as a very awkward veggie who won't eat tinned tomatoes, I often struggle. Fortunately, I'm okay with passata, but so many veggie recipes rely on tomatoes as the 'sauce' and it really annoys me!

@RemusLupinsBiggestGroupie I have been struggling with acid reflux - tomatoes seem to be my nemesis. Over a month we would usually have a chilli, a chickpea curry, a sausage casserole, and a bolognese. I might experiment with passata. Onions, garlic, and spicy food were on the banned list for a while too, but they don’t seem to bother me as much now, thankfully.

I do a chicken satay curry with coconut milk which has been off menu because of the spice, but I think I will put that on next week.

Monday: Aubergine tomato & halloumi pie, salad
Tuesday: Lentil & mushroom ragu, pappardelle
Wed: Three bean chilli, wedges, salsa, corn on the cob
Thurs: Broccoli, blue cheese & walnut tart/ roast veg & mozzarella tart (dc not crazy about blue cheese), salad
Fri: Veggie sausage tray bake

I have had my share of acid reflux issues so I sympathise. Beef and cows cheese was a big trigger for me. Any rice based dish I found quite soothing. So perhaps risottos and paellas etc are your tomatoe-free friend?

Friday: toad in the hole we were meant to have Yesterday
Saturday: veggie tapas
Sunday: tofu spanakopita
Monday: jerk tofu rice and peas
Tuesday: roasted chickpea tacos
Wednesday: gnocci with sundried tomato pesto
Thursday: DP is sorting.

This weeks meals:

Sun- leftover Nepalese takeaway from last night

Mon- Mexican tacos from The Spicery taco legend - papas mexicana, yucatan salsa, mayocrema, red onion pickled in lime and lettuce.

Tues- Khao Soi (Thai curry noodle soup), chicken for DH, tofu for me, topped with leftover pickled red onion and chilli oil.

Weds- veggie mince burritos from Taco Legend again- using leftover salsa, mayocrema and red onion.

Thursday- Dinner out with friends

Friday- DH is out so I'm doing a big bowl of egg fried rice for the first time in ages (he doesn't like eggs Confused)

Saturday- having 6 friends over so we're making a big Indian feast.

Actually we will have to rethink Saturday night because of fireworks, which send our wee cat into such distress. We were supposed to be going for Thai food so maybe the M&S Thai box instead.

Tuesday: steak, mushrooms, new potatoes, greens
Wed: Roasted butternut, spinach and pine nut "salad" with garlic bread
Thursday: fish of some sort - depending on what's available at supermarket
Friday: Roasted cauliflower and baby carrots with pilaf
Saturday: Burgers
Sunday - too far ahead, can't think.

Some delicious food this week guys, I just don’t have time to go shopping and we have plenty in the store cupboard and veg rack so it’s a thrown together week here:

Monday: pumpkin curry
Tuesday: vegan gumbo
Wednesday: roast cauliflower, Brussel sprouts and potatoes with quinoa and harissa and tahini sauce
Thursday: lentil soup
Friday: stir fried Chinese cabbage with leeks and shiitake mushrooms
Saturday: at a B’nai Mitzvah so looking forward to some delicious Jewish food
Sunday: got a giant kabocha squash so prob something Japaneasy with that?!

Today I've made a chilli, chicken noodle soup (then many chicken carcasses in the freezer we're taking up space) and Indian potato pav. It will all do for lunches and dinners when I'm at work.
