Friday: Paella

I've given up even attempting to plan for Saturday/ Sunday. It will be freezer food or I'll pick something up on the weekend.

Ooh I want to join in. We're trying to budget with our food menu this month to figure out our minimum living expenses (DH wants to upsize our house 😬). Trying to be creative and hoping we don't lose momentum.

Saturday: Crispy bottomed dumplings stuffed with butternut squash, broccoli and miso from Jamie Oliver's Veg book. Nepalese Momo chutney from The Curious Chickpea.

Sunday: Grenadian Run down (stew) from The Spicery- so so delicious. Chicken breast for DH, cubed tofu for me.

Monday: Bangers and Mash with peas, caramelised onions and gravy.

Tuesday: Kare Udon (Japanese curry noodles) from The Spicery's world curry legend book. Another chicken breast for DH and the other half of the tofu for me.

Wednesday: Potato stuffed parathas with chickpea chana and diced onions pickled in lemon juice. Recipes from The Spicery's Curry Legend Veg book

Thursday: Bean chilli with rice and cheddar.

Friday: Pasta bake with peas and spinach courtesy of Homepride.

Tuesday: Persian mung bean soup
Wednesday: going out to my fav restaurant
Thursday: either curry or “meat”balls and spaghetti
Friday: we’re camping but no open fires allowed so it might be dehydrated mushroom risotto or simialr

Yesterday was a simple veggie roast
Today was butter beans and vege, cooked in cider and made into a pie
Tomorrow is puy lentil spag bol
Then we've got, in no particular order:
A kind of oven roasted ratatouille but with peppers and mushrooms, rather than aubergine and courgette, with baked potatoes
Crepes with mushrooms and spinach cooked in white wine and soured cream
Veggie sausages with sweet potato mash
Omelette and chips/salad
Quinoa with feta and beetroot
Some sort of soup

I love the Spicery cookbooks and would highly recommend them. Their spice boxes are brilliant too but less budget friendly and more of a treat. I've had the original curry legend and taco legend books for ages but bought the veg and world curries when they went on offer. I'm patiently waiting for the mezze book to be released this month.

@MilduraS welcome! Have you done the dumplings from Jamie's book before? I must haul my copy out again as I've got a few recipes in there that I've flagged and must make. He inspired me to get back into quiche making for a while and I always like his recipe books. I remember seeing those dumplings but from memory, wasn't sure I could handle the faff?

Yes the Jamie Oliver dumplings are a regular on our meal plan! I would have thought they were a faff if I hadn't seen him making them on the show. We throw the butternut squash in the oven then leave it for about an hour while we do other things. The rest of the prep is 10 minutes now we've had some practice, maybe up to 20 the first few times. I've found that the more wine I've drunk the better they come out. I get a bit brave with the amount of filling and fold quickly without overthinking Grin

Last week went really well. The potato parathas with chana masala was the biggest success. The diced onion in lemon juice made it taste special.

Saturday- squash and parsnip Dhansak from The Spicery curry legend veg book, pilau rice

Sunday- everything but the meat roast dinner- roast potatoes, parsnips and carrots, broccoli cheese, garlic butter green beans and James Martin's Yorkshires.

Monday- squash and spinach risotto. Recipe made up as I go along.

Tuesday- Vegetable pasties filled with mixed veg. Pastry recipe from Jamie Oliver veg, filling I make up as I go along.

Wednesday- pizzas- dough and sauce from Hugh Fearnley Whittingstall's veg book, griddled courgette, goats cheese and balsamic glaze for me. Italian meat and goats cheese for DH.

Thursday- tagliatelle with creamy porcini sauce and green veg. Recipe will be made up.

Friday- home made chips with any leftover potatoes, Chinese curry sauce (the goldfish one) and stir-fried greens

Tuesday: veggie balls with spaghetti squash and marinara
Wednesday: chickpea frittata with green goddess dressing and micro greens
Thursday: out for dinner at my fav vegan restaurant
Friday: pizza for everyone else. Fast day for me so prob mung bean soup out of the freezer

Just spent a fruitless 10 minutes looking for my Jamie Oliver vegetarian recipe book. Need DH to come try with "fresh eyes" later.

Monday: Thai red curry soup (using up the last of the vegetables from last week).
Tuesday: bacon and leek carbonara
Wednesday: Baked chicken in lemon and garlic with veg and potatoes
Thursday: Fish cakes
Friday: Butternut risotto

We're eating out on Saturday and at a friend on Sunday, so that's glorious!

I just stumbled on this thread after posting on one about sausage casseroles - I hope you don’t mind me joining. It’s really interesting to get ideas from everyone’s plans.

A chicken-y week here, partly because we had a roast on Sunday so had leftovers for Monday.

M - chicken and red pepper risotto
T - roasted veg and veggie sausage traybake with feta
W - sweet and sour chicken with rice
T - sweet and sour again
F - lasagne with peas
S - “fake Nando’s” - their peri peri spice on chicken, in pitas with spicy rice, salad, and coleslaw
S - enchiladas and salad

There’s just me and DP so we often have things which go over two nights.

Fri - we share a tesco stone baked pizza with salad and olives

I'm doing us a curry tomorrow, with sweet potato, chickpeas and spinach.

Out for v naice lunch on Saturday, then cheese and crackers for tea.

Sunday I'm going to do veggie lasagne but might put some spinach in it too to use it up.

Monday is jacket potatoes and cauliflower cheese.

Then I'm away for a few days.

It's not actually unusual at this point for me to ONLY have my meal plan on this thread, and not anywhere else! Grin

I love a bit of spinach in veggie lasagna. I usually make mine with roasted tomatoes, butternut, aubergine, onion etc but sometimes use a ricotta/spinach mix for the cheese sauce layer rather than traditional cheese sauce (or mix the spinach into the roasted veg). I have been planning to make some soon. It's such a faff but about once a year I do a big batch of both veggie and meat lasagna and freeze in various sized portions in tinfoil baking dishes as it's such a convenient cook-from-frozen option, especially if we're not all home or there are last minute plan changes.

Love the idea of butternut squash in a veggie lasagne. I had butternut squash cake with butternut squash custard today, and pickled butternut squash. Delicious!
