Tonight- veg and rice noodle stirfry with lime peanut sauce

Tuesday: jackfruit massaman curry
Wednesday: roast onion tarts with new potatoes
Thursday: DP sorting

Paella
Sausages and mash
salmon and noodles

Curry of some sort... tbd.

Trying very hard to eat properly after more than a few weeks of a lot of toast.
Today was a recipe someone posted on here, roasted bns and ginger tomatoes.
Stuffed peppers from The Green Roasting Tin. Title says with olives, none in the ingredients

Just checking in so I don’t drop off the list, off on holiday tomorrow until Sunday and no idea what we’ll eat!

Just dropping in to say our dinner tonight went off plan so we could use up stuff that was knocking about, and was actually really delightful. It’s a basic bitch pasta bake, so not for the foodies, but might inspire someone who is a bit stuck.

I cooked pasta in one pot, broccoli in another, added frozen peas to the pasta near the end. Drained, stirred through a jar of pesto and some grated mozzarella, and a wee bit of water. Into a Pyrex dish. Topped with sliced goats cheese, then baked in the oven for 20 minutes at 5. For a quick “using up tired veg” dinner it was exceptionally tasty.

@WhatonEarth1 what feta do you use? Old timers to this thread may recall that I am a little obsessed with feta and frustrated that I've yet to find a block feta that isn't slightly sour. I have Greek family and grew up in another country and my standards are high! I love baked feta but never do it due to bad feta. Nigella Lawson recommended a barrel aged one on Twitter a while back that I need to go back and try but any suggestions welcome....

M - macaroni cheese and peas
T - same - there’s just me and DP
W - chickpea and spinach curry
T - chicken breasts, salad, chips - or mash and veg depending how the weather goes
F - takeaway pizza
S - out, probably Nando’s
S - DP is away for a fortnight from here unless his work cans travel after this weekend’s announcement, so I will probably be eating a lot of soup, scrambled eggs on toast and so on. Also fish which he hates so I only have if he’s away or we’re out.

This week
M: vegetable enchiladas
T: mixed grill ((with mushrooms, tomatoes and oven chips)
W: stuffed chicken breast
T: veggie cottage pie
F: pho
S: DH and I are out so DC having pizza
S: baked potatoes with slow cooked barbecue lamb and sweet peppers.

We actually started from yesterday as shopping routine out of whack:

S: Lamb casserole (was delicious)
M: Baked lemon and garlic chicken with veg and yorkshire puddings
T: Pizza with garlicy greens and taleggio
W: Halloumi, chargrilled veg, lemon and honey dressing and flatbreads
T: Fishcakes
F: Spaghetti bolognaise

Monday: baked gnocchi, cannellini beans, peas, sun dried tomatoes and olives with vegan feta (sorry @SpaceOP!)
Tuesday: I’m out with a friend so DH and D.C. are having steak and chips
Wednesday: miso tahini pasta with mushrooms and green beans
Thursday: Buddha bowl with quinoa, squash and black beans
Friday: pizza night
Saturday: out with DH

@Kobanidaughters Vegan feta!?

Please talk to me about miso tahini pasta with mushrooms and green beans. We love all of those ingredients in this house but have never considered putting them together. Actually reminds me that I must do a baked, stuffed mushroom soon as we haven't had that for ages.

@Kobanidaughters I have to admit that recipe doesn't read like one I'd usually do. Coconut milk with pasta feels odd to me but I think I might give it a go - try new things and all that! . If I leave out the nutritional yeast is that okay? It's not something we have on hand?

@MilduraS bit late but is it possible to have the chilli halloumi recipe ? Is worth buying the spicery book I'd never heard of it

@SpaceOp I have no idea! I haven’t done it before either - I felt the same about the coconut milk and honestly would usually sub with blended cashews for creaminess but can’t get hold of any raw cashews so will either do the coconut or use oat milk….

Okay, in that case, I'm going to wait until you report back...

Didn’t put one up last week as I was so miserably uninspired it would ha been depressing!

Friday: leek, kale and ricotta lasagne
Saturday: going for a curry with the in laws
Sunday: root veg stew with herb dumplings
Monday: Mshosh (type of lentil salad) with flatbread
Tuesday; baked teriyaki tofu with veggie fried rice
Wednesday: veggie kofte with flatbread, hummus and tzatziki
Thursday is DPs day as ever

@SpaceOp did it last night and it was very tasty but yes quite creamy and coco nutty, DH who normally isn’t a coconut fan still likes it but next time I will try the blended cashews for a different flavour profile. Great comfort food!!

Out for dinner tomorrow
Sat - stone baked pizzas at home
Sun - out again, spa break and dinner at hotel with my Sister and breakfast the next morning. It was a a gift last January for a big birthday of ours from our lovely friends (twins), long overdue!

Rest of week - dust!
