Just done an order - feeling a bit lazy and uninspired:
Pad Thai (again, because it was so delicious last week)
Stuffed peppers with garlic roasted potatoes and salad
Roasted vege with halloumi in flat breads
Something with paneer - maybe with chickpeas and naan
some sort of vegetable/lentil soup maybe
Goats cheese and pesto pizza with rocket

I am sooooooooo uninspired! It’s that weird time of year here where it feels like I should be making casseroles and pies but the lowest temperature is 24degrees!

Monday: halal street chickpeas and turmeric rice
Tuesday: tofu and kimchi hotpot
Wednesday: stuffed tofu ricotta pasta shells with fresh tomato sauce
Thursday: Korean japchae noodles
Friday: probably pizza as per usual

@RemusLupinsBiggestGroupie how do you do your pad thai? I did one with a recipe I found in a magazine and it wasn't bad.... but it wasn't amazing either. Although there may be an element of user error here! :)

Still need to work out this week but I think we're looking like a relatively boring one (like @Kobanidaughters I feel uninspired and like we need to move to different types of food).

Lamb curry with leftover lamb from sunday dinner.
Roasted cauliflower and carrots with "pilaf"
Chicken & chorizo paella
Mushroom/aubergine/goats cheese burgers... if I can find the recipe I so carefully tore out of a magazine a few weeks ago

I've totally made up the recipe, so may be completely inauthentic!

Make sauce -
couple of big dollops crunchy peanut butter
lime juice
soy sauce
sweet chilli sauce
hotter chilli sauce (sriracha)
sesame oil
Keep adding/mixing until it tastes nice!

Fry tofu
Remove and wipe pan
Fry a finely diced shallot or onion and some garlic
Add baby corn, little matchsticks of carrot and fry (could use sliced peppers as well or instead, or matchsticks of courgette etc)
Add mange tout
Add noodles - I use these and tofu

Pour over sauce and warm through
Serve topped with coriander and peanuts (salted if feeling bad, in skins if feeling more virtuous) and chopped spring onion

You can add crunchy onion bits as topping too if you cba to fry any, or have one of those pots of salad toppers.

Can substitute add various kinds of vege. Can roast the tofu in a bit of oil and five spice instead of frying if wished - can do this much earlier in the day and then cut it into matchsticks and add just to warm through.

@RemusLupinsBiggestGroupie I love the vagueness of that. I'm not entirely sure it's terribly authentic but I like it and will give it a go - basically anything with peanut butter goes down a treat over here!! :)

The recipe I used would probably have been improved with the use of an actual wok. The main thing I remember is that it included tamarind paste which I'd never used before as Asian cooking is relatively new to me.

I have to say that my veggie burgers with aubergine, mushrooms and goats cheese were AMAZING. I landed up making aubergine/goats cheese stacks and adding chopped fried mushrooms but might try aubergine/mushroom/goats cheese stacks next time for convenience. The recipe suggested a little honey which was definitely a game changer! DS loved them too - to be fair, he loves vegetarian food generally but in light of his love for regular burgers, I was a bit nervous!

Having taken requests from the kids this week to avoid doing too much thinking of my own, I've got the next five days. But no vegetarian meals so we'll have to do veggie on both Saturday and Sunday I think!

Bit of a boring week because we’re just mega busy:

Monday: instapot lasagne soup
Tuesday: DH&DC having steak and mashed potato, I’m babysitting for a friend so might treat myself to a take away
Wednesday: Persian mung bean soup
Thursday: pasta pesto
Friday: pizza night as per

We had veggie chilli tonight, with mango salsa.
We'll have the rest of the chilli tomorrow, maybe with wedges or a jacket potato.
Still haven't eaten the halloumi or paneer from last week, so will have those at some point.
Vegetable pie or cobbler or crumble or something of that ilk.
Something with cheese, potatoes and leeks.

Was in the need for comfort food.

A simple week as I'm back at work after 18 months of furlough...

Out for dinner and drinks in the village we moved to last summer...the first time! Chinese and a there's a couple of wine bars...
