I've totally made up the recipe, so may be completely inauthentic!
Make sauce -
couple of big dollops crunchy peanut butter
lime juice
soy sauce
sweet chilli sauce
hotter chilli sauce (sriracha)
sesame oil
Keep adding/mixing until it tastes nice!
Fry tofu
Remove and wipe pan
Fry a finely diced shallot or onion and some garlic
Add baby corn, little matchsticks of carrot and fry (could use sliced peppers as well or instead, or matchsticks of courgette etc)
Add mange tout
Add noodles - I use these and tofu
Pour over sauce and warm through
Serve topped with coriander and peanuts (salted if feeling bad, in skins if feeling more virtuous) and chopped spring onion
You can add crunchy onion bits as topping too if you cba to fry any, or have one of those pots of salad toppers.
Can substitute add various kinds of vege. Can roast the tofu in a bit of oil and five spice instead of frying if wished - can do this much earlier in the day and then cut it into matchsticks and add just to warm through.
