@IndiaDreaming Do you have a recipe for the chickpea goulash with herb dumplings please? It sounds like a lovely winter warmer.

Today we’re having a one pot cheesy lentil pasta.
Sat: Chickpea burgers, salad, pittas, yogurt dressing
Sun: Cod with lemon caper sauce, sautéed potatoes & greens
Mon: Chilli garlic tofu, nut & veg stir fry with rice
Tues: Veggie sausage tray bake
Wed: Veggie tikka masala, onion bhajis, naan
Thurs: Seafood macaroni cheese
Fri: Bean & veg chilli

@WhatsMyNameGonnaBeNow I saw someone else mention it up thread. I think I'll use the Jamie Oliver dumpling recipe that he uses for his Cajun spiced bean stew then look up a veg goulash recipe.

Thanks. I'll try it. Although my courgette glut might finally be coming to an end. I haven't had a random neighbour attempt to foist one on me for at least a week!

Yes - the satay recipe was with sweet potato and I used butternut. But I'm not a fan of sweet potatoes myself. But at the end of the day, it's a curry paste, with peanut butter, a few extras, coconut milk. I could do it with aubergine and potato and spinach and it would be similar. Grin

The dumpling recipe isn't a Jamie Oliver one, it's from here. It uses sweet corn, cottage cheese and SR flour. Surprisingly really good!

Wednesday: Roast chicken
Thursday: Chicken curry/soup
Friday: Steak, new potatoes, veg

OMG I have just spent far too long looking at these meal plans, hope it's ok for me to join in?!

I'll start from Saturday which is when our meal plan starts!

Saturday: Picky as we'd had lunch out
Sunday: Roast Beef - yorkies, potatoes veg etc
Monday: Sausage & Chilli Ragu Pasta Bake
Tuesday: Salmon Fishcakes (I think depending if I get a recipe, if not salmon fish fingers) and wedges and peas.
Wednesday: Jamie Oliver's Crispy & sticky chicken thighs
Thursday: Thai Red Chicken and Cheery Tomato Curry
Friday: Pork Loin, apple sauce, glazed baby carrots, and duchess potatoes

Already thinking about next week!

Am regretting decision to leave the weekend and beyond until now. But to be fair, our fridge can barely cope with the quantity of food we're filling it with currently so planning meals more than a few days ahead of time is a bit difficult. We've admittedly being buy extra as we've had guests a lot over the last 2 weeks.

I might have go to back to my spreadsheet because I can't think of anything I want to cook!

Not sure entirely of the order but here’s what I fancy doing this week:
Puy lentil, raw fennel and rocket salad and carrot, orange and cumin salad
Stuffed cabbage rolls
Thai sweet potato soup
Veggie burgers
Thai veg noodle salad
Might give raw burritos a go but suspect I’ll be the only one eating them!

Yup I made a proper plan:

Sunday: thai sweet potato soup
Monday: potos granados stew
Tuesday: ramen
Wednesday: carrot, orange, chickpea and cashew salad with crunchy baguettes
Thursday: home made veggie burgers, new potatoes and green salad
Friday: think DH and I will go out for dinner

@KobaniDaughters what type of veggie burgers do you make? We used to do carrot and tahini ones that DH LOVES and I quite like but DS hates them. I have tried one ready made one that was nice, but I can't remember what it was or where I bought it (have a similar issue with a veggie sausage we used to eat all the time when DH was a veggie years ago. So frustrating)! I have been meaning to try a veggie burger of mushrooms and goats cheese I saw a recipe for (just got to find it now...) but am always on look out for options.

Mon: Halloumi with chargrilled greens, honey, lemon and garlic
Tues: Tortilla and salad
Wednesday: Chicken tray bake with veg and yorkshire pudding
Thursday: "Asia mince"
Friday: Tuna jacket potatoes with salad.

This week we've had:
roasted new potatoes with salad and cauliflower cheese grills (Sainsbo's frozen)
butterbean and vege pie
veggie pad Thai (this was so delicious!)
a terrible takeaway curry that made me ill and that I wish we hadn't bothered with
nut cutlets (frozen) with giant Yorkies and a load of roasted root vege
