@TheMethodicalMeerkat Some cheese is fine, it's just the idea of a full blown cheese sauce! Grin. But I'm thinking I need to get creative with pasta bakes. We have been eating less vegetarian food recently and although we eat loads of veggies with our meat/chicken/fish, I feel I'm missing a trick. But you have inspired me. A version of macaroni cheese but with a high ration of additional vegetables so it's a more of a bake, could really work.

TheMethodicalMeerkat · 01/04/2021 12:43

Yes definitely @SpaceOP, a macaroni cauliflower cheese hybrid with broccoli and leeks is lovely and much healthier than just macaroni cheese. In fact I should pick up some cauli for Saturdays bake really shouldn’t I? The sauce needs to be quite rich as the veggies can water it down a little.

MirandaMarple · 02/04/2021 08:56

For a mac n cheese, Jamie Oliver does one with spinach, broccoli, peas, leeks but it does even itself out with cheese...

RemusLupinsBiggestGroupie · 03/04/2021 19:30

Nice to see this still going!

I'm currently making a quiche, which we're going to have with new potatoes and salad. Eating later than intended, but it's nearly ready now.

I think tonight might be pasta:
Roasted vege, with a sauce made from white wine, cream and pesto. Chorizo for the carnivores.

Ooh... can't believe I haven't seen this thread before, love a good meal plan!
M - something + leftover veg from yesterday's roast (possibly homemade sausage rolls at DH's request);
T - fish finger sandwiches & salad
W - tuna jacket potatoes & salad
T - vegan chilli (Deliciously Ella recipe, it's amazing), cheese, jackets
F - lemon & olive spaghetti
S - something from the freezer + chips, most likely

Lunches will be sausage rolls, sandwiches, veg sticks etc.

KobaniDaughters · 06/04/2021 03:51

Had the garlic roasted white cabbage steaks for dinner tonight and with roast potatoes and white beans instead of orzo and it was amazeballs

KobaniDaughters · 06/04/2021 06:36

Poor DD is having mega tooth surgery on Friday which is sad for but great for us because I don’t have to take her particularness over food into account over the next few days! Done the remainder of the week as veg box comes on Thursday:

Thursday: olive and red pepper hash (thanks HFW)
Friday: pizza as per
Saturday: spaghetti and meatballs
Sunday: gumbo and Cajun rice
Monday: baked feta, salad and crusty bread

SpaceOp · 06/04/2021 15:17

@Kobanidaughters garlic roasted cabbage steaks? That sounds good. Do you have a recipe? I love cabbage but we don't eat it nearly enough.

I have to start meal planning as my last lot finishes tonight and frankly, I can't think of anything I feel less like doing. Sigh.

MirandaMarple · 06/04/2021 16:14

I've already done next week mostly based on what I already have.

Prawn and chorizo skewers with gremolata
Breaded chicken, German potato and bacon salad, pickles
Veggie bean burgers in buns, chipotle mayo, wedges
A roast chicken (need to buy)
Squash, aubergine and coconut curry, sag aloo, naan, chutney, raita
Nduja pasta

KobaniDaughters · 06/04/2021 16:25

@SpaceOP slice your cabbage into thick steaks, spread butter on one aide and sprinkle with garlic powder, celery salt and pepper (I put a LOT of garlic powder), turn over onto a baking sheet and do the same the other side. Bake in a hot oven about 20mins each side SO GOOD

RemusLupinsBiggestGroupie · 06/04/2021 16:46

The cabbage sounds delicious.

Kobani - hope all goes well for your dd. Sounds horrible.

I'm making aloo ghobi for tonight, with bought naan breads. Reduced M&S trifle for pud!

Just regular cabbage? How do you stop it from getting all broken up? I can see I need to try this (although don't have garlic powder or celery powder as I'm not usually a fan. Assume I can use some regular garlic mashed into the butter instead?). Mmmm, DH clearly won't eat it as too much butter but I think DS and I might enjoy this.

KobaniDaughters · 07/04/2021 15:28

Cut thick steaks and keep the stalk intact - I made 3 out of a fairly large cabbage and kept the outer pieces for other meals.

Yes you can totally use mashed garlic or basically any herbs and spices and you can prob sub oil over butter

I’ve also made this with red cabbage steaks and it’s also really good

lastqueenofscotland · 08/04/2021 10:46

Done mine for the week
Tomorrow: big day at work... I’ll be getting a takeaway
Saturday: gnocchi with sundried tomato pesto (home made)
Sunday: aubergine and potato balti
Monday: dandan noodles
Tuesday: spicy burgers with wedges and salad
Wednesday: jerk tofu with rice and peas

lastqueenofscotland · 08/04/2021 10:46

As ever DP does Thursdays.

RemusLupinsBiggestGroupie · 08/04/2021 13:09

I've just done an order and it's going to be something along the lines of:
tonight - new potatoes, salad and bits from the freezer
tomorrow - either hotdogs or a chilli, depending on what we fancy
Saturday - risotto
Sunday - pie, mash and vege - might make some cauliflower cheese
After that -
Quorn fajitas
teriyaki tofu (not tried this before)
either the chilli or the hotdogs that we didn't eat on Friday
spag bol
some sort of curry or stew with wild garlic flatbreads (if I can find some wild garlic!)
Not very inspiring but things everybody will eat without complaint

OP posts:
SpaceOp · 08/04/2021 14:11

My attempt at "inspiring" this week is to make non-tomatoes-based pizza (DD has said she doesn't like pizza because it "burns" her throat! I think we've all lost our enthusiasm.

Roast chicken
Chicken fajitas
Tuna steaks with chargrilled greens and new potatoes
Roasted vegetables
Jacket potatoes with tuna (tinned this time!) and salad
PIzza (no tomato)

I've abandoned attempts to do 7 days at a time. I just find it too stressful and we go back to the shop too often. So I'm doing 5 or 6 days at a time, maximum now. And it really does make me feel less stressed (except when I can't get an online order too many weeks in a row).

Fivemoreminutes1 · 08/04/2021 16:39

For this weekend and into next week:
Sat - loaded baked sweet potatoes
Sun - spring veg and butterbean stew with cheesy herby dumplings
Mon - Quorn steak strip and onion pie
Tue - bean burgers
Wed - spinach and ricotta pasta shells
Thur - tofu fried rice
Fri - Quorn fishless finger fajitas

RemusLupinsBiggestGroupie · 08/04/2021 17:31

SpaceOp - I can also only cope with 5 days or so at a time. Otherwise, I risk things going to waste.

This stew sounds lovely. Any chance of a recipe, if it doesn't involve tomatoes?!

@RemusLupinsBiggestGroupie

I use this recipe, but with butter beans instead of borlotti anythinggoeslifestyle.co.uk/recipe-spring-vegetable-casserole/
I use the dumpling recipe from here www.deliciousmagazine.co.uk/recipes/beef-stew-with-cheesy-dumplings/ I omit the mustard because dc don’t like it, and add the dumplings to the stew about 15mins before the end of cooking

RemusLupinsBiggestGroupie · 08/04/2021 20:02

Thanks, Five. That looks lovely, and butter beans definitely an improvement on borlotti.
