With supermarkets slightly better stocked I’m back to meal planning

Please share yours!

Mine was/is

Yesterday: lentil shepherds pie with green beans
Tonight: teriyaki fried rice
Tomorrow: dahl with garam masala roasted cauliflower
Wednesday: fajitas
Thursday: falafel and hummous salad

This week:

Mon: greek salad with anchovies and crusty bread
Tue: roast chicken, jacket potatoes, quiche, and salad
Wed: teriyaki tuna steaks with rice and spinach
Thu: sausages mash and peas
Fri: spaghetti meatballs
Sat: fishcakes with potato wedges and broccoli
Sun: macaroni cheese with leeks and bacon

Lunches are various sandwiches, soups with cheese on toast, salmon and scrambled eggs, avocado on toast, things like that.

Yesterday-home made burgers and potatoes
Today- chicken cacciatore with rice
Tomorrow - chicken cacciatore with potatoes!!
Thursday- Pork chops (not sure how yet)
Friday -Duck(ditto)

Breakfast is porridge, cereal, eggs.

Lunches are bread, cheese, ham, salads etc
Today we had sausages at DCs request.

Hope to bake something simple this week too.

Case in point re meal planning, DH went to buy a bottle of wine yesterday and cane back with bacon as well so we had spaghetti carbonara, I shunted the rest of the week’s meals on a day and put the spaghetti bog in the freezer instead

I have really got into meal planning the last couple of months.

Monday - salmon with sweet chilli sauce and asparagus
Tuesday - mushroom risotto
Wednesday - corn dogs and chips
Thursday - making a bolognese from the freezer into chilli with rice
Friday - fish pie
Saturday - pasta with pesto
Sunday - braised beef short ribs

There will be veg interspersed as needed.

I usually fry pork chops, spit out alot of fat all over the place though, hence why I don't do them often now. I'm sure someone will come up with a better idea. I was watching Rick Stein where I think they were casseroled somehow, not how I would like them. If they are thin frying is quite quick.

Tues - tinned soup/Chicken kiev, new potatoes and veg
Wed - tuna sandwiches/bean and pepper quesadillas and salad
Thurs - bacon and avocado roll/spinach and ricotta tortellini and salad
Fri - chicken and broccoli pasta salad/chorizo and bean stew
Sat - tuna bagels/roast chicken legs (not sure of sides yet)

I need to plan out lunches, doing our nearly fortnightly shop on Wednesday

Monday: mujadara
Tuesday: Mexican rice/burritos
Wednesday: a big bloody bowl of fresh vegetables and salad
Thursday: soba noodle and tofu salad
Friday: pizza night for the kids, black eyed peas and cornbread out of the freezer for us
Saturday: black pepper tofu and chilli linney butternut squash
Sunday: broccoli leaves, chickpea and tamarind stew
Monday: veggie lasagne
Tuesday: romanesco, olives and caper spaghetti
Wednesday: curry night
Thursday: sheperdless pie
Friday: pizza night
Saturday: mushroom risotto

I love a good meal plan thread. It’s just me here cooking for one. Here are my rough thoughts in no particular order for the week.

Crustless quiche/tortilla (bacon, spinach, potato, cheddar, bell pepper)

Angel hair pasta with Italian sausage, spinach, tomatoes and mozzarella

Fried Salmon with a side of haricot verts and cauliflower rice cooked in the tasty leftover salmon oil

Black bean soup (boxed) along with chicken thighs for extra protein

Chocolate chip cookies

Thurs: sea bass with potato dauphinois and spinach

Here us the plan for the week:

W: veggie burgers with mixed salad on the side/ Sesame noodles with sautéed greens

Th: carrot and coriander soup with bread/ spaghetti with meatballs

F: Homemade roti canai with red lentil curry/ braised pork belly and hispi cabbage

Sat: eggs benedict and fruit salad for brunch/ grilled salmon with miso risotto and steamed greens

Sun: roast chicken, roast veg, potato and celeriac boulangere, lemon polenta cake/ leftovers from the past few days for dinner

M: chicken pot pie from leftover chicken and veg/ veggie korma with homemade naan

T: tuna melt sandwiches with crudités/burnt aubergine veggie chilli (idea I stole from another person on one of these threads)

Waaaaa my romanesco didn’t come in my veg box BUT DH scores beyond sausages so swapping out the romanesco pasta for sausage stew it might attempt vegan toad in the hole

Hello all!

We had an off plan italian meal last light with home made focaccia and pasta which was delish

Next few days are looking a bit like this I think:

Thursday: veg box delivery so I think a big salad bar
Friday: pizza night
Saturday: 2 potato vindaloo and lentil masala. Might try my hand at home made naan
Sunday: it’s Mother’s Day here and I’m working do DH is on it (probably Japanese fried rice and tofu)
Monday: cauliflower steaks, fingerling potatoes and fresh tomato sauce with parsley pesto
Tuesday: mushroom risotto
Wednesday: sheperdless pie

Nice sounding week Ijumped!
Went shopping tonight after work as in all day tomorrow and won't finish before shops close, was super busy..
F - quorn escalopes, chips and peas
S - popcorn falafel and hummus
S - halloumi salad
M - gnocchi bake
T - tofu pad thai
W- jacket potatoes

Popcorn falafel will be our new try from the Bosh book. The pad thai was fab, had it last week too.

I'm having a bit of a bagel addiction now so lunches for next week will be bagels with various fillings - chicken tomato and avocado, tuna sweetcorn mayo, egg mayo...

Dinners will be:

Sun - Chilli
Mon - Sweet potato dahl
Tues - pasta with creamy courgette pesto sauce
Wed - quiche and salad
Thurs - Greek salad pasta
Fri - cod with courgettes, beans and chorizo
Sat - steak and chips
Sun - chicken thighs with lemon, rosemary and asparagus

Trying to use up some freezer food and jiggled around a little:

Monday: adding braised cabbage steaks to the cauliflower and fingerling potatoes!
Tuesday: remembered it’s my birthday so I’m not bloody planning ANYTHING, let’s see what they come up with
Wednesday: sheperdless pie out of the freezer
Thursday: OMG burgers from Oh She Glows
Friday: pizza night
Saturday: mushroom risotto if we haven’t gone shopping yet

I wanna go a roast next Sunday but am working, wonder what will happen if I put a vegan wellington recipe in front of DH 🤔

Can I ask all you fabulous cooks for some inspiration, daughter (19) is a good eater but doesn't like stew or oven roasted tray bakes, and I'm not so keen on pasta. Can anyone inspire me?

We do the same every week:

Monday: leftovers
Tuesday: tacos/burritos
Wednesday: chicken thighs
Thursday: fish
Friday: pizza night (homemade)
Saturday: vegetarian (cramming in as many vegetables as possible)
Sunday: roast or bbq

We only implemented this in lockdown to prevent over buying of random things and I'm loving it - enough flexibility to have fun cooking but also making sure we eat healthily with very few leftovers. Have a newborn and 2 primary aged kids too, so limited capacity for thinking!

@Imtoooldforallthis does she like salmon? For our fish this Thurs I mixed tahini (whisked with water first), miso paste, apple cider vinegar, agave and marinated salmon fillets and chestnut mushrooms in it. We did them on the bbq but grill would work too. Was delicious and my meat-loving boy loved the salmon (unusual) I think because the miso gives it loads of umami. We had it with salad and brown rice. Only takes 5 mins to prep and 10 mins to cook.

Sulky, that sounds delicious but I don't think I can get miso paste, we only have a co-op and aldi nearby, but I might do salmon anyway, what do you serve it with.
