Can't believe I've never tried this before! It's lovely and doesn't taste dairy free (it's the creamy garlic and herb). What vegan foods do you all love Smile

One meal a day...I did that with my soup,I lost a lot of weight too..but it's going back on now I'm eating more....also I find after have years of starving/ binging /puking/ I get faint if I don't eat .so I'm trying to just have 3 low calorie meals a day..salad and vegan fish fingers..I'm not eating bread or pasta or potatoes either..

Slimmingsnake · 19/02/2017 16:59

Banana muffins(scotgirl recipe from MN adapted from just egg free)
Makes 6
Preheat oven 190oc,gas 5(170oc fan)
2tbsp vegan butter, melted
2tbsp nut milk
2 bananas,mashed
1tsp vanilla
Mix tog

1cup+2tbsp(150g)self raising flour
1tsp baking powder
Fold in til just mix(add handful choc chip, dry fruit, chop nuts or seeds at that point too if wished)
Bake 20mins til golden brown

Stilllivinginazoo · 19/02/2017 17:11

Forgot add I've learnt very important cool banana vegan muffins on rack NOT in muffin tin or they absorb steam and go soggy!!
The mix may seem but squidgy, but it firms as cools

EEK.FORGOT SUGAR-ADD 2tbsp WITH FLOUR any type(or you can add liquid sugar with butter and melt together)

Stilllivinginazoo · 19/02/2017 17:13

Liquid sugar I mean maple syrup etc
(Apologies I was up at 4 and getting tired!!)

Slimmingsnake · 19/02/2017 17:15

Thanks will try to make this week...so went to sains today and their vegan mince...is no longer vegan....WHY WHY have they put milk in it..it was fine as it was...

I am off cheese because of migraines. I have found that the cheese substitutes and indeed tofu are all matured - and that is the source of the migraine trigger, because maturing these tnhibgs creates tyramine.

Can anyone please suggest a cheese substitute that would not have this problem?.

Vegansnake · 19/02/2017 17:24

You could asking in holland and Barrett...sorry I had to namechange..but I'm still me..slimming snake

FishlessCake · 19/02/2017 17:27

The pancake recipe I used was on allrecipes.co.uk but I adapted it as it works better like this
150g plain flour
2 tea spoons of bakin powder
2 heaped table spoons sugar
Pinch of salt
2 table spoons of oil
300ml (soya/nut milk)
Whisk all together and fry (in dairy free spread is best for taste not oil).

Would it work without any oil or fat

FishlessCake · 19/02/2017 17:33

I'm not sure but from a diet point of view 2 spoons of melted dairy free spread would have less calories than oil.

2tbsp across 6muffins is very little fat to be honest.I guess you could try sub apple puree, but personally I wouldn't.
I was in pinterest earlier and saw a choc muffin with Raspberry's that used mash avocado stead oil.they did look very very tempting.....

Vegansnake · 19/02/2017 19:49

That's a thought.avocardo

FishlessCake · 20/02/2017 15:53

Oh that's rubbish about Sainsbury's mince. I was going to make a trip to stock up on it, but won't bother now. Any recommendations for alternative? I liked that one as it had texture and flavour.

Does anyone know if their vegetarian meatballs are still vegan? Just finished up the last packet in our freezer.

economymode · 20/02/2017 20:05

Oh and I've tried avocado in chocolate cake. Wasn't a fan!

FishlessCake · 20/02/2017 20:28

Not tried any sainsburys products myself (there's only one tiny store in the whole of Pembrokeshire). Tesco are suitable.

I'm yet to try avocado Blush
