If you had/are having a vegetarian dinner what is it?

I've been cooking veggy food a lot lately. We all love it, it's cheaper and it's healthier (usually). Still eating lean meat, chicken and fish but not as much.

Tonight I made lentil loaf, veg sauce (peppers toms etc...) and sweet potato wedges all done in the oven. Apart from first bit where I have to cook lentils and onions on the stove.

So what did you have for your vegetarian dinner? Or what do you have when you eat veggy food?

Dp made minestrone soup yesterday (Delia recipe) It was gorgeous. Even a very fussy friend loved it Smile

I am veggie and had left over spinach and feta pie (Jamie Oliver recipe) with sweet potatoes, carrots and sweetcorn and some sald that was also left over.

Tomorrow we are having baked rice and veg dish.

For lunch I has veg soup.

Thursday I think we are having cannelini bean casserole.

Tonight it's just home-made leek and potato soup and bread. Yesterday we had a mushroom, leek and potato frittata, and at the weekend I made quorn and mushroom stroganoff (recipe from the Quorn website!).

we had potato and squash curry, cabbage thoran (coconutty, cabbagey, spicy thing) and pilau rice

yesterday we had pesto and vegetable tart, potatoes and sweetcorn

rather dull but gnocchi with a tomatey-hidden-veg sauce and cheese.

Tomorrow will be wild mushroom risotto and garlic bread.

Not veggie, just poor!

I'm having sweet potato curry - yummm! Had mixed bean chilli stew with cous cous for lunch. I gave up meat a few months ago and have barely noticed tbh, except for when eating out at friends' houses over CHristmas / New Year. I want to make some home made homous tomorrow.

Had a really nice cous cous today and used all the old veg we had in the fridge chopped and fried in to it. Came out really tasty even though it cost practically nothing

Own recipe butternut squash stew (incl. onions, peppers, tomatoes, spinach)with brown rice. Easy, cheap, delicious.

Poor DH cooked again as I have a broken arm and can't even rummage in the fridge....

Ottolenghi has the BEST veggie recipes although they are not all the healthy and cheap recipes for every night use. This one of his is fab.

I like ratatouille baked in a dish with potato topping (like shepherd's pie)

Also veggie chilli - I use jamie oliver's chilli con carne recipe except replace the meat with chunks of sweet potato, and add sweetcorn.

Cauliflower is lovely in curry. I liked this one - and I used the green cauliflower leaves insead of spinach to use them up. www.bbcgoodfood.com/recipes/4287/tomato-cauliflower-and-spinach-curry

Ohh we did large flat mushrooms with garlic butter smeared on baked in the oven and topped with mozerrella cheese on a hamburger bun was bloody lovely. Think I got the idea from a Nigel Slater show.

We are vegetarian. Tonight we had root vegetable curry and it was excellent!

I can thoroughly recommend Delia's mulligatawny soup recipe (from the 1840 Eliza Acton)...I made it at Christmas and it was absolutely delicious, although not that healthy I guess as it contained a huge amount of butter. V worth itGrin

Just had red lentil spag bol - basically onions, mushrooms, tin tomatoes, herbs and cooked lentils (cooked in veg stock) over spaghetti and grate parmesan on top - delicious.

WIth pleasure!

Chop up your veg nice & small - I used (this time!)

1 onion
2 leeks
Red pepper
10 mushrooms

Sautee the onions & leeks with a bit of garlic in olive oil over a gentle heat add a few dried herbs, til they are really soft, then add the pepper, continue to cook then add the mushrooms. Once the veg is cooked through, put in an oven proof dish and add 300g of arborio rice. Pour over about 300mls of hot veg stock. I then dry fried some small cubes of halloumi cheese and added those to the mix.
Bake covered for 20 mins (200 degs) remove from oven, stir, add another 200 mls of veg stock and bake for another 25 mins uncovered. I tend to judge the stock by eye, as the rice swells more in the last 20 mins of cooking.

dh is not veggie, so I did it in 2 small dishes yesterday & added fried pancetta cubes to his dish when I did the halloumi for me.

This quantity has done us 2 nights each :)
